SPICY CARROT AND POTATO SOUP



Spicy carrot and potato soup image

A really simple, medium sweet spiced soup. This soup uses spices from the storecupboard. Excellent for a starter as can be made in advance and also freezes well.

Number Of Ingredients 10

1 tbsp oil
1 onion, chopped
2 large carrots, peeled and roughly chopped into chunks
2 sticks celery, roughly chopped
2 large baking size potatoes, peeled and chopped into chunks
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp hot chilli powder
800ml veg stock (made up with 2 stock cubes)
pinch of salt and black pepper

Steps:

  • Heat the oil in a large saucepan or casserole pan.
  • Fry the chopped raw vegetables gently on a medium heat for about 5 minutes until slightly softened.
  • Sprinkle over the cumin, coriander and chilli powder and stir into the veg, cook gently for another minute.
  • Pour in the vegetable stock.
  • Bring up to the boil and then simmer for 20 minutes until the veg is tender.
  • Use a stick blender in the pan to blend the soup or transfer to a food processor and blend to a smooth consistancy. You may need to add more boiled hot water at this point if too thick.
  • Taste and season as required with salt and pepper.
  • Serve with crusty bread and a twist of black pepper.

2 large potatoes (roughly 3/4 lb, finely grated)
2 large carrots (finely grated)
6 green onions (chopped)
2 tablespoons fresh parsley (chopped)
1/4 cup skim milk
2 eggs (lightly beaten)
6 tablespoons flour
1 teaspoon ground cumin
salt and pepper (to taste)

Steps:

  • Rinse grated potato in cold water, squeeze out as much liquid as possible & pat dry.
  • Combine all ingredients, add salt & pepper as desired & mix well.
  • Drop 2 tablespoons of mixture for each pancake into a large, lightly greased, non-stick frying pan & cook over med-heat for about 5 min on each side or until golden brown & carrot is tender. Repeat cooking process for remainder of mixture & microwave a min or 2 to reheat before serving.
  • NOTE: This mixture will be wet despite how careful you are to remove excess liquid, but do not panic. The pancakes will cook & crisp nicely as shown in the picture.

1 red bell pepper
½ cup butter
1 ½ cups chopped onion
1 ½ cups chopped celery
6 cloves garlic, minced
8 cups chicken stock, divided
1 teaspoon salt
1 teaspoon ground black pepper
1 ½ cups chopped carrot
¼ teaspoon ground nutmeg
¼ teaspoon cinnamon
3 large potatoes, peeled and cut into 1/2-inch cubes
½ teaspoon dried sage
¼ teaspoon ground ginger

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C). Grease a baking sheet.
  • Place the red bell pepper on the prepared baking sheet and roast in the preheated oven until the skin blisters, 15 to 20 minutes. Handling carefully, cut small slits with a knife into each of the 4 sides of the hot pepper. Immediately plunge the pepper a small bowl full of ice water for 2 minutes. Slice the pepper in half. Remove and discard the skin. Chop the flesh into small pieces. Set aside.
  • While the pepper roasts, melt the butter in a large pot over medium heat. Cook the onion, celery, and garlic in the melted butter until tender, about 5 minutes. Pour 3 cups of the chicken stock into the pot; season with salt and pepper. Add 3 more cups of the chicken stock, the carrots, nutmeg, and cinnamon. Stir the potatoes into the soup along with the remaining 2 cups of stock; bring to a boil for 10 minutes. Add the roasted pepper, sage, and ginger. Continue boiling until the potatoes and carrots are tender, another 10 to 15 minutes. Serve hot.

My sis and me came up with this recipe when searching for a nice, relatively quick to make and warming dinner dish on one of those cold winter days. This soup is not overly spicy and has a light sweetness coming from the carrots. It makes for a thick soup, so if you like your soup to be less like a puree, you might have to add more broth to it. We served this with Recipe #178020, which was very very tasty!

6 medium carrots
1 1/4 kg potatoes
2 white onions
2 red onions
1 garlic clove
2 tablespoons oil
1 1/4 liters vegetable broth (more if you like your soup less creamy)
2 1/2-3 teaspoons curry powder
1 teaspoon caraway seed
salt and pepper

Steps:

  • Peel and chop carrots and potatoes into small chunks. Slice the onions, mince the garlic.
  • Heat the oil in a large heavy pot (I use cast-iron). Add the garlic, the curry powder, caraway seeds and the onions and saute for some minutes until lightly browned. Add the potatoes and carrots and saute on medium heat for another 10 minutes.
  • Add the broth, cover and let simmer for about 35-40 minutes or until all veggies are tender. Season with salt and pepper to taste.
  • Puree soup using a hand held blender until it has the desired consistency-I like it to be still chunky (add more broth if needed).
  • Serve with some warm bread of your choice.

1 tbsp olive oil
1 medium yellow onion (finely chopped)
3 large cloves of garlic (minced)
1 thumb-size piece of fresh ginger (peeled then finely grated )
1 heaped tsp cumin
½ tsp garam masala
1/2 tsp paprika
600 g sweet potato (1 large sweet potato) (peeled then cut into similar sized chunks)
490 g carrots (4 large carrots) (peeled then roughly chopped)
1.2 litres of vegetable stock (about 2 pints)
¼ tsp salt (+ more for serving)
¼ tsp freshly cracked black pepper (+ more for serving)
pumpkin seeds
fresh coriander/cilantro
plain yoghurt (plant-based if you are vegan)

Steps:

  • Heat the oil in a large saucepan. Add the onion and cook over medium heat for about 15 minutes, stirring every now and again. The onion should be translucent and springy but not brown.
  • Add the spices, ginger and garlic and cook for a minute until they release their aromas. Then add the carrots to the pan and cook for about 5 minutes, stirring often.
  • Now add the sweet potato to the pan along with the stock, salt and black pepper, stir well then leave to simmer over a low to medium heat for about 20 minutes.Once the sweet potato and carrots are tender blitz the soup with a handheld blender until smooth. Check the seasoning then serve.

8 chicken drumsticks
1 ½ lbs yukon gold potatoes with skin (cut into 4 pieces )
1 lb baby carrots
4 tbsp (divided) olive oil
salt
black pepper
onion powder
garlic powder
dried thyme
dried oregano

Steps:

  • Clean and pat the drumsticks dry with a paper towel. Place them a bowl. Add oil (2 tbsp), salt, pepper, garlic, onion, oregano, thyme and rub the seasoning on the drumsticks. Place the chicken in the slow cooker. Place the cut potatoes, carrots on top of the chicken. Drizzle 2 tbsp olive oil on top of the potatoes and carrots.
  • Cover with a lid and slow cook on low for 5-6 hours or 2-3 hours on high.
  • Transfer the drumsticks to a plate (cover with foil) and set aside until ready to eat. Season potatoes, carrots with salt & pepper to taste.

1 large yellow onion (cut into slices)
2 lbs. carrots (peeled and cut into coins approximately 1/2 inch thick)
1 medium red bell pepper (chopped)
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 cloves garlic (minced)
1 teaspoon chopped fresh thyme ((or 1/2 teaspoon dried))
4 cups chicken or vegetable stock
additional thyme, pumpkin seeds, or cream (for serving)

Steps:

  • In a large stockpot or Dutch oven, warm the olive oil over medium heat. Add the onion and cook, stirring occasionally, until softened, approximately 6 minutes.
  • Add the carrots, red pepper, salt, and pepper. Cook, stirring occasionally, another 5 minutes.
  • Add the garlic and thyme and cook approximately 1 minute, just until fragrant.
  • Pour the stock over the veggies and stir. Increase heat to high and bring mixture to a boil. Reduce heat back to medium, cover, and simmer for about 20 minutes, until the carrots are tender enough to be pierced with a fork.
  • Use an immersion blender, standard blender, or food processor to puree the soup. Taste and add more salt, if desired. Serve with fresh thyme, pumpkin seeds, or a swirl of cream, as desired. Enjoy!
