6 eggs
4 tablespoons unsalted butter
1 medium onion, peeled and chopped
1 garlic clove, peeled and crushed
2 tablespoons curry powder
2 tablespoons tomato paste
3/4 cup water
1 tablespoon lemon juice
salt & freshly ground black pepper, to taste
1 lemon, zest of
2 tablespoons fresh flat-leaf parsley, chopped

Steps:

  • Hard boil the eggs, using your favorite method. Cool slightly and peel. Cut them in half lengthwise.
  • Melt the butter in a frying pan and saute the onion and garlic, until onion is just soft.
  • Stir in the curry powder, tomato paste, water, lemon juice, salt and pepper. Allow the mixture to cook over a low heat until it is just bubbling.
  • Add egg halves to onion mixture and stir gently, until reheated through. Add a little more water if sauce gets too thick.
  • Add lemon zest and parsley. Stir again and serve while hot.

Steps:

  • Heat oil in a large pot over medium heat. Add onion; cook and stir until browned, about 5 minutes. Stir in garlic and ginger paste. Mix in coriander, cumin, turmeric, chile powder, and black pepper; cook until fragrant, about 1 minute. Add tomato puree; cook until curry thickens, about 4 minutes.
  • Pour water into the pot; bring sauce to a boil. Stir in vinegar and salt. Slip eggs into the pot; cook until flavors combine, about 5 minutes.

3 tablespoons minced onions
1 garlic clove, minced
1 teaspoon sambal trassi (alternatively: any other sambal, or chili garlic sauce)
2 candlenuts, roasted (alternatively: 2 macadamia nuts)
1/2 teaspoon coriander
pinch cumin
1/2 teaspoon turmeric
1/2 galangal, powdered (alternatively: ginger powder)
pinch ginger powder
salt

Steps:

2 1/4 cups water
2 1/2 cups quick-cooking brown rice
1 tablespoon olive oil
1 cup broccoli floret
1 cup sliced mushrooms
1 medium green bell pepper, cut in strips
1 cup shredded red cabbage
1 cup shredded carrot
2 cups chopped onions
1 tablespoon imported curry powder
2 teaspoons minced garlic
1 teaspoon cumin
1 teaspoon chopped ginger
2 (14 1/2 ounce) cans diced tomatoes
3 tablespoons peanut butter

Steps:

  • Bring water to boil in 2 quart saucepan. When water boils, add rice, cover pan, reduce heat to low, and simmer for 5 minutes. Remove from heat until ready to serve.
  • Meanwhile, heat oil in a 4-1/2 quart dutch oven or soup pot over medium heat. Add broccoli and mushrooms and cook, stirring occasionally.
  • Add the pepper, cabbage, carrots and onions.
  • Raise the heat to medium-high and stir occasionally.
  • Stir in the curry powder, garlic, cumin and ginger. Stir in tomatoes and their juices.
  • Raise the heat to high, cover and bring to a boil.
  • Uncover and boil, stirring from time to time, for 3 minutes more to blend the flavors.
  • Reduce heat to low and stir in the peanut butter, blend well.
  • Serve over the brown rice.
