For the Fried Shallots:
1/3 c. all-purpose flour
1/2 tsp. cayenne
1/2 tsp. garlic powder
1/4 tsp. kosher salt
1/4 tsp. black pepper
4 large shallots, peeled and thinly sliced into rings
Canola or your favorite vegetable oil, for frying
For the Green Beans, Bacon and Gravy:
2 1/2 lb. fresh green beans, trimmed and halved (use a little less if you like a bigger gravy to beans ratio)
8 oz. bacon
6 tbsp. unsalted butter, divided
16 oz. sliced button mushrooms (for more mushroom flavor, use cremini variety)
1/3 c. finely chopped shallots
3 cloves (large) garlic, minced
1/2 c. all-purpose flour
1 c. low sodium chicken stock
2 c. half-and-half
2 tbsp. soy sauce
1 tbsp. Worcestershire sauce
2/3 c. grated parmesan cheese
2 tsp. chopped fresh rosemary
2 tsp. chopped fresh thyme
Kosher salt and freshly ground black pepper, to taste

Steps:

  • For the fried shallots: In a medium bowl that has a lid, whisk together flour, cayenne, garlic powder, salt, and black pepper. Add sliced shallots. Place lid tightly on bowl and shake the bowl a few times to evenly coat shallots with flour mixture. Pour canola oil into a medium saucepan to a 1-inch depth and place over medium-high heat. Heat to 325°F, using a deep-frying thermometer. Fry shallots in batches until golden brown and lightly crispy. Take care to not let them get too dark, as they will also bake for a bit in the oven on top of the casserole. This should take about 3-5 minutes per batch. Transfer to a paper towel lined baking sheet. Sprinkle lightly with kosher salt and set aside.For the green beans, bacon, and homemade gravy:Preheat oven to 375° F.Bring a large pot of salted water to a boil and add green beans. Cook beans for 2-3 minutes, until bright green in color and tender crisp. Drain beans and pour into a large bowl of ice water to stop from cooking. Drain again and set aside.In an extra large skillet with tall sides, over medium to medium-high heat, fry bacon until chewy-crisp. Transfer bacon from skillet to a paper towel lined plate to drain and cool. Once bacon has cooled, roughly chop and set aside.Discard all but 2 tablespoons of the bacon fat from the skillet. Return skillet to stove top over medium heat. Add 2 tablespoons of the butter to the skillet. Once butter is melted, add the mushrooms and stir to incorporate. Cook, stirring regularly, until mushrooms are softened. Add chopped shallots and garlic, stirring to incorporate. Cook for another 2-3 minutes, until garlic is fragrant.Now slide everything in the skillet to one side. Add remaining 4 tablespoons of butter to other side of skillet. When the butter is melted, sprinkle the flour over the butter, whisking all the while. A flat whisk works awesome here. Draw in as much liquid as you can, into the flour. The mixture will be very thick. Let it cook for one minute, until slightly browned and fragrant. Slowly whisk in chicken stock until flour mixture is smooth. Then whisk in the half and half. Now bring the entire contents of the skillet together, scraping the bottom of the skillet, and folding to incorporate. Turn heat up to medium-high and cook until thickened and bubbly, about 4-5 minutes, stirring periodically.Remove skillet from heat. Stir in soy sauce and Worcestershire sauce. Then sprinkle Parmesan, rosemary, and thyme over the top and stir to combine. Now is the time to taste test and add more salt and pepper, if desired. I usually add about 1/2 teaspoon of salt and 1/4 teaspoon of black pepper at this point. Fold in blanched green beans. Transfer mixture to a baking dish and place in oven to bake for 30 minutes. Remove casserole from oven and arrange fried shallots and chopped bacon over the top, leaving green beans exposed around the perimeter of the dish. Place in oven and bake for another 5 to 10 minutes, or until edges of casserole are bubbling and the top is golden. Remove from oven and let rest for a few minutes before serving.Note: This is a more time intensive version of green bean casserole than the classic recipe. To save time on Thanksgiving day, this could mostly be prepared the day prior. Simply fry the bacon, chop, place in a container, and refrigerate. Fry the shallots, place in a container, and refrigerate. And prepare the casserole all the way up to placing it in a baking dish. Cover and refrigerate. When baking on Thanksgiving day, remove casserole, bacon, and shallots from refrigerator 30 minutes prior to baking. Place foil over the dish and bake for 30 minutes at 375°F. Then remove foil and bake for another 5 or 10 minutes, or until center is hot (dip a spoon into the center to test) and edges are just starting to bubble. Then top with bacon and fried shallots and bake for another 5-10 minutes, or until casserole edges are bubbling. To crisp up the shallots, place under broiler for a minute or two.

These bacon-filled savory rolls are perfect for brunch. They can be baked a day ahead, refrigerated and reheated.

1/2 cup whole milk
2 1/4 teaspoons active dry yeast (one 1/4-ounce package)
2 tablespoons sugar
4 tablespoons unsalted butter, melted, plus more for the bowl and plastic wrap
1 large egg yolk
2 3/4 cups all-purpose flour, plus more for the work surface
1 teaspoon kosher salt
5 slices bacon, cut into 1/4-inch pieces
2 tablespoons all-purpose flour
3/4 cup milk
1 large egg yolk
1 cup shredded Cheddar
2 tablespoons chopped fresh chives
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter, at room temperature, for the pan
4 tablespoons unsalted butter, at room temperature
2 tablespoons chopped fresh chives
2 tablespoons grated Parmesan

Steps:

  • For the dough: Warm the milk and 1/2 cup water in a medium saucepan over low heat until it is about 100 degrees F (but no more than 110 degrees F). Remove the saucepan from the heat, and sprinkle the yeast over the the liquid. Sprinkle a pinch of the sugar over the top, and set aside without stirring until foamy, about 5 minutes. Then whisk in the butter and egg yolk.
  • Whisk together the flour, remaining sugar and salt in a large bowl. Make a well in the center, and stir in the yeast mixture with a wooden spoon until you have a thick and slightly sticky dough. Turn the dough onto a floured work surface, and knead until soft and elastic, about 6 minutes. Shape the dough into a ball.
  • Brush the inside of a large bowl with butter. Add the dough ball, turning to coat lightly. Cover the bowl with plastic wrap, trace a circle the size of the dough ball on the plastic and note the time. Let the dough rise in a warm place until doubled in size, about 1 hour 30 minutes.
  • Turn the dough out of the bowl, and knead briefly to release excess air; re-form it into a ball, and return it to the bowl. Lightly butter a large piece of plastic wrap, and lay it on the dough. Cover the entire bowl tightly with the rest of the plastic, and refrigerate for 4 hours or overnight to let the dough proof.
  • For the filling: Cook the bacon in a large nonstick skillet over medium heat until browned and crisp, about 5 minutes. Transfer the bacon to a small bowl, and remove all but 1 tablespoon of the fat from the skillet. Return the skillet to medium heat. Whisk the flour into the bacon fat, and cook, whisking, until light brown, about 1 minute. Slowly whisk in the milk, and continue whisking until thickened, about 1 minute more. Transfer the mixture to a medium bowl, add the egg yolk, Cheddar, chives, cooked bacon, 1/2 teaspoon salt and a few grinds of pepper and stir to combine. Let cool completely. (The filling will firm up a bit, but if it's too warm, it will be difficult to form the buns.)
  • To fill and form the buns: Butter a 9-by-13-inch baking pan with 2 tablespoons softened butter. Turn the dough onto a floured work surface, and press it flat. Roll it into a 10-by-18-inch rectangle, with a long edge facing you. Spread the filling evenly over the dough, leaving a 1-inch border on the side opposite you. Starting from the side facing you, roll the dough up into a tight roll. Lightly brush the 1-inch border with water, and continue rolling to seal the roll. Fold the ends in just a bit, and if any spots look thicker than others, even out the roll with your hands.
  • Cut the roll every 1 1/2 inches with a serrated knife, to make 12 buns. Place the buns cut-side down (except for the end pieces) in the prepared pan, spacing them 1 inch apart. Cover the buns loosely with plastic wrap, and set aside in a warm place to rise until the buns double in size, leaving no gaps in between, 1 hour 30 minutes to 2 hours.
  • For the topping: Stir the butter, chives and Parmesan in a small bowl; set aside.
  • Position an oven rack in the center of the oven, and preheat to 350 degrees F. Bake the buns until they're golden brown and the tops spring back when pressed lightly, 25 to 30 minutes. Spread the topping evenly over the buns, and return them to the oven for 5 minutes more. Let them cool in the pan for 10 minutes before serving.

2 1/2 pounds green beans, trimmed
Kosher salt
1/2 pound bacon, roughly chopped
1 small yellow onion, finely chopped
3 cloves garlic, minced
1 teaspoon red pepper flakes
1/2 cup chopped toasted pecans
Juice of 1/2 lemon
Freshly ground pepper

Steps:

  • Toss the green beans into a large pot of boiling salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and shock in a large bowl of ice water to stop the cooking. Drain the beans again and pat dry.
  • Cook the bacon in a large, heavy saute pan until crisp, about 5 minutes. Remove the bacon to a paper towel-lined plate to drain. Spoon off the excess bacon grease, leaving 2 tablespoons in the pan. Add the onion to the pan and saute until soft and very tender, 4 to 5 minutes. Sprinkle in the garlic and red pepper flakes and saute until just fragrant, about 1 more minute. Add the reserved green beans and the pecans and cook until heated through, 5 to 6 minutes more. Return the bacon to the pan, pour in the lemon juice and toss. Season with salt and pepper.

Isn't funny how we can take something perfectly healthy....and make it totally fattening?!! I've made green beans this way since....well, more than 20 years now, and wouldn't have them any other way! VERY flavorful, comfort food at its very best! Cooking time includes crock pot time.

4 (14 1/2 ounce) cans green beans, drain 3 cans
8 slices bacon, cooked crisp and drained
pepper
1 onion, chopped
4 tablespoons butter
1 teaspoon dark brown sugar, divided
1 tablespoon good balsamic vinegar
salt and pepper
2 -4 tablespoons bacon butter pan drippings
1 tablespoon good balsamic vinegar, divided
2 tablespoons butter

Steps:

  • Fry bacon in pan til done sprinkling both sides as it cooks with coarse ground pepper.
  • Drain on paper towels, set aside.
  • Add half a stick of butter to bacon grease, (4 Tbl.).
  • Add chopped onion and 1 Tbl. balsamic vinegar and cook slowly over low heat for about 20 minutes til soft and sweet.
  • Remove from heat.
  • In crockpot, put 2 cans (drained) green beans.
  • Sprinkle with a little salt and pepper.
  • Sprinkle with half the bacon, broken into small pieces.
  • Sprinkle with half the cooked onions.
  • Sprinkle with half, (1/2 tsp.), dark brown sugar.
  • Drizzle with 1-2 Tbl. bacon/butter grease from pan. (Yes, do this.)LOL.
  • Drizzle with 1/2 Tbl. balsamic vinegar.
  • Repeat everything (*just draining one can, and add the fourth (last) can of green beans with the water from can pouring over evenly.).
  • Give all this a VERY gentle fold, folding only 2-3 times. Any more, and your green beans will begin to break up.
  • Cut up your 2 Tbl. butter into 8 pieces and dot top.
  • Cover and heat over high til hot throughout.
  • About 45 minutes.
  • You can also do this on the stove, or even in the oven in a casserole dish (covered.).

A delicious and hearty meal made easy & quick. A bacon lovers delight and my husbands favourite dinner! Chicken is stuffed with cream cheese and chives and wrapped in bacon. I have also included my favourite green bean side dish which accompanies this meal perfectly. ENJOY : )

4 boneless skinless chicken breasts
8 slices bacon
1 (250 g) package cream cheese
1/2 cup dried chives
1 1/2 tablespoons lemon juice
4 cups frozen French-cut green beans
5 slices bacon
1/3 cup diced onion

Steps:

  • Mix cream cheese, chives and lemon juice in a bowl.
  • Preheat oven to 350.
  • Slice a slit in the chicken breast and use your fingers to create a pocket. Fill chicken with 1/4 of your cream cheese mixture and secure closed with toothpicks.
  • Wrap chicken in bacon (2 pieces each) and bake in oven for 45 min or until chicken is cooked throughout.
  • Green Beans (start prep when chicken has been cooking about 30min).
  • Slice bacon into 1/2 inch strips.
  • Pan fry bacon and onions until bacon is crispy.
  • Turn frying pan to low and mix in green beans.
  • Pan fry beans on low for 10 min or until cooked.

These Brown Sugar and Bacon Green Beans are my favorite vegetable. They might actually be the only vegetable I like. I think I'll start adding brown sugared bacon to all my veggies. This recipe is simple and full of flavor.

6 bacon strips
¼ cup butter
¼ cup brown sugar
16 ounces frozen green beans (or fresh, 1 bag)
¼ teaspoon garlic salt

Steps:

  • In a large skillet, fry the bacon over medium heat until done (but not quite crisp).
  • Drain off grease and crumble the bacon.
  • Add butter and brown sugar to skillet and add the crumbled bacon back in. Cook, stirring occasionally, over medium heat until the brown sugar has dissolved.
  • Steam the Green Beans in the bag if they are steamable, otherwise place the green beans in a pot and fill with about 1 inch of water. Bring water to a boil and then place the lid on the pot.
  • Steam the beans over medium heat until cooked through, about 5-8 minutes.
  • Drain the water from the beans, season with garlic salt, and stir in the sugar and bacon mixture.
  • Serve immediately.
