ANJOU PEAR CAKE
This fruity cake is at its best when made with melting, buttery pears

Steps:
- Heat oven to 180C/160C fan/gas 4. Line a 20cm loose-bottomed cake tin with baking parchment and brush with butter.
- Put the prepared pears in a bowl with the lemon juice and Poire William, if using, to prevent them discolouring. Sieve the flour and baking powder into a bowl, adding a pinch of salt and the caster sugar. Next beat in the eggs and melted butter. Finally, fold in the pears with their juices. Pour the cake mixture into the tin. Bake for about 50 mins or until a skewer comes out clean. Place on a wire rack and allow to cool slightly before removing from the tin, gently peeling away the parchment.
- To make the glaze, melt the apricot jam with 1 tbsp water and pass through a sieve to remove any lumps. Brush the cake with the glaze, dust with icing sugar and serve warm with crème fraîche.

- Cake:.
- Mix all cake ingredients by hand in order given.
- Pour in a greased 9 x 13 inch pan or springform pan.
- Bake at 350 degrees for 45 minutes and remove.
- Topping:.
- In saucepan mix all ingredients and bring to a slow boil for 3 minutes.
- Pour over cake and return to oven for 4 minutes.

- Preheat oven to 350 degrees F.
- Butter a 8x8-inch pan.
- Sift together flour, baking powder, salt.
- In a bowl, combine pears, cinnamon, and 1/4 cup of sugar, toss lightly.
- Cream butter and remaining sugar together, add egg and vanilla and mix till the batter is pale and smooth.
- Add milk alternatively with the dry ingredients, starting and ending with flour.
- Pour half of the batter into baking pan.
- Cover with pears, then pour the remaining half of the batter, covering the pears completely.

- Heat oven to 160C/140C fan/gas 3. Grease and line the base and sides of a 900g/2lb loaf tin with baking parchment, ensuring the parchment comes 2cm above the top of the tin. Beat the butter and sugars together until pale, then gradually stir in the eggs and vanilla extract. Fold the flour, baking powder and a pinch of salt into the mix, then quickly stir through the stem ginger and pears. Pour the mixture into the loaf tin, smooth the surface, then bake for 1 hr - 1 hr 10 mins or until a skewer inserted in the centre comes out clean. Allow to cool in the tin.
- To make the glaze, mix the syrup with 1 tsp water and the sugar. Poke the surface of the loaf all over with a skewer, then pour on the syrup. Serve warm with cream, or allow to cool completely.

- Coat a 10-in. fluted tube pan with cooking spray and sprinkle with flour. In a large bowl, beat the sugar, yogurt, oil, egg whites and egg until well blended. - Peel, core and slice pears.
- Preheat oven to 350 degrees Fahrenheit.
- Butter an 8 inch baking dish.
- In a food processor, pulse 2 cups of flour with 3/4 cup of sugar, light brown sugar, baking powder and salt.
- Add the butter and pulse until the mixture resembles coarse meal.
- Add the egg and pulse just until combined.
- Turn the dough out onto a work surface and knead several times.
- Divide the dough roughly in half; leave one piece slightly larger.
- Flatten into disks, wrap in plastic and refrigerate for 20 minutes.
- Wipe out the food processor; add the almond paste, lemon juice, cinnamon, 2 tablespoons sugar and 1 tablespoon flour.
- Process until smooth.
- Scrape into a bowl and gently stir in the pear slices.
- On an unfloured work surface, roll out the larger piece of dough to an 11" square.
- Put the dough into the baking dish, pressing it three quarters of the way up the side.
- Spoon the pear filling into the cake pan in an even layer.
- Roll out the remaining dough to an 8 1/2" square.
- Set the dough on top of the pears and press the rim to seal.
- Bake for 55 minutes or until golden brown.
