- Soften the chickpeas ~ place the chickpeas (with their juice) and 1/4 cup water in a small saucepan. Simmer for 15 to 20 minutes. Let the simmered chickpeas stand until cool enough to handle. Remove and discard any loose skins. Then gently pinch each chickpea to slip off the skin. Or, place the chickpeas in a wire mesh strainer and rub gently against the strainer sides to remove skins.
- Place tahini, garlic, lemon juice, and kosher salt in the bowl of a food processor. Process for 1 minute. Scrape down the sides of the bowl, and process for 30 to 45 seconds more. With the food processor running, stream in 2 tablespoons extra-virgin olive oil. Process for about 1 minute to incorporate fully.
- Drain chickpeas, reserving the liquid. Add half of the chickpeas and 1/4 cup reserved liquid to the food processor. Process for 1 to 2 minutes, scraping down the sides of the bowl once. Add remaining chickpeas and process for an additional 1 to 2 minutes, or until smooth.
- Add an additional 2 to 3 tablespoons reserved chickpea liquid or water, a little at a time, until the desired consistency is achieved. Process for 20 to 30 seconds after each addition.
- Place hummus in a serving bowl. Drizzle the top with a bit of olive oil and sprinkle with paprika to garnish. Serve with pita bread, pita chips, crackers, or assorted vegetables for dipping.
- Store the hummus in an airtight container in the refrigerator for up to one week.
CREAMY HUMMUS

- Drain the chickpeas, reserving the can liquid and then rinse. Set aside a few whole chickpeas for garnish.
- Put the lemon juice, tahini, garlic and 2 teaspoons salt in the bowl of a food processor. Process, scraping down the sides of the bowl about halfway through, until thick and very smooth, 1 to 2 minutes. Add the chickpeas in 2 additions, processing until smooth after each addition. With the food processor running, slowly pour in the oil until the mixture is creamy. If the hummus is too thick, adjust the consistency by adding the reserved can liquid a few tablespoons at a time. Season with more salt if desired.
- Spread out the hummus in a shallow serving bowl and drizzle with olive oil. Dust with paprika and garnish with the reserved chickpeas. Serve with pita chips and vegetables for dipping.

- Place red onions in a medium bowl and add white wine vinegar, sugar, 2 teaspoons salt. Massage onions with your fingers until they begin to break down and vinegar turns pink. Set aside. This can be done several hours in advance, or up to a day in advance; keep covered in the refrigerator.
- Heat a large nonstick skillet over medium-high heat. Add chickpeas and baking soda and heat, stirring continuously, until chickpeas are warmed through and mixture begins to sizzle on the edges, about 3 minutes. Continue to cook, stirring, for 2 more minutes.
- Transfer chickpeas to a large bowl, fill with cold water, and rinse and drain 4 to 5 times, gently rubbing the chickpeas between your hands to loosen the skins. When draining, use a small skimmer to discard skins, or pour off the skins from the top of the bowl before refilling with fresh water. Repeat until the water runs clear and no skins remain.
- Transfer chickpeas to a food processor. Add tahini, garlic, lemon juice, and salt to taste. Process to form a thick, chunky paste. Add 1/4 cup ice water and continue running processing for an additional 4-5 minutes. Add ice water by the tablespoon until mixture is velvety and entirely smooth. Season to taste with salt and additional lemon juice. Set aside.
- Heat a large skillet over high heat. Add olive oil, swirl to coat, and add mushrooms and thyme. Season generously with salt and pepper and saute, stirring occasionally, until mushrooms are softened and deeply golden, about 8-10 minutes. Remove from heat and keep warm until ready to serve.
- Spread hummus in a thick layer on a serving plate. Scatter with sauteed mushrooms and pickled red onions. Dress with a generous pour of olive oil and chopped dill. Serve with crudites and pita on the side.

With the motor running, Add the ice water, 1 tablespoon at a time (it may seize up at first) until mixture is very smooth, pale, and thick.
- Add the drained chickpeas and cumin and process, scraping down the sides as needed, until very smooth, about 4 minutes. Thin with water if a looser consistency is needed. Taste and season with lemon juice, and cumin, as desired.

- Set a strainer over a measuring cup. Empty the can of chickpeas in the strainer to save the liquid from the can (which is called aquafaba.) Peel the chickpeas: Pinch them one by one with the tip of your fingers, then discard the skins. Alternatively, place the chickpeas in a large bowl, cover them with water, then gently rub them together to loosen and remove the skins. The peeled chickpeas will remain at the bottom of the bowl while the skins float to the top. Tilt the bowl to pour out the skins, then fully drain the remaining chickpeas in a strainer. Pick out any remaining skins.
- If desired, save 2 to 3 tbsp (30 to 45 ml) chickpeas to garnish the hummus before serving. Transfer the remaining chickpeas to the bowl of a food processor (or to the container of a professional blender). Add the lemon zest and juice, tahini, garlic, salt, pepper (if using) and 2 tbsp (30 ml) of the saved aquafaba. Process for 1 minute. Scrape down the bowl and check the consistency. If the hummus still seems thick, add more aquafaba, 1 tbsp (15 ml) at a time, until you reach the desired consistency. (Hummus should be creamy but still hold its shape when you swirl it with the back of a spoon.) Keep processing for 2 to 3 minutes more, or until the hummus is very smooth.
- If you used a food processor and have a hand blender: to reach the creamiest consistency, transfer the hummus to a large measuring cup. Fully immerse the hand blender’s head into the hummus and blend it continuously, moving around in an up-and-down motion, for 2 to 3 minutes, or until impeccably smooth.
- SERVING: To serve, transfer the hummus in a shallow bowl, or a medium-sized plate. Use the back of a spoon to create a swirling pattern. Garnish with a generous drizzle of olive oil, a sprinkle of sesame seeds, a pinch of flaky sea salt, and some freshly ground black pepper. Scatter the saved chickpeas over (if using) and serve with slices veggies, pita bread, or chips.
