GRANDMA'S CHICKEN AND RICE SOUP
Grandma used to make this all the time when we were kids. The egg added nutrition and looked pretty in the pot. The recipe calls for 2 chicken bouillon, but I don't use it.

Steps:
- Add stock, onions, carrots, parsnip, celery, salt, chicken, and uncooked rice to a large soup pot; cook covered for 20 minutes on simmer.
- At the end, add beaten egg slowly to soup in a constant stream, while whisking soup slowly. This will produce a swirled egg pattern in the soup.

- Preheat the oven to 300 degrees F (150 degrees C). Shape the dough into 1 1/2 inch long crescents. Bake on ungreased cookie sheets for 15 to 20 minutes, until cooked through but not browned at all about 10 minutes. Cool cookies on racks and store in an airtight container.

- Preheat oven to 325°. Pierce duck skin all over with a fork. Mix remaining ingredients; rub over outside of duck. Place duck on rack in a shallow roasting pan; add 1 inch of water., Roast duck, uncovered, until a thermometer inserted in thigh reads 180°, 1-1/2 to 2 hours. Remove from oven; let stand 15 minutes before carving. If desired, skim fat and thicken pan drippings for gravy. Serve with duck.

My grandma lives in OKC and is a southern cook, through and through. This is a SIMPLE recipe that is so delicious and comforting. -If you like, you could add fresh veggies like broccoli or green beans just before baking.

- Place chicken in a covered baking dish that has been sprayed with Pam.
- In a bowl, mix other ingredients well and spoon over chicken.
- Sprinkle with paprika and cover pan with lid.
- Bake at 350 degrees for one hour and 15 minutes.
- Remove cover and serve.
- Enjoy!

- Clean and wash the strawberries carefully, so you dont hurt the fruit. Since garden strawberries are a bit larger, chop them into pieces. Pour sugar over them in a suitable container (I prefer glass ones) and put in the fridge for 24 hours.
- That way the fruits release their own aromatic juices and you wont need to add water. As grandma used to say: besides enthusiasm, you need patience to make something tasty.
- The next day, carefully take the fruit out with a slotted spoon. Pour the released syrup into an enameled container. Heat the mixture on low heat, while stirring nonstop with a wooden spoon.
- Never remove the foam. Just press on it from time to time with the slotted spoon. This trick I learned from grandmas old recipe cookbooks.
