FRESH CORN AND BACON PUDDING



Fresh Corn and Bacon Pudding image

2 cups fresh corn kernels
1 1/2 cups milk
2 tablespoons unsalted butter plus more for the pan
2 tablespoons unbleached white flour
3 eggs, beaten
1/2 teaspoon freshly ground pepper
3 slices thick bacon, fried crisp and crumbled
1/2 cup grated cheddar cheese (optional)
Chopped green onions for garnish

Steps:

  • Soak the corn in the milk for 15 minutes. Preheat the oven to 350 degrees. Generously butter a 1 quart baking dish. Melt the 2 tablespoons of butter in a saucepan over medium heat. Whisk in the flour; cook it for 2 to 3 minutes, stirring. Drain the corn and whisk the reserved milk into the flour mixture. Simmer it until slightly thickened, about 5 minutes. Remove the pan from the heat and whisk in the eggs. Stir in the corn, salt, pepper, and bacon. Pour the corn mixture into the prepared pan and sprinkle the cheese on top. Bake it until brown on top and firm to the touch, about 45 minutes. Let it cool for 10 minutes before spooning it into bowls and topping it with green onions.

3/4 cup chopped sweet onion
3/4 cup chopped sweet red pepper
4 large eggs, room temperature
1 cup heavy whipping cream
1 teaspoon baking soda
1 teaspoon hot pepper sauce

2 cups fresh or frozen corn
2 cups crushed cornbread stuffing
1/2 pound bacon strips, cooked and crumbled
1-1/2 cups shredded sharp cheddar cheese, divided

Steps:

  • Preheat oven to 350°. In a 10-in. cast-iron or other ovenproof skillet, heat oil over medium heat. Add onion and red pepper; cook and stir until crisp-tender, 6-8 minutes. Remove from skillet; set aside. In a large bowl, whisk eggs, cream, baking soda, hot pepper sauce and salt. Stir in corn, stuffing, bacon, 1 cup cheese and onion mixture. Transfer to skillet. Bake, uncovered, 35 minutes. Sprinkle with remaining 1/2 cup cheese. Bake until puffed and golden brown, 5-10 minutes longer. Let stand 10 minutes before serving.

2 (10 ounce) packages frozen corn, thawed
1/4 cup sugar
1 1/4 teaspoons salt
4 large eggs
2 cups milk
1/4 cup butter, melted and cooled (1/2 stick)
1/4 cup fresh chives, chopped
3 tablespoons all-purpose flour
1 teaspoon vanilla extract
1 pinch of grated nutmeg, fresh

Steps:

  • Preheat oven to 350ºF.
  • Butter a 1 1/2-quart baking dish.
  • In a food processor, pulse 1 of the packages of corn until coarsely chopped, then transfer to a mixing bowl.
  • Add the remaining package of corn and sprinkle with the sugar and salt; stir to combine.
  • Whisk together the eggs, milk, butter, chives, flour, and vanilla and combine with the corn.
  • Pour the mixture into the baking dish and sprinkle with nutmeg.
  • Bake in the center of the oven until the center of the pudding is just set, about 45 minute.

I am just in love with corn pudding. I began baking recipes found on "Zaar" which were very good, but I decided to try making it more to my liking.

3 large eggs
4 tablespoons butter (melted)
2 tablespoons flour (level)
1/8 teaspoon pepper
1/4 teaspoon nutmeg
2 (14 3/4 ounce) cans creamed corn
8 ounces light cream
3 slices bacon (crispy)
1 teaspoon margarine

Steps:

  • Preheat oven to 325 degrees F.
  • Grease a 2-quart baking dish with margarine (Discard excess).
  • Cook 3 slices of bacon until crispy. (Discard drippings).
  • Chop bacon into small pieces.
  • Melt butter (I use the microwave for approximately 25 seconds on high).
  • Beat eggs, butter and spices together in a 2-quart bowl.
  • Then add flour, creamed corn, light cream, & bacon and mix together until flour lumps are smooth.
  • Pour mixture into the baking dish.
  • Bake for 90 minutes or until an inserted toothpick comes out clean.
  • As it cools, the corn pudding deflates.
  • Serve warm. (I love it chilled too!).
  • Enjoy!

3 packages (10 ounces each) frozen corn, thawed
3 cups milk
4 large eggs
1/3 cup sugar
1/2 cup all-purpose flour
1/4 teaspoon ground nutmeg
Coarse salt
1/4 cup thinly sliced fresh chives

Steps:

  • Preheat oven to 350 degrees. In a blender, puree half the corn with 2 cups milk until almost smooth. In a large bowl, whisk eggs with sugar, flour, nutmeg, and 2 teaspoons salt; whisk in pureed corn mixture, along with remaining corn and 1 cup milk.
  • Pour mixture into a 9-by-13-inch (or other shallow 4-quart) baking dish; sprinkle with chives. Bake until golden brown around edges and very loosely set, 40 to 45 minutes. Let cool 5 to 10 minutes before serving.

Nonstick vegetable oil spray
Two 6-inch corn tortillas
1 poblano chile
3 cups corn kernels, thawed if frozen
1 1/2 cups 2-percent milk
1/2 teaspoon canola oil
1 cup diced onion
1 teaspoon salt
2 garlic cloves, minced
2 large eggs plus 2 large egg whites, lightly beaten
3/4 cup grated reduced-fat Cheddar (about 3 ounces)
1/2 cup fat-free sour cream
3 tablespoons masa harina de maiz (see tip, below)
1 teaspoon sugar

Steps:

  • Preheat oven to 350°F. Coat 8-inch springform pan with nonstick spray. Line outside of pan with foil to prevent batter from leaking and place on cookie sheet (see tip, below).
  • Place tortillas directly on oven rack and toast, turning halfway through, until crisp and dry, about 5 minutes. Let cool, then grind finely in clean spice grinder or small food processor. Set aside.
  • Using tongs, hold poblano over stovetop burner on high heat, turning frequently, until blackened all over, 5 to 10 minutes. (Alternatively, roast under broiler, turning and watching carefully.) Place in medium bowl, cover with plate, and let steam until cool enough to handle, 10 to 15 minutes. Using paper towels, wipe away charred skin. Cut out and discard stem and core. Halve pepper lengthwise, scrape out seeds, and dice half pepper, reserving remainder for another use. Set aside diced pepper.
  • In food processor, purée 2 1/2 cups corn and 1/2 cup milk until smooth. Set aside.
  • In medium skillet over medium heat, warm oil. Add onion and 1/4 teaspoon salt and cook, stirring occasionally, until softened, about 3 to 4 minutes. Add garlic and cook, stirring constantly, until fragrant and slightly softened, about 30 seconds.
  • Transfer onions and garlic to large bowl. Add ground tortillas, diced poblano, puréed corn, remaining 1/2 cup corn, remaining 1 cup milk, remaining 3/4 teaspoon salt, eggs, cheese, sour cream, masa harina, and sugar. Whisk to combine.
  • Scrape mixture into pan and bake until center is just set, 40 to 50 minutes. Cool 5 minutes in pan on rack. Carefully invert pan onto serving platter and release sides. Remove bottom of pan (now on top) and serve.

2 cups very coarse grits (Gonsalves brand is best)
1 cup milk
2 tablespoons sugar (or more to taste)

Steps:

  • Bring water to a boil in a large saucepan. Stir in the salt and the coarse grits, stirring until the contents of the pot return to a boil. Turn the heat to low, and cook very gently for 10 minutes, stirring frequently. Be sure to stir across the bottom of the pot to keep the grits from sticking.
  • Remove from the heat and allow to stand about a half hour or until the grits are tender. Stir in the milk and sugar (and any desired optional spices).
  • Variation-To make a more deluxe version, you can use cream in place of milk, add sweet spices to taste (like cinnamon, nutmeg, mace, cloves, or ginger) and 1/2 cup of currants or raisins.
