MOMMA'S MEATLOAF
Momma's Meatloaf is a classic meatloaf that has the best flavor ever! This meatloaf recipe is easy to make, holds together, and has the best glaze on top!

Steps:
- Preheat the oven to 350 degrees. Lightly grease a 9x13 pan.
- In a large mixing bowl, knead together the ground beef, onion, bread crumbs, milk, egg, Worcestershire sauce, salt, basil, oregano, pepper, and red pepper flakes.
- Shape the meat into a loaf and put it into the prepared pan. Bake in the 350 degree oven for 45 minutes.
- Mix up the glaze in a small bowl by whisking together the ketchup, brown sugar, and Worcestershire sauce. Brush it over the hot meatloaf.
- Increase the oven temperature to 400 degrees and bake an additional 15 minutes, or until the meatloaf reaches an internal temperature of 160 degrees F.

HOT MOMMA'S MEATLOAF
This family has a thing for spicy food! One of my favorite comfort meals is meatloaf but the kids have always grumbled about "regular" meatloaf so I came up with this spicy version. It was a huge hit with all members of the family.

Steps:
- Place all ingredients in large bowl and mix thoroughly with hands. Spread in 9 x 13 glass baking dish, shaping so meat is higher in middle and slopes to sides so that grease does not pool on top during baking. Blend sauce ingredients together, spread on top and bake in 350 oven for approx 30-40 minutes or until internal temp reaches 160.
- **for even easier and faster prep, substitute fresh onion, green pepper and stewed tomato with can of mexican style stewed tomatoes. I use a home canned product calledd garden special if anyone is familiar with that.

- Preheat the oven to 350 degrees F. Grease a roasting pan with the butter. In a mixing bowl, add beef, pork, onions, peppers, garlic, eggs, cream, and bread crumbs. Blend thoroughly. Season the mixture with salt and pepper. Shape the mixture into a loaf and place on the prepared pan. Pour the stock over the top and place in the oven. Place in the oven and bake for about 1 to 1 1/2 hours, basting occasionally. Remove the pan from the oven. Using a long spatula, remove the meat loaf from the pan. Place the roasting pan on the stove, over high heat. In a small bowl, whisk the flour with 2 tablespoons water. Whisk the slurry into the gravy. Bring the liquid to a boil and cook for few minutes, stirring constantly. Season the gravy with salt and pepper. Slice the meatloaf in to 8 pieces. Serve two slices of meat loaf per person with a spoonful of gravy.
MOM'S MEATLOAF
Steps:
- Preheat oven to 350 degrees F.
- In a small bowl, mix together the horseradish, mustard, salt, and pepper. Set aside.
- In large bowl, mix ground beef, onion, egg, and Worcestershire sauce. Add contents of small bowl and mix thoroughly. Add the bread crumbs and combine well.
- Place mixture into a 1-pound loaf pan. Pour ketchup over top and place in oven.
- Bake uncovered for 45 to 60 minutes.
NOT MY MOMMA'S MEATLOAF

- Preheat the oven to 350 degrees F.
- Pulse the celery, carrots and onions in a food processor until finely chopped. Add the oil to a saute pan over medium-low heat, then add the chopped veggies and cook, covered, until translucent. Transfer the veggies to a plate and cool in the refrigerator.
- Meanwhile, mix together the panko, buttermilk, ketchup, Worcestershire and eggs in a bowl. Add the parsley, salt, black pepper and cayenne and mix well. Once the veggies are cool, add them to the mixture and incorporate. Next add the ground beef and pork and mix thoroughly with your hands.
- Line two loaf pans with parchment paper and divide the meatloaf mixture between them. Cover with foil and bake until the meatloaves reach an internal temperature of 165 degrees F, about 1 hour. Slice and serve immediately, or cool, slice and reheat. Serve with Herb Aioli and Spicy Hollandaise.
- Add the mayonnaise, olive oil, sage, green onions, rosemary, thyme, salt, pepper and egg yolks to a blender or food processor and blend until smooth and well incorporated.
- Melt the butter in small saucepan over medium heat. Blend the yolks, hot sauce, wine, salt and pepper in a blender, then drizzle in the melted butter while blending, until the sauce is smooth.
MOMMA'S MMM-MMM-MAGNIFICENT MEATLOAF
I've never been a big meatloaf fan but I like this recipe. My family raves about it! I think the onion, mushroom, cheese and bacon combination really makes it stand out from your ordinary meatloaf!

- Preheat an oven to 375 degrees F (190 degrees C).

- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
- Heat olive oil in a skillet over medium heat; cook and stir green bell pepper and onion in the hot oil until onion is transparent and bell pepper is softened, 5 to 10 minutes. Add garlic and cook until fragrant, 1 to 2 minutes.
- Combine ground beef, bread crumbs, eggs, carrot, zucchini, salt, pepper, and bell pepper mixture in a large bowl; mix well using your hands. Press meat mixture into the prepared loaf pan.

- Preheat the oven to 375°. In a medium skillet, heat the olive oil. Add the onion and garlic and cook over moderate heat until softened, about 8 minutes. Let stand until cooled to room temperature, about 15 minutes.
- In a large bowl, mix the bread crumbs with the milk until evenly moistened. Add the 2 teaspoons of ketchup and the onion mixture, egg, Worcestershire sauce, thyme, salt, black pepper and mustard and mix until blended.
- In a food processor, pulse the bacon until finely chopped; add it to the bread crumb mixture. Add the ground beef, veal and pork and mix gently with your hands until evenly combined.
- In a medium roasting pan, form the meat into a 9-by-5-inch loaf. In a small bowl, mix the remaining 1/4 cup of ketchup with the brown sugar and cayenne. Spread the ketchup over the top of the meat loaf. Bake for about 1 hour and 10 minutes, until the glaze is browned and an instant read thermometer inserted in the center of the meat loaf registers 160°. Let the meatloaf rest for 10 minutes. Cut into slices and serve.
