1 package (16 ounces) frozen cut green beans
1 medium onion, chopped
1 garlic clove, minced
1 teaspoon butter
1/2 pound fresh mushrooms, chopped
1 can (12 ounces) fat-free evaporated milk
1/4 cup all-purpose flour
1/2 cup fat-free milk
1 teaspoon reduced-sodium soy sauce
1/2 teaspoon salt
1/4 teaspoon poultry seasoning
1/8 to 1/4 teaspoon pepper
TOPPING:
2 cups sliced onions
1 teaspoon butter
1/2 cup soft bread crumbs

Steps:

  • Place beans in a microwave-safe dish. Cover and cook on high for 7-9 minutes or until tender; drain., In a large nonstick skillet, cook onion and garlic in butter over medium heat until tender, about 4 minutes. Add mushrooms; cook until softened. Reduce heat to medium-low; gradually stir in evaporated milk. Combine flour and milk until smooth; gradually stir into mushroom mixture. Add the soy sauce, salt, poultry seasoning and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in beans. Transfer to a 2-qt. baking dish coated with cooking spray. Bake, uncovered, at 375° for 15 minutes., Meanwhile, for topping, in a small nonstick skillet, cook onions in butter over medium-low heat until golden brown. Add bread crumbs; cook until dry and golden brown. Sprinkle over casserole. Bake 7-10 minutes longer or until heated through and topping is browned. Let stand for 10 minutes before serving.

  • Combine soup, milk and pepper in a 1 1/2 qt baking dish; stir until blended.
  • Stir in beans and 2/3 cup fried onions.
  • Bake at 350°F for 30 minutes or until hot.

4 tablespoons unsalted butter
12 ounces white button mushrooms (sliced)
2 cloves garlic (minced)
1/4 cup all-purpose flour
2 cups milk (whole milk preferred)
1 cup broth (chicken or vegetable)
2 teaspoons Worcestershire sauce (OR soy sauce)
1/2 teaspoon ground black pepper
1/8 teaspoon ground nutmeg
salt (to taste)
1/4 cup grated parmesan cheese (OR shredded cheddar)
2 tablespoons cream cheese
2 (6-oz) cans French's Fried Onions (or less to taste)
2 (12-oz) bags frozen green beans (defrosted, rinsed and drained/patted dry)

Steps:

  • Cook mushrooms: Melt butter in deep skillet over medium-high heat. Add mushrooms and cook until softened, about 5 minutes. Stir in garlic and cook for one more minute.
  • Make sauce: Reduce heat to medium-low. Sprinkle flour evenly over mushroom mixture, stirring well for 1-2 minutes. Pour in milk and broth, stirring constantly to keep any lumps from forming. Stir in Worcestershire sauce, pepper and nutmeg. Season with salt to taste, then simmer until thickened, about 5 minutes, stirring often.
  • Prep: As sauce is simmering, place a rack in the lower-middle part of the oven. Heat oven to 350°F.
  • Finish assembly: Once thickened, remove gravy from heat. Stir in green beans and 1/2 - 3/4 of ONE can of fried onions. Spread in shallow, greased 9x13-inch baking dish and top with fried onions to taste.
  • Bake: Bake casserole until bubbly, 15-25 minutes (depending on size of dish; frozen beans must be fully heated through before serving!). Allow to sit on counter for 5-10 minutes, then serve immediately.

2 medium onions, thinly sliced
1/4 cup all-purpose flour
2 tablespoons panko bread crumbs
1 teaspoon kosher salt
Nonstick cooking spray
2 tablespoons plus 1 teaspoon kosher salt, divided
1 pound fresh green beans, rinsed, trimmed and halved
2 tablespoons unsalted butter
12 ounces mushrooms, trimmed and cut into 1/2-inch pieces
1/2 teaspoon freshly ground black pepper
2 cloves garlic, minced
1/4 teaspoon freshly ground nutmeg
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup half-and-half

Steps:

  • Preheat the oven to 475 degrees F.
  • Combine the onions, flour, panko and salt in a large mixing bowl and toss to combine. Coat a sheet pan with nonstick cooking spray and evenly spread the onions on the pan. Place the pan on the middle rack of the oven and bake until golden brown, approximately 30 minutes. Toss the onions 2 to 3 times during cooking. Once done, remove from the oven and set aside until ready to use. Turn the oven down to 400 degrees F.
  • While the onions are cooking, prepare the beans. Bring a gallon of water and 2 tablespoons of salt to a boil in an 8-quart saucepan. Add the beans and blanch for 5 minutes. Drain in a colander and immediately plunge the beans into a large bowl of ice water to stop the cooking. Drain and set aside.
  • Melt the butter in a 12-inch cast iron skillet set over medium-high heat. Add the mushrooms, 1 teaspoon salt and pepper and cook, stirring occasionally, until the mushrooms begin to give up some of their liquid, approximately 4 to 5 minutes. Add the garlic and nutmeg and continue to cook for another 1 to 2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth and simmer for 1 minute. Decrease the heat to medium-low and add the half-and-half. Cook until the mixture thickens, stirring occasionally, approximately 6 to 8 minutes.
  • Remove from the heat and stir in 1/4 of the onions and all of the green beans. Top with the remaining onions. Place into the oven and bake until bubbly, approximately 15 minutes. Remove and serve immediately.

1 cup sour cream
2 (14.5 ounce) cans French-style green beans, drained
1 cup shredded Cheddar cheese
1 cup crushed buttery round crackers
¼ cup melted butter

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a skillet over medium heat. Cook and stir the onions, parsley, and mushrooms in the melted butter until the onions are translucent and the mushrooms are giving off their juices, 7 to 10 minutes. Add the flour, salt, pepper, and lemon juice; cook until the flour is slightly browned, 2 to 3 minutes. Stir the sour cream into the mixture. Mix the green beans into the mixture. 1 (10 ounce) can condensed cream of mushroom soup
3 ounces processed cheese (i.e. Velveeta®), cubed
1 tablespoon real bacon bits
1 (4 ounce) can mushroom stems and pieces, drained
2 (15 ounce) cans cut green beans, drained
1 (2.8 ounce) can French-fried onions

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Heat the undiluted cream of mushroom soup in a saucepan over medium heat. Stir in the processed cheese and bacon, and continue stirring until completely melted. Remove from the heat, stir in the mushrooms, then the green beans until evenly coated. Pour the mixture into a casserole dish, and top with the fried onions, leaving a 1 inch margin around the sides.
  • Bake for 25 to 30 minutes in the preheated oven, until heated through and bubbly. Check near the end of cooking to make sure the onions aren't getting too brown.
