A quick and easy way to get ready for your party! In addition to sandwiches this flavorsome spread makes a pretty appetizer on top of crackers. Cutting the sandwiches into quarters will yield 24 servings.

3 tablespoons mayonnaise
1/2 cup pimento stuffed olive, chopped
12 slices bread

Steps:

  • Let cream cheese soften to room temperature.
  • In a bowl mix cream cheese with mayonnaise.
  • Add chopped olives and mix well.
  • Spread mixture onto 6 bread slices and top with remaining 6 bread slices to make sandwiches. Cut crust edges off and slice each sandwich into quarters.

3 tablespoons fresh basil, chopped
3 tablespoons pine nuts
⅛ teaspoon salt
⅛ teaspoon freshly ground black pepper
12 slices firm white sandwich bread
6 tablespoons light cream cheese

Steps:

  • In a medium bowl, combine all ingredients except bread and cream cheese; mix well. Cover; chill at least 1 hour or up to 24 hours before assembling sandwiches. Cut crusts from bread forming 4-inch squares; reserve crusts for another use. Spread cream cheese over bread. Spread olive mixture over 6 slices bread; close sandwiches with remaining bread, pressing lightly. Cut diagonally in half or lengthwise into rectangles.

I also use it as a sandwich spread...it really spruces up a plain old cold-cut or deli sandwich.
