Tangy-but-sweet! This is a GREAT way to use up the OVERSIZE cukes that get missed in the garden. Zucchinis also work well in place of the cukes! Quantities listed are approximate--you can fudge or substitute a bit and still have excellent results. NOTE: Quantities listed are for GROUND UP amounts...

Categories     Chutneys

Time P2DT1h

Yield 6 pint jars

Number Of Ingredients 13

8 cups cucumbers
2 cups red peppers or 2 cups peeled carrots
2 cups green peppers
1 cup yellow onion
1 tablespoon turmeric
1/2 cup salt
8 cups cold water
1 tablespoon mustard seeds
2 whole cinnamon sticks
2 teaspoons cloves
2 teaspoons allspice
1 -2 cup brown sugar
4 cups white vinegar

Steps:

  • In a meat grinder, grind up cukes, peppers/carrots, and onion to obtain proper quantities; sprinkle with tumeric.
  • Dissolve salt in cold water; pour over cukes, let stand 3-4 hours (or overnight).
  • Drain (line a colander with cheesecloth--use clothespins to hold in place), cover again with cold water, let stand another hour; drain again.
  • In a large saucepan, combine spices and brown sugar with vinegar; heat to boiling (very fragrant!); pour over cuke mixture; let stand 12-18 hours (overnight is fine, too).
  • Fill canning kettle half-full of water over high heat; put canning lids & rings in a saucepan with water--simmer.
  • Heat cuke mixture up in a large pot, just to the boiling point.
  • Immediately scoop into pint or half-pint jars to the neck of the jar; wipe top of jar, add lid and ring, tighten.
  • Place jars in canning kettle with hot water JUST to the neck of the jars; bring ALMOST to boiling point; remove from heat.
  • Remove jars and place them upside-down on a thick towel for 15 minutes (set the timer).
  • Tip right-side up; lids should seal in a few minutes.

AUTHENTIC WISCONSIN BRATWURST!

Authentic Wisconsin Bratwurst! image

Every summer "Johnsonville" trucks roll up at local Super-Markets. Set up huge grills in the parking lot and cook their famous Bratwurst. This is their recipe!

Provided by Koechin Chef

Categories     < 30 Mins

Time 25m

Yield 6 serving(s)

Number Of Ingredients 5

6 bratwursts, fresh
2 (12 ounce) bottles dark beer
1 onion, sliced
1/4 cup dark brown sugar
1 lb sauerkraut, drained

Steps:

  • Bring the beer, onions and brown sugar to a boil. Place the Brats in the liquid and turn down to lowest heat, so they just simmer. Now get your grill fired up and when it's ready take your brats out of the beer and grill them. Since they are pretty well done, they need very little time on the grill. Turn the heat up to high under the beer. Dump in all or part of your drained sauerkraut. Let it cook on high until the brats come in from the grill (if you are not a lover of sauerkraut leave this off).
  • Condiments: Mustard, catsup, sweet pickle relish, raw onions as well as the sauerkraut onion mixture from the pot your brats where inches In Milwaukee we could buy a Brat Bun which is firmer more like French bread. But hot dog or hoagie buns will work too. :-).
  • When they cook them on the parking lots, they put the grilled brats right back into the beer and hold them there until people buy them. They have large pans sitting at the back of the grills. Since it's a promotion, they sell for $1.00. Yummmm!

HOT DOGS WITH HOMEMADE TOMATO RELISH

Hot Dogs With Homemade Tomato Relish image

I haven't tried this recipe yet from Publix Supermarkets but it looks really good, especially for summertime picnics. Bratwurst can be substituted for the hot dogs, if desired.

Provided by TasteTester

Categories     Kid Friendly

Time 45m

Yield 8 serving(s)

Number Of Ingredients 12

3 cups grape tomatoes or 3 cups cherry tomatoes, halved
1 cup finely chopped red onion
6 garlic cloves, minced (or 1/2 teaspoon garlic powder)
2 tablespoons snipped fresh oregano or 2 tablespoons parsley
2 tablespoons honey mustard
1 tablespoon water
1/2 teaspoon salt
1/2 teaspoon packed brown sugar
1/4 teaspoon ground black pepper
8 hot dogs (smoked) or 8 cooked bratwursts (smoked)
1 cup red seedless grapes, halved or quartered
8 hot dog buns, split and toasted

Steps:

  • For the tomato relish, fold a 36x18-inch piece of heavy foil in half to make an 18x18-inch square. In a medium bowl combine 2 cups of the tomatoes, the onion, garlic, oregano, mustard, water, salt, brown sugar and pepper. Place mixture in center of the foil. Bring up two opposite edges of the foil; seal with a double fold. Fold the remaining edges to enclose the mixture, leaving space for steam to build.
  • For a charcoal grill, place the foil packet on a grill rack directly over medium coals. Grill for 10 minutes; turn packet. Grill about 10 minutes more or until onion is tender. (For a gas grill, preheat grill. Reduce heat to medium. Place foil packet on grill rack directly over heat. Cover and grill as above.).
  • Meanwhile, place hot dogs on grill rack around foil packet; grill for 5 to 7 minutes or until heated through, turning occasionally.
  • Carefully open rellish packet and stir remaining 1 cut tomato halves and the grapes into hot relish mixture. Place hot dogs in toasted buns; serve tomato relish with the hot dogs.
