Steps:

- Preheat oven to 400°F.
- In shallow dish, melt butter *if using* or pour in olive oil. (Can use a mix of both, if preferred.)
- In another shallow dish, mix first 5 ingredients.
- Cover baking sheet with foil and spray lightly with cooking spray.
- Wash and dry fillets.
- Dip fillets in butter/oil to coat and dredge in herb-crumb mixture to completely cover.
- Let dry on wire rack for about 5 minutes to "set" coating.
- Place on foil-covered sheet and bake for about 10-12 minutes or until fish flakes easily.

- Preheat oven to 450°F Spray baking dish with non-stick cooking spray.
- Combine salt, paprika, onion powder, dry mustard, garlic, pepper, cumin, basil, oregano, thyme, & rosemary.
- On plate, mix bread crumbs, parsley, and scallions.
- Sprinkle about 1 T of spice mixture on fish. Mix rest of it in with bread crumbs and olive oil.
- Dredge fish in crumb mixture.
- Place on baking pan and bake 12-15 minutes, turning every 5 minutes for even browning.
- Squeeze juice from lemon wedges over fillets & serve.

- Coat bottom of a 13x9" baking dish with half of the olive oil.
- Cut mushrooms into halves and place in dish.
- Cut onions into rings and spread them over mushrooms.
- Give the contents of pan a good sprinkle of cajun seasoning.
- Top with the fillets in a single layer (some overlap won't hurt).
- Drizzle them with remaining oil and give the whole thing another shake of cajun spice.
- Bake in 400 degree oven 15-20 minutes or until bubbly.
- I usually use a little more olive oil because the juice is great for dipping.

BAKED TILAPIA
After thinking and thinking about what to do with Tilapia filets I decided I was going to use the "same" recipe G-Pa used for his empanadas. I twisted it a little but boy did these came out great! You can either place the crackers in the blender (for more smoothnes) or you can place them in a plastic bag and just crush (I prefer this one, I hate to pull out the blender just for crackers!). I might be a little off on the measurements for the seasonings (I apologize) but I will say just go "by taste".

- In a blender or zip bag, crush crackers.
- Add adobo and cilantro
- In a wide medium bowl, mix oil, vinegar, garlic salt and garlic powder.
- In a separate bowl, beat eggs.
- Note:.
- It is preferred to leave the filets marinating in vinegar/oil mixture for at least 30 minutes (this is optional)
- After marinating or covering filets with oil/vinegar mixture. Cover filets with eggs and then place on crackers until covered.
