2 cups (360g) thinly sliced onion
3 tablespoons vegetable oil
1 teaspoon minced garlic
1 teaspoon minced ginger
1 teaspoon minced green chile (serrano, Thai, or jalapeño)
3 teaspoons ground coriander
1/2 teaspoon ground cumin
1/4 teaspoon ground red pepper (cayenne)
1/2 teaspoon ground black pepper
1/16 teaspoon ground turmeric
1/16 teaspoon ground cinnamon
1/16 teaspoon ground cloves
2 tablespoons water
2 pounds (900g) cubed leg of lamb trimmed of fat (about 4 cups (3/4-inch) cubes)
1 teaspoon salt
1/2 teaspoon fresh lemon juice

Steps:

  • In a large nonstick frying pan over medium-high heat, fry onion in oil until edges are nicely browned. Add garlic, ginger, and green chile and stir for 1 minute.
  • Mix ground spices with water to form a paste; add to onion mixture. Stir briefly until spices release their fragrance.
  • Add lamb and salt and fry over medium heat, stirring frequently util lamb is cooked through, 10 to 15 minutes. Taste for salt.
  • Stir in lemon juice and remove from heat.

3 tablespoons all-purpose flour
salt and black pepper to taste
3 ½ pounds cubed lamb stew meat
6 tablespoons butter, divided
2 large onion, chopped
2 tablespoons brown sugar
3 tablespoons curry powder
1 large Granny Smith apple - peeled, cored, and cubed
1 cup chicken stock
½ cup raisins
1 tablespoon lemon juice

Steps:

  • Place the flour in a plastic bag; season to taste with salt and pepper. Add the lamb, and shake until evenly coated with flour. Melt half of the butter in a large pot over medium-high heat. Cook the lamb in batches until golden brown on all sides, about 5 minutes per batch; set aside.
  • Reduce heat to medium and add the remaining butter. Stir in the onions, and cook until the onions have softened and turned translucent, about 5 minutes. Stir in the brown sugar, curry powder, apples, chicken stock, raisins, and browned lamb. Bring to a boil over medium-high heat, then reduce heat to medium-low, cover, and simmer until the lamb is very tender, 1 to 1 1/2 hours. Stir in the lemon juice and cook 2 minutes before serving.

My DH wanted to marry Madhur Jaffery after I first made this from her Indian cookery book. He settled for me once I'd perfected this recipe. Fantastic served with a lemon rice.

6 onions, peeled
7 garlic cloves, peeled
2 1/2 cm cube fresh ginger, coarsely chopped
425 ml water
10 tablespoons vegetable oil
2 1/2 cm cinnamon sticks
10 whole cardamom pods
10 whole cloves
1 kg boneless lamb shoulder
1 tablespoon ground coriander
2 teaspoons ground cumin
6 tablespoons plain yogurt, beaten lightly
1/2 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon garam masala

Steps:

  • Cut three of the onions into thin sliced half rings, cut the fourth finely. Keep the two types of onions separate.
  • Put the garlic and ginger into a blender add 100ml of the measured water and blend until fairly smooth.
  • Heat the oil in a wide heavy saucepan over a medium heat. When hot, put in the sliced onions. stir and fry for 10-12 minutes until the onions turn a reddish-brown colour. You may have to turn the heat down towards the end of this cooking period.
  • Remove onions when cooked and spread them on a paper towel lined plate.
  • Put the cinnamon, cardamom and cloves into he hot oil. Stir them for about 5 seconds, now put in the meat and brown the meat on one side.
  • Turn it over and brown on the other side. Remove the meat and put in a bowl.
  • Put the chopped onion into the remaining oil. Stir and fry on a medium heat until the pieces turn brown at the edges. Add the garlic-ginger paste. Stir and fry it until all the water has boiled away and you can see the oil again. Turn the heat down and add the coriander and cumin. Stir for 30 seconds.
  • Now add 1 tablespoon of yoghurt, stir and blend, add all the yoghurt this way, blending well.
  • Put all the meat and accumulated juices and remaining water into the pan. Add the cayenne and salt, simmer, covered on a low heat for 40 minutes or until the meat is tender.
  • Add the fried onions and the garam masala. Stir to mix.
  • Cook, uncovered for another 2-3 minutes.
  • Turn off the heat and let the pan sit for a while. the fat will rise to the top, remove it.
  • This dish is great prepared ahead of time and reheated.

3 tablespoons corn or canola oil
2 very large onions, thinly sliced
1 large green pepper, thinly sliced
2 cloves garlic, minced
2 tablespoons minced ginger
1 jalapeno, minced
2 to 2 1/4 pounds lean lamb, cut in julienne strips
1 teaspoon ground cumin
1 teaspoon turmeric
1 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/2 teaspoon fennel seeds
1/4 teaspoon dried hot red peppers, optional
Salt to taste, optional

Steps:

  • Heat 2 tablespoons of oil in a large nonstick skillet. When it is very hot, add the onions and saute until golden brown. Set aside.
  • Add the remaining oil and saute the green pepper until it softens. Set aside.
  • Add garlic, ginger and jalapeno to skillet and saute for 30 seconds, stirring.
  • Add the lamb and the remaining spices and saute, stirring to blend spices with meat. Cook over high heat until the lamb is done, 5 to 7 minutes.
  • Arrange the lamb on a serving platter. Return the onions and green pepper to the skillet to heat through, and spoon the mixture over lamb.

1 cup plain Greek yogurt
A handful cilantro leaves
A handful mint leaves
1 clove garlic, peeled and grated or mashed into paste
Pinch salt
1 lime, juiced
4 (1/2-inch thick) slices small red onion
1 lime, juiced
Extra-virgin olive oil, for drizzling
Salt and freshly ground black pepper
2 pounds ground lamb
2 large cloves garlic, grated or finely chopped
1 red or green chile, finely chopped
1-inch piece ginger, grated or minced
1 teaspoon (1/3 palmful) turmeric, ground cumin, ground coriander, smoked sweet or sweet paprika, granulated onion or onion powder*
Pinch ground cinnamon
Baby spinach leaves
8 soft potato rolls or slider rolls (recommended: Pepperidge Farm)

Steps:

  • Put all of the ingredients for the sauce in food processor and process until smooth. Transfer to a small serving dish and reserve.
  • Put the red onion rings in a small bowl and separate the rings. Add the lime juice and drizzle with extra-virgin olive oil. Season with salt and pepper, to taste.
  • Add the lamb to a mixing bowl along with the garlic, chile, ginger, spices, cinnamon, and salt and pepper, to taste. Mix to combine. Form the meat mixture into 4 sections and make 2 slider-size patties form each portion, 8 (3-ounce) burgers in total, thinner at the center and thicker at the edges.
  • Heat a large skillet or a griddle pan with a drizzle of extra-virgin olive oil over medium-high heat. Add the burgers and cook a few minutes on each side.
  • Put a few leaves of spinach on each of the bun bottoms and add the burger. Top with the onions and green sauce. Cover with the bun tops and serve.
  • * Toast and grind your own coriander and cumin if you have a coffee grinder or spice mill.

4 teaspoons vegetable oil
2 onions, chopped
3 cloves garlic, chopped
4 teaspoons fresh gingerroot, grated
1/2 cup plain yogurt
1 teaspoon red chili powder
4 teaspoons ground coriander

1 teaspoon ground cardamom
1/2 teaspoon ground cloves
1 teaspoon ground turmeric
1 (400 g) can chopped tomatoes
1 kg boneless leg of lamb, cut into 2.5 cm cubes
1/4 cup slivered almonds
1 teaspoon garam masala
chopped fresh cilantro leaves (to garnish)

Steps:

  • Heat the oil in a wok over medium heat, add the onion and cook, stirring for 5 minutes or until it has softened.
  • Add the garlic and ginger and cook for 2 minutes more.
  • Stir in the yoghurt and all the spices.
  • Add the canned tomatoes, a teaspoon of salt, then cook for 5 minutes more.
  • Add the lamb and stir until it is coated.
  • Cover and cook on a low heat for 1 1/2-1 3/4 hours or until the lamb is tender, stirring occasionally.
  • Add a little water if the lamb begins to stick.
  • Meanwhile, toast the almonds in a dry frying pan, shaking gently until golden-about 3-4 minutes.
  • When the lamb is tender, add the garam masala to the curry and mix through.
  • Sprinkle with the slivered almonds and chopped cilantro, then serve.

1 eggplant, about 1 1/2 pounds
Salt to taste
2 tablespoons, plus 1 1/2 cups, vegetable oil
1 teaspoon black mustard seeds
1 1/2 teaspoons cumin seeds
2 medium-size onions, chopped
1 small hot green chili, seeded and minced
3/4 pound lean ground lamb
3 medium-size ripe tomatoes, peeled and chopped
Cayenne pepper to taste
1 slice peeled fresh ginger, about 3/4-inch thick, finely minced
1 small bunch coriander, minced
8 ounces plain yogurt
8 Indian pappadums (available at most specialty markets)

Steps:

  • Dice the eggplant, sprinkle it with salt and set it aside for 30 minutes.
  • Meanwhile, heat the 2 tablespoons of oil in a large, heavy skillet over medium-high heat. Add the mustard seeds and cumin seeds. When they start to smell aromatic and pop, about 1 to 2 minutes, add the onions. Saute until the onions are tender, about 5 minutes, then add the chili. Stir in the lamb. Continue to saute until the lamb has lost its red color and is finely broken up, about 3 to 4 minutes. Remove the skillet from the heat.
  • Drain and rinse the eggplant. Pat the pieces dry on paper towels. Reheat the lamb mixture in the skillet, add 1 more tablespoon of the oil and add the eggplant. Cook, stirring, until the eggplant has lost its dryness, about 10 minutes. Stir in the tomatoes. Cover and simmer until the eggplant is tender, about 20 minutes.
  • Season to taste with salt and cayenne pepper and set aside until ready to serve.
  • Combine the ginger, coriander and yogurt and set aside.
  • Heat the remaining oil in a wok or skillet. Add one of the pappadums. As soon as it begins to curl, about 15 to 20 seconds, turn it over using tongs or chopsticks. Flatten it in the pan and cook another few seconds. It should not darken. Drain on paper towels and repeat with the remaining pappadums.
  • To assemble, reheat the eggplant and lamb mixture. Place a pappadum on each of 4 plates, top with a quarter of the lamb mixture, then cover with another pappadum. Spoon some of the yogurt mixture on top and serve with steamed rice, if desired.
