Steps:
- Preheat oven to 300°F. Line rimmed baking sheet with parchment. Mix first 7 ingredients in large bowl. Stir honey and oil in saucepan over medium-low heat until smooth. Pour honey mixture over oat mixture; toss. Spread on prepared sheet. Bake until golden, stirring every 10 minutes, about 40 minutes. Place sheet on rack. Stir granola; cool. Mix in fruit. DO AHEAD: Can be made 1 week ahead. Store airtight.

INA'S HOMEMADE GRANOLA
This is Ina Garten's recipe (The Barefoot Contessa) and I think it is delicious. However, I have never made any of her recipes that I didn't think was delicious. I love this over yogurt.

Steps:
- Preheat over to 350 degrees.
- Toss, oats, coconut and almonds together in large bowl and set aside.
- Whisk together the oil and honey in small bowl and pour over the oat mixture and stir with wooden spoon until all the oats, coconut and nuts are coated.
- Pour into a 13x9 baking pan and bake. Stir occasionally with spatula until mixture turns a nice golden brown about 45 minutes.
- Remove granola from oven and allow to cool, stirring occasionally. Add the apricots, figs, cranberries and cashews. You can put whatever mix of dried fruit in that you please. I have even started to put in a cup of dark chocolate chips after the oats mix has cooled.
- Great snack!
- Store cooled granola in airtight container.
HOMEMADE GRANOLA BARS

- Preheat the oven to 350 degrees F. Butter an 8 by 12-inch baking dish and line it with parchment paper.
- Toss the oatmeal, almonds, and coconut together on a sheet pan and bake for 10 to 12 minutes, stirring occasionally, until lightly browned. Transfer the mixture to a large mixing bowl and stir in the wheat germ.
- Reduce the oven temperature to 300 degrees F.
- Place the butter, honey, brown sugar, vanilla, and salt in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute, then pour over the toasted oatmeal mixture. Add the dates, apricots, and cranberries and stir well.
- Pour the mixture into the prepared pan. Wet your fingers and lightly press the mixture evenly into the pan. Bake for 25 to 30 minutes, until light golden brown. Cool for at least 2 to 3 hours before cutting into squares. Serve at room temperature.
ANNABEL'S HOMEMADE GRANOLA
For a nutritious dessert parfait, layer granola with fresh berries and low fat yogurt. I have not tried this granola. I'm posting this for safe keeping. I found this recipe in Scholastic Parent & Child.

- Preheat the oven to 300.
- Put the oats, pecans, coconut, salt, and brown sugar in a large bowl and mix with a wooden spoon.
- Whisk the oil and maple syrup together in a small bowl. Pour over the oats and mix well.
- Spread out on a lightly oiled baking sheet and bake in the center of the oven for 40-45 minutes, stirring every 10 minutes.
- Transfer to a bowl, stir in the raisins, and let cool.
HOMEMADE GRANOLA
I love homemade granola--I discovered it this spring when I found about 10 recipes for granola on the internet. This is my favorite conglomeration. Sometimes I add some sesame oil too, either in addition to or in place of the vegetable oil. Enjoy!

- Heat the oven to 300 degrees.
- In a large mixing bowl, stir together the oats, wheat germ, nuts, sesame seeds, brown sugar, cinnamon and salt.
- Make a well in the dry ingredients and add the oil, honey and water.
- Toss until well combined.
- Spread the mixture evenly on a cookie sheet.
- Bake for 40 minutes or until lightly browned, stirring every 10 minutes to keep the mixture from sticking.
- Let it cool, then stir in the fruit.
- Store in an airtight container.
- Makes about 7 cups.

HOMEMADE GRANOLA
My husband found this recipe in a mountain bike magazine that we changed just a bit. This granola is really easy to make and very good. You can use oats, but I like to use multi-grain hot cereal that includes oats, barley, rye, and wheat. Enjoy!

- Preheat oven to 360 degrees.
- Toast nuts in pan over stove until lightly brown.
- Mix the fruit juice, honey, maple syrup, oil, vanilla, and spices in a large bowl. It's okay to add more honey, maple syrup, cinnamon, or spices - just depends how you like your granola to taste.
- Add oats and nuts into honey mixture and combine together.
- Spread mixture on a baking sheet and bake 30 minutes until golden. Stir occasionally. Use your best judgement when baking. I like mine a little crunchy, so sometimes I bake it 40 minutes.
- Leave on pan to cool.
- If you are using dried fruit stir in once completely cooled.
- Store granola in container with lid (not in refrigerator). It will last about a week or a little longer. Add granola to vanilla yogurt, or with milk, or eat plain.
