This is my gram's recipe. Sounds odd, but has a great taste. I love it because it takes only 5 minutes to make and because my kids devour it. (Gotta love tater tots)! It's great served with a green salad or fruit. Great for potlucks too.

- Lightly grease a 9 x 13 pan (makes cleanup easier).
- Spread beef in bottom of pan.
- Salt and pepper.
- Cover with the can of soup; spread evenly.
- Layer the frozen peas over the meat and soup.
- Arrange tater tots in rows over the casserole.
- Cover and bake at 375 for 1 hour and 15 minutes.
- Uncover and add slices of American cheese to top of casserole.
- Bake uncovered for 15- 20 minutes, till cheese is brown and casserole is hot and bubbly.

- Line up the tater tots in a buttered 9-by-13-inch baking dish.
- Add the olive oil to a large skillet over medium heat. Add the sausage and onion and cook, breaking the sausage up with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Set aside to cool slightly, then sprinkle it over the tater tots.
- In a large bowl, mix the milk, half-and-half, seasoned salt, cayenne, eggs, bell peppers, half of both cheeses and some salt and pepper. Pour over the tots and sausage mixture, then top with the rest of the cheese. Cover with foil and refrigerate overnight.
- Preheat the oven to 350 degrees F.
- Bake, covered, for about 25 minutes. Remove the foil and continue to bake until the cheese is brown and bubbly and the casserole is cooked through, another 20 to 35 minutes. Cut into squares and serve.

- Preheat oven to 350 degrees F (175 degrees C). Prepare a 13x9-inch casserole dish with cooking spray.
- Spread 20 potato nuggets in the casserole dish.
- Bake in preheated oven until warmed through, about 10 minutes.

- Preheat the oven to 425°. In a large cast-iron skillet, heat 2 tablespoons of the olive oil. Add the onion and cook over moderate heat, stirring occasionally, until softened, about 5 minutes. Add the spinach and garlic and cook, stirring, until fragrant, about 2 minutes. Stir in the milk, cream and nutmeg and cook until thickened and almost all of the liquid has evaporated, 8 to 10 minutes. Add both cheeses and season with salt and pepper; stir until well blended and the cheese is melted. Scrape into a large bowl and let cool slightly. Add the eggs and mix well. Wipe out the skillet.
- In the skillet, heat the remaining 1 tablespoon of olive oil. Add the sausage and cook over moderate heat, stirring occasionally and breaking up the meat, until browned, about 5 minutes. Remove the skillet from the heat. Spread the spinach mixture over the sausage. Arrange the Tater Tots in concentric circles on top and spray with canola oil cooking spray. Bake for about 40 minutes, until the tots are golden, cooked through and crispy. Serve immediately.
