2/3 cup cranberries, thawed if frozen
2 tablespoons honey, plus more as needed
1/2 cup walnuts
3 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
Kosher salt and freshly ground pepper
1 head butter lettuce, large leaves torn
1 bunch watercress, trimmed and torn
2 tablespoons roughly chopped fresh parsley
2 tablespoons roughly chopped fresh tarragon

Steps:

  • Put the cranberries in a small saucepan; add the honey and 1/3 cup water. Cook over medium heat, stirring occasionally, until the cranberries pop and the liquid thickens, about 8 minutes. Remove from the heat and let cool completely.
  • Toast the walnuts in a small dry skillet over medium heat, about 5 minutes. Transfer to a cutting board and let cool slightly, then roughly chop. Stir the olive oil and vinegar into the cooled cranberries. (Add more honey, 1 teaspoon at a time, if the vinaigrette is too tart.) Season with salt and pepper.
  • Toss the lettuce and watercress in a serving bowl; season with salt and pepper. Spoon the vinaigrette over the lettuce and top with the walnuts and herbs. Toss before serving.

1/2 cup dried cranberries, coarsely chopped
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
8 cups greens, rinsed and dried (mezclun)
2 ripe bartlett pears, cored and thinly sliced (about 2 1/2 cups)
3 tablespoons fresh lemon juice
1 large kohlrabi (shredded or thinly sliced)
1/4 cup dried cranberries
1/4 cup goat cheese or 1/4 cup blue cheese, crumbled

Steps:

  • In a blender or food processor, combine the vinaigrette ingredients and whirl until dried cranberrries are finely minced and incorportated into the dressing. Set aside. (Can be made ahead several hours in advance.).
  • Tear the salad greens up into bite size pieces. Arrange on individual salad plates or in a large salad bowl.
  • Toss the pears with the lemon juice to coat. Arrange the pears on the greens. Top each serving with the kohlrabi slices and the dried cranberries.
  • Shake the vinaigrette dressing and drizzle on the salad just before serving. Garnish with the cheese.

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat the pecans with the 2 tbls. maple syrup(or brown sugar mixture) and 1/8 teaspoons cinnamon.
  • Spread the pecans out on a baking sheet in a single layer. Bake for 5 to 8 minutes in the preheated oven, or until lightly toasted.
  • In a food processor, combine the cranberries, raisins, vinegar, onion, brown sugar, and mustard. Chop coarsely; remove from processor and place in a bowl.
  • Gradually whisk in olive oil, and season with salt and pepper.
  • Chop apple into bite size pieces, then mix with lemon/water mixture in a bowl to prevent browning. Keep apples in mixture until you toss ingredients into salad.
  • In a salad bowl, toss together the greens, apples, and enough of the cranberry mixture to coat.
  • Sprinkle with pecans, and serve.
