CHOCOLATE FUDGE SAUCE

Chocolate Fudge Sauce image

I use Golden Syrup for the Chocolate Fudge Sauce. However, if you can't find it, light corn syrup or light agave nectar will work well, too. Although Dark Chocolate with 70% cocoa content may seem a little too dark for any milk chocolate lover's liking, that is not the case-I find it works perfectly, especially since it is diluted a bit by the cream and the other ingredients. 70% cocoa content is ideal, but if you don't have that on hand, use whatever you have- I wouldn't go below 64% cocoa content, though.

Provided by Sophisticated Gourmet

Categories     Chocolate

Time 10m

Number Of Ingredients 7

3.5 oz / 100g dark chocolate with 70% cocoa content, finely chopped
2 Tablespoons / 15g unsweetened cocoa powder (natural or dutch-processed)
⅓ cup / 116g golden syrup (I use Lyle's) / light corn syrup / light agave nectar
⅓ cup / 75g heavy cream or double cream
⅓ cup / 30g confectioners' (Powdered) sugar
½ teaspoon pure vanilla extract
Pinch fine-grain sea salt

Steps:

  • Place the chopped dark chocolate and cocoa powder in a heatproof bowl over simmering water (do not let the bowl touch the water) and heat until the chocolate has melted.
  • With the pan off the heat, stir in the golden syrup, followed by the heavy cream, confectioner's sugar, vanilla, and pinch of salt.
  • Transfer to a glass jar or heatproof container with a lid, and serve over the ice cream of your choice. Can be stored in the refrigerator for a few days (that is, if you're not sharing!). Re-warm before serving.

HOT CHOCOLATE SAUCE FOR ICE CREAM (OLD RECIPE)

Hot Chocolate Sauce for Ice Cream (Old recipe) image

Just one of those little recipes I found in my mother's notebook. Enjoy!!

Provided by Marcia McCance

Categories     Chocolate Sauces

Number Of Ingredients 6

2 squares of baker's chocolate
1 c boiling water
1/2 c sugar
1 Tbsp corn starch
1 Tbsp cold water
1 tsp vanilla extract

Steps:

  • 1. Melt the chocolate in a sauce pan on very low heat Note: 6 Tablespoons of Cocoa + 2 tablespoons melted butter or coconut oil = 2 1-oz squares of baking chocolate -- just in case you need it
  • 2. Add the boiling water to the sugar and dissolve
  • 3. Add the water/sugar S-L-O-W-L-Y to the melted chocolate and bring to boil stirring constantly
  • 4. Mix the cornstarch with the Tbsp of cold water, then when the chocolate reaches the boiling point add the cornstarch S-L-O-W-L-Y to it then: boil for seven minutes (keeping a watchful eye and stirring as needed)
  • 5. add the vanilla and serve hot on ice cream
  • 6. I was wondering if I used milk (or evaporated milk) instead of water if it might add a nice flavor to the sauce and make it more like chocolate fudge sauce -- this would require a watchful eye because milk can burn -- just thinking

THE BEST HOT FUDGE SAUCE IN THE WORLD

The Best Hot Fudge Sauce in the World image

This rich, deeply fudgy old fashioned fudge sauce attains incredible complexity and depth two ways. First, the addition of a touch of alcohol brings out alcohol-soluble flavors. Starting with a lightly caramelized base affords more depth and that bit of chew and stretch you expect from an excellent fudge sauce. A full recipe yields over a quart, so you can either half the recipe or make the full recipe and share with friends. NOTE: All ounce measurements are by WEIGHT and not VOLUME.

Provided by onlinepastrychef

Categories     Dessert Sauces

Time 35m

Number Of Ingredients 11

4 oz unsalted butter, (1 stick)
8 oz granulated sugar, (1 slightly generous cup)
11.75 oz (by WEIGHT) light or dark corn syrup, (1 cup)
16 oz heavy cream, (1 pint or 2 cups)
3/4 teaspoon kosher salt
5.3 oz whole milk, (about 2/3 cup)
.67 oz cocoa powder, (1/4 cup)
1.3 oz water, (2 Tablespoons plus 1 teaspoon water)
1 oz light rum, (2 Tablespoons)
1 teaspoon vanilla extract or vanilla paste
8 oz excellent quality semi-sweet chocolate, chopped (I used Ghirardelli 60%)

Steps:

  • Place the butter, sugar, corn syrup, heavy cream, salt and milk in a large, heavy-bottomed saucepan. Heat over medium heat until it comes to a boil.
  • Meanwhile, whisk together the cocoa powder, water, rum and vanilla into a thin paste.
  • Place the cocoa paste in a large bowl.
  • Chop the chocolate into small pieces (or use excellent quality chocolate chips or paillettes) and add to the bowl.
  • When the dairy comes to a boil, regulate the heat so it maintains a slow boil but doesn't boil up in the pan.
  • Stir the dairy frequently and boil until it reaches a light caramel color, about 20-30 minutes (less time if you half the recipe). You don't want the color to be as dark as a Sugar Daddy, but it should be significantly darker than sweetened condensed milk. You can see what color it should be above in the post.
  • Once the dairy is a lovely shade of deep tan, pour it into the bowl with the chopped chocolate and cocoa paste. Allow it to sit for a minute or two and then whisk until smooth.
  • Strain it just to make sure it is completely smooth.
  • Store in jars in the fridge.
  • If you used fresh dairy, the hot fudge sauce will keep for a good 2-3 weeks in the refrigerator. If your dairy was close to the expiration date, use the sauce up within 5-7 days.
