MULLED CIDER WITH CALVADOS
Steps:
- In a saucepan stir together the cider, the brown sugar, the allspice, the nutmeg, the cloves, the cinnamon pieces, and the apple, simmer the mixture, covered, for 10 minutes, and stir in the Calvados. Heat the mixture over moderate heat until it is hot and discard the allspice, the cloves, and the cinnamon. Divide the mulled cider among heated mugs and garnish each drink with a few of the apple slices.

- Combine all the ingredients in a saucepan and simmer over low heat for 5 to 10 minutes. Pour into mugs and serve.

- In a large pot over medium heat, add the apple cider. Stir in the brown sugar, allspice and nutmeg until the sugar is dissolved and bring to a low boil.
- Stick the pointy ends of the cloves into the orange so that just the buds of the cloves are visible. The entire orange should be covered with the cloves.
- Add the orange to the cider and reduce the heat to simmer. Cover and continue cooking for 20 minutes.
- Serve in warm mugs with a cinnamon stick garnish. For adults, add bourbon to the cider.
HOT SPICED CIDER TEA
A lovely hot spiced cider and tea beverage infused with cinnamon, black peppercorns, cloves, cardamom, fresh ginger, star anise and citrus. Perfect for a chilly autumn or winters eve.

- Lightly crush the cinnamon, peppercorns, cloves, and cardamom pods in a mortar and pestle or on a cutting board with the bottom of a saucepan.
- Transfer the spices to a medium saucepan, add the ginger, star anise and citrus peels. Add the water. Bring to a boil, reduce the heat, and simmer, partially covered, until aromatic, and the cinnamon stick opens a little, about 10 minutes.
- Add the tea bags to the pan and immediately remove from the heat. Set aside to steep for 3 to 4 minutes. Remove the tea bags, and add the apple juice and orange juice. Return the pan to a medium heat and warm, taking care not to let the tea boil.
- Strain and serve hot.

- Using a vegetable peeler, peel the skins from the clementines, making sure not to include any of the white pith. Set the peels aside. Cut each clementine in half crosswise and juice.
- In a medium pot over medium-low heat, combine the clementine peels and juice, calvados, apple juice, brown sugar, cardamom pods, cinnamon sticks, star anise pods, and cloves. Simmer for 20-25 minutes, without letting the mixture come to a boil. Remove the pot from the heat.
- Ladle the cocktail into mugs and serve warm.

Grown-up hot apple cider. Perfect for a cold winter day. My recipe actually calls for mulling spice, however, RecipeZaar does not recognize it as an ingredient. Use 3-4 tablespoons mulling spice in place of allspice, cloves, cinnamon sticks and orange rind, if available. Use good quality fresh apple cider (not apple juice.) This would also make a nice cocktail if cooled and served over ice.

WHITE SANGRIA WITH CALVADOS
This just sounded delightful when I found it in The Wichita Eagle! A little different from the other white sangria recipe on Zaar in that it is a little lighter on the Liqueur, using only Calvados (one of my favorite brandies of all time!). be sure to use soda water (not club soda) in this one. I guessed at 6-8 servings - won't know until I make it once myself.

- Cover with 1 bottle of Rioja wine and chill sangria several hours.

- Pour water into a large saucepan and bring to a boil. Remove from heat and toss in the orange spice tea bags. Cover and let steep 5 minutes. Remove tea bags and stir in sugar, apple cider, rum, and 2 of the cinnamon sticks. Heat just to steaming -- do not boil.

- Peel and core apples. Finely chop half of one apple and cut the rest into 12 wedges. Toss the apple in lemon juice.
- Heat half the butter in large frying pan. Add the chicken pieces, skin side down, and cook until golden. Turn chicken over and cook another 5 minutes. Remove the chicken and pour off fat.
- Heat 1 tablespoon butter in the same pan and add onion, celery and chopped apple. Fry over moderate heat for 5 minutes without browning.
- Remove from heat. Sprinkle flour into mixture and stir. Add Calvados and return to heat. Gradually stir in cider. Bring to a boil, return chicken to pan, cover and simmer gently for 15 minutes.
- Heat remaining butter in small frying pan. Add apple wedges and fry over moderate heat until browned and tender. Remove from heat and keep warm.
- Remove the chicken pieces from the pan to a platter and keep warm. Skim excess fat from cooking liquid. Add creme fraiche, bring just to a boil and simmer 4 minutes, until it thickens enough to coat the back of a wooden spoon. Season with salt and pepper. Pour sauce over chicken and serve with warm apple wedges.
