I have used this recipe for 30 years. My husband loves it and he is picky.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
- Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
- In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
- Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.
- Bake in the preheated oven for 1 hour or until done. Allow to stand 5 minutes before slicing.

- Put oven rack in middle position and preheat oven to 350°F.
- Mix together all ingredients except chili sauce using your hands. Transfer mixture to a 13- by 9-inch glass baking dish and mound into a 10- by 5-inch oval loaf. Spread chili sauce over meatloaf and bake 1 hour.
HUBBY'S MEATLOAF
I know everyone has a recipe...but once, quite by accident my DH made this for dinner, making it up as he went along...he is now in charge of Meatloaf in our house!! It's a huge meatloaf, we love meatloaf sandwiches...and I have also used leftovers like added meat to spaghetti sauce!

- Preheat oven to 350°F. Lightly grease a 9"x5" loaf pan. In a large bowl, combine ground beef, egg, oatmeal, chopped onion, and seasonings. Form mixture into a loaf and place in the prepared pan. - Position oven rack to middle position; preheat to 400 degrees.
- Line heavy, rimmed baking sheet with foil.
- Place cooling rack atop baking sheet.
- Spray cooling rack with nonstick spray.
- Toss bread cubes with half and half in large bowl to coat.
- Set aside until bread is very soft and all liquid is absorbed, about 10 minutes.
- Add ground beef, parsley, shallots, cheese, tomato paste, eggs, oregano, thyme, pepper, salt, seasoned salt and rosemary.
- Using clean hands, mix just until all ingredients are thoroughly blended, but do not over-mix because doing so causes meat loaf to be tough.
- Form mixture into a 9-by-4-inch oval loaf.
- Set meat loaf atop the prepared rack on baking sheet.
- Bake for 10 minutes, and then turn it over, and then about 1 hour or until an instant-read thermometer registers 160 degrees when inserted into center of meatloaf.
- Allow meatloaf to rest for 15 minutes (this will help keep it moist).
- Using a large sharp knife cut meatloaf crosswise into thick slices.
CLASSIC MEATLOAF WITH GRAVY

- Preheat the oven to 350°F. Line a baking sheet with aluminum foil and set aside.
- Transfer breadcrumbs to a small bowl and stir in the milk. Set aside for about 5 minutes.
- In a separate large bowl, combine the beef, pork, onion, garlic, egg, ketchup, Worcestershire sauce, salt, and pepper with your hands.
- Add the breadcrumb mixture and mix until thoroughly incorporated.
- Place the meat mixture on the prepared baking sheet and form into a tight loaf with your hands, about 9 inches long and 5 inches wide.
- Bake for 50-60 minutes, or until a meat thermometer registers 155°F.
- Let rest for 15 minutes before cutting into slices and serving with the gravy.
- While the meatloaf is resting, make the gravy by melting the butter in a medium sauce pot over medium heat.
- Add the diced onions and 1/4 teaspoon salt, and saute until slightly golden, about 3 to 5 minutes.
- Sprinkle the flour over the onions and stir well to evenly coat. Cook over medium heat, stirring constantly, for about 2 minutes.
- Add the stock and whisk until thoroughly combined. Cook for another 2 minutes, stirring constantly.
- Reduce the heat to low and stir in the cream. Cook for another 2 to 5 minutes to slightly thicken the mixture.
- Season with the remaining salt and black pepper, and serve with the meatloaf.

MEATLOAF - HUBBY'S FAVORITE
Steps:
- Break up regular oats by placing in baggie and pounding them with a meat mallet or rolling pin. You don't want fine crumbs, but just broken pieces of oats.
- Preheat oven to 350*. Spray a shallow 9x13 baking pan with PAM.
- Mix all ingredients together well. Using your hands, form into a 9 inch long loaf, packing together firmly with no air pockets.
- Place meatloaf in pan and pour a little water in bottom of dish - about 1/4 inch deep.
- Bake 1 hour, uncovered. Mix glaze ingredients together. Spread on top of meatloaf.
- Continue to bake, uncovered, for approx. 30 minutes more. Check center of meatloaf to ensure juices are clear - no pink inside. Internal temperature should be 155*. Meatloaf crust will be dark brown.
- Remove from baking pan. Let cool 5 - 10 minutes for easier slicing. Use a sharp, thin knife to cut, which will make neater, less crumbly slices.
CHUBBY HUBBY MEATLOAF

- To prepare sauce, saute onion in vegetable oil. Once it's softened, add garlic. Add the rest of the ingredients for the sauce except for salt and pepper and cook, uncovered, on medium-low heat for 15 to 20 minutes, or until your flavors come together. Season with salt and pepper.
- Preheat oven to 375 degrees F.
- Soften vegeatable in small amount of oil. Set aside.
- In a large bowl, mix up the rest of the ingredients and stir in 1/4 cup of the sauce mixture. Add your cooked vegetables and lightly mix everything up with your hands.
- Gently form into an oval loaf in a shallow baking dish. Spread the top with the rest of the sauce. Bake for about 1 hour.
