Easy Green Goddess Dressing image

This homemade green goddess dressing recipe is so easy to make! It's creamy, fresh, completely delicious-and a great way to use up your leafy herbs. Recipe yields about 1 1/4 cups dressing; multiply if desired.

Number Of Ingredients 6

1 cup plain Greek yogurt, preferably full-fat (made with whole milk)
1 cup lightly packed fresh herbs (tender stems are fine): use cilantro, parsley, dill, basil and/or mint, with up to 1/4 cup chives or green onion (sliced into 1/2″ segments)
Optional: Up to 2 tablespoons fresh tarragon leaves
1 medium clove garlic, roughly chopped
1/2 teaspoon fine sea salt
Lots of freshly ground black pepper, to taste

Steps:

  • Combine all of the ingredients in the bowl of a food processor. Process until smooth and green, with tiny flecks of herbs.
  • Taste, and add more salt or pepper if desired. Use as desired, or cover and refrigerate for later. This dressing will keep well in the fridge for 5 to 7 days.

1/2 cup loosely packed fresh basil leaves
1/4 cup loosely packed fresh parsley leaves
4 scallions, green parts only, coarsely chopped
1/4 cup finely grated Parmesan
2 oil-packed anchovy fillets, drained
1/2 cup mayonnaise
Freshly ground black pepper

Steps:

  • In a food processor, pulse the basil, parsley and scallions until finely chopped. Add the cheese and anchovies and process to a paste consistency. Add the mayonnaise and puree until smooth. Season with pepper.

1/2 cup mayonnaise
1/2 cup Greek yogurt
1/4 cup milk
1/4 cup packed spinach
1/4 cup torn fresh basil, plus some for garnish
1/4 cup fresh parsley, chopped, plus some for garnish
1 clove garlic
Zest of 1 lemon
Kosher salt and freshly ground black pepper
3 cups cubed rotisserie chicken
2 cups green grapes
1/2 cup chopped walnuts
3 scallions, sliced
1 small cucumber, diced
Serving suggestions: lettuce leaves, bread or wraps

Steps:

  • For the dressing: Place the mayonnaise, Greek yogurt, milk, spinach, basil, parsley, garlic and lemon zest in a blender with a pinch of salt and pepper. Blend until smooth, then taste and adjust seasoning as needed. Set aside.
  • For the salad: Add the chicken, grapes, walnuts, scallions and cucumber to a large bowl. Pour the dressing over the salad ingredients and toss to combine. Transfer to a serving bowl and garnish with the basil and parsley. Serve on a bed of lettuce, in a sandwich or wrap, or cover and chill until needed.

Green Goddess Dressing image

Unlike more complicated versions of green goddess, this one, adapted from the cookbook author Jessica Battilana, comes together quickly in a food processor. Mayonnaise and full-fat Greek yogurt give the dressing richness and tang, while parsley, basil and tarragon lend the springtime perfume of fine herbs. Two anchovy fillets offer salt and a rumor of umami. The recipe is so mouth-smackingly perfect that it doesn't require any adjusting. Serve with this greenest-green salad. Use leftover dressing as a dip, alongside carrots, cucumbers and radishes, or as an accompaniment to grilled fish or chicken.

  • In a food processor, combine the anchovies, mayonnaise, yogurt, parsley, basil and 1 tablespoon lemon juice. Process until smooth and uniformly green. Transfer to a lidded jar, and stir in the tarragon and chives. Adjust seasoning as needed with salt, pepper and lemon juice.
