Balsamic Garlic Roasted Green Beans & Mushrooms image

Balsamic vinegar and whole cloves of garlic make these roasted green beans and mushrooms extra special.

1 pound fresh green beans, trimmed and halved
8 ounces mushrooms, cleaned and halved
8-10 whole garlic cloves, halved
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt and pepper, to taste

Steps:

  • Preheat oven to 450 degrees. Line a large rimmed baking sheet with foil and spray with non-stick cooking spray.
  • Spread green beans, mushrooms and garlic in an even layer on the prepared baking sheet.
  • In a small bowl, whisk together olive oil and balsamic vinegar. Drizzle over vegetables in pan and toss to coat evenly. Season with salt and pepper, to taste.
  • Bake for 20-25 minutes, or until beans are tender-crisp.

2 tablespoons olive oil
2 thinly sliced cloves garlic
1 1/4 pounds button mushrooms, trimmed and sliced
1 teaspoon ground coriander
Salt and pepper
1/4 cup dry white wine, such as Sauvignon Blanc
2 tablespoons water
1 to 2 tablespoons sherry vinegar
1/4 cup chopped fresh parsley
1 1/2 pounds blanched green beans

Steps:

  • In a large skillet, heat oil over medium. Add garlic and cook until fragrant, 1 minute. Add mushrooms and cook, undisturbed, 3 minutes. Increase heat to medium-high and saute until golden, about 6 minutes. Add coriander, season with salt and pepper, and cook 1 minute. Reduce heat to medium, carefully add wine, and cook until reduced, 1 to 2 minutes, scraping up any browned bits with a wooden spoon. Add water, season with vinegar, and toss with parsley. Spoon over green beans and serve warm or at room temperature.

2 cloves garlic, minced
1/4 pound small, fresh mushrooms, trimmed and sliced
1 tablespoon butter
1 medium red onion, cut in thin strips
1 pound fresh green beans, trimmed
Fresh ground pepper
1 teaspoon dill weed
2 tablespoons toasted almonds or pine nuts

Steps:

  • Saute garlic and mushrooms in butter until tender. Stir in onions; set aside. Steam or cook beans in small amount of water until tender-crisp; drain. Combine beans and mushroom mixture; add pepper and dill weed. Garnish with nuts. Serve immediately.

6 tablespoons canola oil
1 pound haricot verts, cleaned and blanched
Kosher salt and fresh cracked pepper
2 cups sliced button and oyster mushrooms
1 shallot, sliced
2 cloves garlic, sliced
1 teaspoon chopped fresh rosemary
1 teaspoon chili flakes
Splash sherry vinegar
1 tablespoon thinly sliced fresh mint

Steps:

  • In a large saute pan, heat 3 tablespoons of the oil over medium-high heat. Add the haricot verts and season with salt and pepper. When they begin to brown, about 5 minutes, remove from the pan and add the remaining 3 tablespoons oil with the mushrooms. Brown the mushrooms, about 8 minutes, and then add the shallots, garlic, rosemary and chili flakes and cook until softened, about 3 minutes. Season with salt and pepper.
  • Return the beans to the pan and add the sherry vinegar. Stir in the mint and cook until just fragrant. Season as needed.

  • In a microwave safe bowl, add green beans and 1 tablespoon water. Cover with plastic wrap and cook on high setting for 6 to 8 minutes or until crisp-tender.
  • While green beans are cooking; in a large frying pan, heat the butter, oil, sliced garlic, and chopped bacon gently over medium heat. NOTE: Do not let garlic burn - a light golden brown is as dark as garlic should get.

1/2 lb fresh green beans
8 ounces fresh mushrooms, white or 8 ounces brown button mushrooms
1 tablespoon butter
1/4 teaspoon granulated garlic
1/4 teaspoon ground black pepper
1/4 teaspoon salt

Steps:

  • Bring 2 quarts of water to a rolling boil.
  • Wash the green beans and trim the ends and any blemishes.
  • Cook the beans in the boiling water for 2 minutes, drain, and rinse to stop the cooking process, set aside. You may do this up to an hour before hand.
  • Brush off the mushrooms, trim any dry ends of the mushroom stems.
  • Melt the butter in a large sauté pan over medium heat.
  • Add the mushrooms, sprinkle with garlic, pepper, and salt.
  • Cook for about 10 minutes, or until the mushrooms are golden brown, stirring frequently.
