HEALTHIER GREEN BEAN CASSEROLE
This sounds similar to my mom's green bean casserole but a healthier version and quicker too as it is cooked in a skillet instead of the oven. Recipe source: Cook's Illustrated

Steps:
- In a small bowl toss together shallots, 1/4 teaspoon salt, 1/8 teaspoon pepper and 2 tablespoons flour. Set aside.
- In a skillet heat 3 tablespoon oil over medium high heat; add shallots and cook until golden and crisp (5 minutes).
- Transfer shallots with the oil to baking sheet lined with paper towels.
- Wipe out skillet and return to medium high heat, adding remaining oil (2 tablespoons), mushrooms and 1/4 teaspoon salt, cooking stirring until browned (8 - 10 minutes). Transfer to plate and set aside.
- Wipe out skillet and heat butter over medium heat, adding onion when butter melts, cooking stirring occasionally until edges brown (2 minutes).
- Stir in garlic and remaining flour (1 tablespoon), green beans, thyme and bay leaves.
- Stir in cream, broth, increasing heat to medium high, cover and cook until beans are tender (4-5 minutes).
- Stir in mushrooms, continuing to cook uncovered until beans are tender and sauce thickens (4-5 minutes). Remove from heat.
- Discard bay leaves and thyme, season with salt and pepper.
- Transfer to serving dish, sprinkling with reserved shallots.

GREEN BEAN OR VEGETABLE MEDLEY CASSEROLE
You can use either green beans, or the frozen medley of vegetables for this casserole, either way you can't go wrong!

- Stir soup, sour cream, pepper, veggies, 2/3 cup of fried onions and 1/4 cup swiss cheese in 2 quart casserole.
- Cover and bake 40 minutes at 350.
- Sprinkle remaining cheese & onions over and bake for another 5 minutes.

MOM'S GREEN BEAN CASSEROLE
This is the green bean casserole my mom made for the holidays. I think she may have gotten it from Campbells. ** You can substitute 2 16oz. cans of green beans for the frozrn ones. Drain them first.

- 1. Thaw the green beans. If you do this in water then drain well.In a large casserole, combine soup, milk, soy sauce and pepper.
- 2. Stir in the green beans and 1/2 the can of onions.
- 3. Bake at 350 degrees for 25 minutes or until hot and bubbling.
- 4. Top with the remaining onions and bake 5 more minutes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a casserole dish.
- In a bowl, stir together the cream of celery soup, sour cream, Cheddar cheese, onion, and salt until well combined. Mix the green beans and corn together in the prepared dish, and spread the soup mixture over the vegetables. Place the crushed crackers in a bowl and stir in the butter. Spread the crumbs over the casserole.
- Bake in the preheated oven until the casserole is bubbling and the crumb topping is golden brown, about 45 minutes.
