BAKED BLUE CHEESE WITH FIGS & WALNUTS



Baked blue cheese with figs & walnuts image

Melted cheese pairs beautifully with baked figs and walnut in this easy baked dish. It's great as a cheese course or sharing starter

Number Of Ingredients 8

6-12 ripe figs
2 tbsp good sherry vinegar
100ml red wine (or red grape juice)
50g walnut halves
4 thyme sprigs , broken up a little bit
4 tbsp clear honey
1 whole round blue brie or camembert (we used Cote Hill Blue from paxtonandwhitfield.co.uk, or try President Le Bleu)
crusty baguette , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cut a cross in the tops of the figs nearly, but not quite, all the way down to the bottom, and pinch the bases. Sit in a baking dish or roasting tin (big enough so the figs can sit in a single layer with the whole cheese) cut-side up, but don't put the cheese in yet.
  • Mix together the vinegar and wine or grape juice with some seasoning, and pour all over the figs. Scatter over the walnuts and thyme. Finally, drizzle over the honey. Bake for 15-20 mins until the figs start to become soft and sticky.
  • Tuck the whole cheese in among the figs and put back in the oven for a final 5 mins. Lift the dish straight to the table and serve with lots of crusty bread to scoop up the molten cheese.

4 large handfuls salad greens-such as red leaf, spinach, arugula, frisée, or premixed mesclun
4 generous tablespoons chopped dried figs (we use Calmyrna and Black Mission figs, plumped in warm water and drained)
3 tablespoons chopped toasted walnuts (see Toasting Nuts, p. 99)
1/2 cup Sherry Vinaigrette
4 tablespoons crumbled Valdeon (Spanish blue cheese), or your favorite blue cheese
Sherry Vinaigrette
1 medium shallot, finely minced
2 tablespoons sherry wine vinegar
1 tablespoon fig preserves, or 1 tablespoon honey
2 teaspoons chopped capers
1 teaspoon Dijon mustard
1/2 cup olive oil
Salt and pepper
(makes 3/4 cup or 4 to 6 servings)

Steps:

  • Place the salad greens, figs, walnuts, and dressing in a bowl and toss. Divide among plates and crumble the blue cheese on top of each salad.
  • Sherry Vinaigrette
  • Whisk together the shallot, vinegar, preserves, capers, and mustard in a small bowl. Whisk in the olive oil until the dressing is emulsified. Taste for balance, and add a little more olive oil, if you like. Season with salt and pepper.

2 teaspoons whole grain Dijon mustard
2 teaspoons honey
1/4 cup olive oil
1/4 cup fresh squeezed orange juice
1/2 teaspoon sea salt

1/3 cup chopped walnuts
10 cups loosely packed mixed greens
1/2 cup dried fig, cut into strips
1/3 cup crumbled blue cheese or 1/3 cup feta

Steps:

  • Dressing.
  • In a medium mixing bowl,mix together vinegar, mustard, and honey until combined.
  • Whisk in olive oil.
  • Whisk in orange juice, salt and pepper.
  • Salad.
  • Toast walnut pieces in a skillet over medium heat, until they become brown and fragrant.
  • Cool walnuts.
  • Toss greens with 3/4 of the dressing.
  • Place greens on serving platter.
  • Toss with nuts,greens,and blue cheese.
  • Drizzle with remaining dressing.

Walnut crunch:
2 tablespoons honey
2 tablespoons sugar
1 tablespoon butter
1/8 teaspoon ground cinnamon
1/8 teaspoon salt
6 tablespoons chopped toasted walnuts
Figs and Pastry:
1/2 cup sugar
1 tablespoon water
Pinch of salt
9 fresh figs (preferably black Mission), stemmed, cut lengthwise in half
1/4 cup (1/2 stick) unsalted butter
1/2 cup ruby Port
1 sheet frozen puff pastry (half of 17.3-ounce package), thawed
3 ounces La Fourme d'Ambert or Stilton blue cheese, diced or coarsely crumbled, room temperature
Honeycomb or honey

Steps:

  • For walnut crunch:
  • Stir honey, sugar, butter, cinnamon, and salt in medium skillet over medium heat until sugar melts. Cook until mixture boils and is deep golden brown, about 3 minutes. Mix in walnuts. Pour out onto sheet of foil; cool completely. Chop walnut crunch into small pieces. Do ahead Can be made 2 days ahead. Store airtight at room temperature.
  • For figs and pastry:
  • Stir 1/2 cup sugar, 1 tablespoon water, and salt in heavy large skillet over medium heat until sugar is evenly moist. Cook until sugar begins to turn golden, stirring occasionally, about 4 minutes (mixture may be granular). Place figs in sugar mixture, cut side down, and cook until figs begin to release juice, about 3 minutes. Add butter; swirl skillet to melt. Remove skillet from heat. Add Port and let stand 5 minutes. Using slotted spoon, transfer figs to plate and cool. Return syrup to boil, whisking until smooth. Cool syrup completely. Do ahead Figs and syrup can be made 1 day ahead. Cover separately and chill. Rewarm syrup before using.
  • Preheat oven to 350°F. Line baking sheet with foil. Roll out thawed puff pastry on lightly floured surface to 12x8-inch rectangle. Using 3 1/2-inch round cutter, cut out 6 rounds; arrange on prepared sheet. Divide walnut crunch among pastry rounds. Top each with 3 fig halves, cut side up.
  • Bake tartlets until pastry is puffed and golden, about 30 minutes. Do ahead Tartlets can be made 2 hours ahead. Let stand at room temperature. Rewarm at 350°F for 8 minutes.
  • Arrange cheese atop warm tartlets. Brush or drizzle with warm Port syrup, then top with cube of honeycomb or drizzle with honey.

1/4 cup balsamic vinegar (to taste)

Steps:

  • Cut the figs in half lengthwise and put a tablespoon of blue cheese on top of each half. Top this mixture with a teaspoon of balsamic vinegar.
  • Put figs on a warm grill and cook until the cheese melts and the figs are heated through.
  • Serve and enjoy!
