LEMON SYLLABUB
This is a deliciously light, creamy, sophisticated little dessert from days gone by. I first tasted it at a supper given by a lecturer in seventeenth-century literature when I was at college, and it took our tastebuds right back to the Restoration. It can be prepared as either a parfait or a punch--please note that either version contains alcohol, so you may not want to serve this to younger family members.

- Whip the cream and sugar in a chilled bowl, until the cream begins to thicken. Gradually whip in the white wine, lemon juice, and lemon zest. Continue to whip until light and fluffy, but not grainy. Cover the mixture and chill until serving time.
- Serve in chilled parfait glasses, garnished with a dash of nutmeg, a sprig of mint, and a slice of lemon. Syllabub should be eaten with a small spoon, and savored.

ICED RASPBERRY LEMON SYLLABUB WITH PRALINE
This English dessert has been made for more than three hundred years. Pralines add crunch to the creamy mixtures.

- Coat an 11-by-17-inch baking pan lightly with canola oil; set aside. To make the praline, put sugar in a saucepan with 2 tablespoons water. Stir over medium heat until the sugar has completely dissolved, without boiling. Stop stirring; raise the heat. Boil syrup, tilting and swirling pan, until it turns caramel brown, 2 to 3 minutes.
- Remove from heat, and quickly stir in the nuts. Pour onto prepared baking sheet; set aside to cool. When completely cool, cut the praline into small pieces. Set aside. Praline may be made up to 2 days ahead and kept in an airtight container at room temperature.
- To make the syllabub, place half the berries into a medium bowl, and crush them gently against the side of the bowl with the back of a spoon to release their juices. Sprinkle with 1 tablespoon sugar and 2 tablespoons brandy. Set aside.
- In the bowl of an electric mixer fitted with the whisk attachment, combine lemon juice, sherry, and remaining 1/3 cup plus 3 tablespoons sugar, stirring until the sugar has dissolved. With machine on low, trickle in cream. Whisk just until cream holds its shape. Remove bowl from mixer; gently fold in the macerated and remaining fresh berries.
- Sprinkle the praline in the bottom of each glass. Spoon syllabub into glasses. Transfer the glasses to the freezer for at least 2 hours or overnight, until frozen and frosty. Sprinkle each with praline and candied lemon zest. Serve immediately.
CANDIED LEMON ZEST FOR ICED RASPBERRY LEMON SYLLABUB

- Using a vegetable peeler, cut the zest from the lemons. Use a knife to remove any white pith, and cut zest as thinly as possible lengthwise.
- Bring 4 cups water to a boil in a medium saucepan. Add zest; blanch for 1 minute, drain, and rinse under cold water.
- In the same saucepan, combine sugar and 2 cups water; bring to a simmer. Cook until sugar dissolves completely, about 2 minutes. Add lemon zest. Simmer until translucent, about 30 minutes. Remove from heat; let zest cool in syrup. When cool, transfer zest and syrup to an airtight plastic container.

- Divide the raspberries between six small glasses.
- Finely grate the zest of one orange and squeeze the juice of both into a large bowl. Stir in the Grand Marnier and sugar.

- In a large bowl, combine the dry ingredients. In another bowl, whisk together the egg, egg whites, yogurt, oil and lemon zest. Add to the dry ingredients just until moistened. Fold in the raspberries., Transfer to an 8x4-in. loaf pan coated with cooking spray. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

- In a medium bowl, combine lemon and orange zests with olives, garlic, shallot, olive oil, and rosemary. Let olives marinate for 2 to 4 hours at room temperature, stirring occasionally. Olive mixture may be kept in an airtight container, in the refrigerator, up to 1 week. Let olives sit at room temperature for at least 30 minutes before serving.

- Whisk first 5 ingredients in medium bowl until sugar dissolves. Beat cream in large bowl to stiff peaks. Fold whipped cream into wine mixture. Divide mixture among 8 wineglasses. Cover and refrigerate overnight (syllabub mixture will separate). Sprinkle with berries and serve.
PISTACHIO BAVARIAN CREAM AND PRALINE
Whole blanched almonds may be substituted for the blanched, skinned pistachio nuts.

- Heat oven to 325 degrees. Bring a medium pot of water to a boil over high heat. Add the pistachio nuts, and blanch for 30 seconds; drain. When nuts are cool enough to handle, remove skins. Spread out on a baking tray, and place in the oven until they are dry but still green in color, 15 to 20 minutes. Remove from oven, and allow to cool. Set aside 1 1/4 cups nuts. Transfer remaining nuts to a food processor, and process until coarsely ground. Place ground nuts and milk in a medium saucepan, and bring to a boil over medium heat. Remove from heat; transfer to a medium bowl; set aside in the refrigerator for 3 hours.
- To make the praline: Place a Silpat (a French nonstick baking mat) on a baking tray; set aside. Place 3/4 cup sugar and 1/4 cup water in a small saucepan set over medium heat. Cook, stirring occasionally and brushing down the sides of the pan with water as needed, until sugar is golden in color, about 10 minutes. Add reserved 1 1/4 cups nuts, and stir to combine. Pour mixture onto the prepared baking tray, and allow to cool. Break into pieces, and place in the bowl of a food processor. Pulse until the caramel is coarsely chopped; set aside.
- To make the bavarian cream: Fill a bowl with ice and water; set aside. Remove milk-nut mixture from refrigerator, and strain through cheesecloth into a medium saucepan, squeezing all milk from the nuts. Discard nuts. There should be 2 cups strained milk. Bring milk to a simmer over medium-low heat. While milk is heating, whisk egg yolks with remaining cup sugar in a medium bowl, until pale and combined. Pour hot milk slowly into egg mixture, whisking constantly. Return egg-milk mixture to the saucepan, and cook, stirring constantly until it thickens and coats the spoon, 3 to 5 minutes. Do not allow mixture to boil. Remove from heat, and stir in softened gelatin until completely dissolved. Strain mixture into a clean bowl, and set over ice bath, stirring occasionally until mixture is cold. Add kirsch, and stir to combine.
- Using an electric mixer, whip heavy cream to soft peaks. Fold whipped cream into egg-milk mixture until just combined. Use immediately.
