EASIEST LAYER DIP
I came up with this while on a limited budget and craving a layer dip sans guacamole, lettuce, olives, etc. Super easy and totally delicious!

Steps:
- For the refried beans, in a medium skillet over medium heat, add the chopped bacon and render until crisp, 7 to 9 minutes. Remove the bacon to a paper towel-lined plate with a slotted spoon and reserve. Discard all but 2 tablespoons of bacon grease from the skillet.
- Return the skillet to medium heat and add the beans, green chiles, cumin and hot sauce to taste. Cook, stirring frequently, until heated through, 2 to 3 minutes. Remove from the heat, taste and add more cumin or hot sauce if desired. Reserve.
- For the pico de gallo, in a medium bowl, mix together the cilantro, tomatoes, jalapeno, onion, 2 tablespoons of the lime juice and a pinch of salt. Taste, adjust the seasoning and reserve.
- For the guacamole, scoop the avocado into a medium bowl. Add a pinch of salt, the remaining lime juice, 1/4 cup of the pico de gallo and 2 tablespoons of the juices from the bottom of the bowl. Mix together, taste and adjust the seasoning.
- In a glass dish, begin layering in the following order: refried beans, Cheddar cheese, sour cream, guacamole, black olives, cotija, bacon and pico de gallo to finish. Enjoy.
SEVEN-LAYER DIP
For this recipe, the traditional 7-layer dip has been revisited so that each layer is good enough to eat on its own, but isn't so much effort that the whole thing can't be finished in 20 minutes. The order of the layers offers some delightful moments, like where the cheese melts into the warm refried beans or where the cool sour cream meets the fiery salsa. Cilantro and scallions serve as a refreshing counterpoint, and Fritos lend added crunch. No need to dig out your trifle bowl: A platter with a lip is preferred here for easier scooping.

Steps:
- In a small bowl, stir together the sour cream and half the jalapeño (about 1 tablespoon). Season with salt and pepper. In another small bowl, coarsely mash the avocado, lime juice and remaining 1 tablespoon jalapeño, then season with salt and pepper.
- In a small saucepan over medium-low heat or in a microwave, warm the refried beans with the cumin. Season with salt and pepper.
- Spread the beans on a platter with a rim or lip. Top evenly with the cheese, followed by the olives, avocado mixture and salsa. Top with dollops of jalapeño-sour cream and sprinkle with crumbled Fritos, scallions and cilantro. Serve with tortilla chips.

QUICK AND EASY 7-LAYER BEAN DIP
My brother and I make this all the time when people come over, and its usually the first thing gone. Its a fairly straightforward layered bean dip that you can throw together in minutes with readily available ingredients. Truth be told, if you count there are only 6-layers to this dish, the original recipe called for a layer of salsa and a layer of onions, we've combined and simplified (and bettered in my opinion) these two layers with pico de gallo. But since nobody has really questioned it, we've never called it anything else.

- Start by prepping and slicing your ingredients if not already prepared. Also, drain the excess liquid from your canned tomatoes and the olives.
- In a separate bowl, blend together the sour cream and the Taco/Mexican Style seasoning. Set this bowl aside for a moment.
- We will start by layering the refried beans on the bottom of the glass container that you will use for this recipe. The refried beans are the heaviest and the darkest ingredients and thus, should go on the bottom of the bowl or container.
- Carefully, spread the mixed sour cream and seasoning from the bowl that you set aside over the refried beans. Be careful to not blend through the layer and thus, bring up your beans into your white sour cream layer. The sour cream layer should be spread as evenly as possible over the beans.
