SICHUAN HOT AND SOUR POTATO
My husband had this dish on a recent trip to China and came home raving about how delicious it was. It is super spicy, tangy, simple, and oh-so tasty.

Steps:
- Peel potatoes and cut into 1/4-inch matchsticks. Rinse under running water until water runs clear. Soak potatoes in water for 5 to 10 minutes.
- Drain potatoes and pat dry.
- Heat a wok over medium-high heat. Add oil. Add pepper flakes and ground Sichuan pepper to the hot oil; cook and stir until fragrant, about 30 seconds. Add potatoes and garlic; toss and cook until potatoes begin to soften, about 5 minutes. Add vinegar, soy sauce, and salt; toss to combine. Cook until flavors have infused, 1 to 2 minutes.
- Serve garnished with cilantro leaves.

HOT AND SOUR POTATOES
Awesome potato dish to serve with B.B.Qs. or cold meats, excellent with chicken,pork chops even steak and of course curries. Easy to prepare and cook, this is a dish you will make time and again. This is so simple that I forgot to post it years ago. Better than mash and simpler that roast, what more could you ask for.

Steps:
- Heat the oil in a pot, add the mustard seeds, when they start to sputter add the onions, and garlic. Cook till onions are light golden in colour.
- Add the chilli powder and paprika, stir and cook for 1 minute.
- add the potatoes, salt, water and lemon juice, stir and cook till potatoes are well heated through.
- Serve.

Steps:
- 1-Heat oil in a skillet.
- 2-Add cumin seeds, mustard seeds, curry leaves and chopped garlic and fry till garlic becomes golden brown.
- 3-Remove from heat and stir.
- 4-Add red chilli powder, coriander powder and salt. Stir.
- 5-Add in the tamarind paste and replace on heat. Stir.
- 6-Heat the formed paste for approx two minutes.
- 7-While on heat, add the potatoes and mix till all of the pieces get covered with paste.
- 8-Serve hot in a bowl and enjoy!

HOT DOGS, SAUERKRAUT, AND POTATOES
This isn't an actual recipe, but it's a description of a meal my mother used to fix many years ago. She made it to use up leftover hot dogs. Recently I saw a similar one on "Zaar but it didn't have the potatoes. The amounts listed are only approximate because I was required to list something.

Steps:
- Boil peeled potatoes (cut in quarters) until tender but not mushy. Drain, and add to the pan the amount of sauerkraut for the number of people you've planned to feed. Also add hot dogs cut into 1 inch pieces. Heat everything, but watch carefully to avoid burning. Add butter if desired. We always ate this with mustard for the sauerkraut and hot dogs.
- The next day my mother would heat leftovers in a frying pan, letting the sauerkraut get brown.
SOUR POTATOES
Steps:
- Wash, peel, and dice potatoes. Cover with water and cook until fork tender. While potatoes are boiling, chop onion, place in a bowl with vinegar to marinate.
- Partially drain potatoes, add butter, salt & pepper, and onions with vinegar.
- Mash and stir with potato masher to combine. Sprinkle with paprika in serving bowl.
