4 ounces cream cheese, softened
1 cup shredded Colby-Monterey Jack cheese
1 cup shredded part-skim mozzarella cheese
1 can chopped green chilies, drained
2 tablespoons mayonnaise
1/4 teaspoon garlic powder
Dash seasoned salt
12 slices white bread
6 slices tomato
1/4 cup butter, melted

Steps:

  • In a small bowl, mix the first 7 ingredients until blended. Spread over half the bread slices. Top with tomato and remaining bread., Brush outsides of sandwiches with melted butter. In a large cast-iron or other heavy skillet, toast sandwiches in batches over medium-low heat until golden brown and heated through, 3-4 minutes on each side.

1 can (4 ounces) chopped green chiles, drained
6 slices white bread
3 slices Monterey Jack cheese
2 large eggs
1 cup 2% milk
3 tablespoons butter
Salsa, optional

Steps:

  • Mash green chiles with a fork; spread over 3 slices of bread. Top with cheese and remaining bread. In a shallow bowl, whisk eggs and milk until blended., In a large skillet, heat 1 tablespoon butter over medium heat. Dip both sides of sandwich in egg mixture. Place in skillet; toast 2-3 minutes on each side or until golden brown and cheese is melted. Repeat with remaining butter and sandwiches. If desired, serve with salsa.

1 Poblano pepper
1 large egg
2 tsp vegetable or canola oil
2 slices white or sourdough bread
3 oz Wisconsin Monterey Jack cheese ((3/4 cup))
1 Tbsp butter (, softened)
1 Roma tomato (, seeded and diced)
2 Tbsp finely chopped yellow onion
1/2 clove garlic (, finely minced)
1 Tbsp chopped cilantro
1 squeeze fresh lime juice
Salt and freshly ground black pepper to taste

Steps:

  • Set oven rack two levels below broiler element and heat oven to broil. Line a baking dish with foil and set Poblano pepper on foil. Transfer to oven and broil pepper, rotating frequently, until skin has blistered and charred, about 8 - 10 minutes.
  • Transfer pepper to an airtight bag, seal bag and allow to rest 5 minutes, or until cool enough to handle. Remove from bag and peel pepper, cut off top, make one slice down length of pepper. Remove and discard seeds and ribs. Pat inside of pepper dry with a paper towel, set aside.
  • Heat 2 tsp oil in an 8-inch non-stick skillet slightly over medium heat. Whisk egg vigorously in a small bowl until frothy, 1 minute. Once oil is hot, carefully pour egg into pan.
  • Cook egg until golden, about 10 seconds, then using a spatula, fold egg into a half (as if you were making an omelet). Continue to cook just until nearly cooked through, about 10 seconds longer per side then transfer to paper towels to drain, set aside.
  • To assemble sandwich, brush 1/2 tbsp butter on outsides of bread. Layer egg on bread, followed by roasted Poblano pepper, grated Wisconsin Monterey Jack cheese and sprinkle top with half of the pico de gallo (reserve remaining pico de gallo for another use).
  • Using paper towels, wipe oil from skillet. Heat skillet over medium-low heat. Carefully transfer assembled sandwich to skillet.
  • Cook until bottom is golden about 4 - 6 minutes, then rotate sandwich to opposite side, cover skillet with lid and cook opposite side until golden brown and cheese has melted through, about 4 - 6 minutes. Serve immediately.
  • FOR THE PICO DE GALLO: Combine diced tomato, onion, garlic, cilantro and lime juice in a small mixing bowl. Season with salt and pepper to taste.

This deconstructed version of a chile relleno turned sandwich packs some heat and an ooey-gooey filling. We like the flavor of sourdough, but any kind of bread will work well. 4 poblano peppers (**see Note**)
1 (14 ounce) can pinto beans, preferably low-sodium
3 tablespoons prepared salsa
1/8 teaspoon salt
1/2 cup monterey jack cheese or 1/2 cup cheddar cheese, shredded
2 tablespoons low-fat plain yogurt
3 scallions, sliced
2 tablespoons chopped fresh cilantro
8 slices sourdough bread

Steps:

  • Place peppers in a microwave-safe bowl, cover with plastic wrap and microwave on High until soft, 3 to 4 minutes. Let stand, covered, until cool enough to handle.
  • Meanwhile, combine beans, salsa and salt in a medium bowl. Mash the beans with a fork until they begin to form a paste (some can remain whole). Combine cheese, yogurt, scallions and cilantro in a small bowl.
  • When the peppers are cool enough to handle, slice each one in half lengthwise and remove the stem and seeds.
  • Heat a panini maker to high. ***(No panini maker? See Stovetop Variation, below.)***
  • Spread 1/3 cup of the bean mixture on each of 4 slices of bread. Top with a heaping tablespoon of the cheese mixture. Place 2 pepper halves over the cheese. Cover with the remaining slices of bread.
  • Grill the sandwiches in the panini maker until golden brown and through, about 4 minutes. Cut in half and serve immediately.
  • (Tips & Notes).
  • **Note**: Dark green poblano peppers, smaller than a bell pepper but larger than a jalapeño, can be fiery or relatively mild; there's no way to tell until you taste them. Find them near other fresh peppers at most large supermarkets.
  • Stovetop Variation: Place four 15-ounce cans and a medium skillet (not nonstick) by the stove. Heat 1 teaspoon canola oil in a large nonstick skillet over medium heat. Place 2 sandwiches in the pan. Place the medium skillet on top of the sandwiches, then weight it down with the cans. Cook the sandwiches until golden on one side, about 2 minutes. Reduce the heat to medium-low, flip the sandwiches, replace the top skillet and cans, and cook until the second side is golden, 1 to 3 minutes more. Repeat with another 1 teaspoon oil and the remaining 2 sandwiches.

1 loaf white bread or 1 loaf whole wheat bread, unsliced
unsalted butter, for spreading softened
1/2 cup mango chutney (store-bought or home made)
1 1/2 lbs old cheddar cheese, premium-quality

Steps:

  • Place empty baking sheet in oven and preheat to 450°F.
  • Slice bread into 3/4" slices.
  • Butter both sides of bread.
  • Spread half of slices with Mango Chutney.
  • Slice cheese 3/8" thick and place on other slices of bread.
  • Place chutney spread slices over slices with cheese.
  • Remove baking sheet from oven.
  • Place sandwiches on hot baking sheet.
  • Return to hot oven.
  • Bake for 8 minutes, until golden on bottom.
  • Flip over sandwiches and bake another 8 minutes.
  • Let stand 3 to 4 minutes so cheese cools off.
  • Cut into halves or quarters.

1/2 cup mayonnaise
2 cups cheddar cheese, shredded

12 slices Texas toast thick bread
1/2 cup butter, softened, more if needed

Steps:

  • Blend all ingredients except bread and butter in a medium bowl.
  • Butter one side of each slice of bread.
  • Put sandwiches together using about 1/2 cup of filling each.
  • Place buttered side of bread on the outside of sandwich.
  • Toast on griddle or in skillet until a deep golden brown. Make sure you cook this slowly over low to med-low heat, so that the inside has a chance to melt before the outside gets too done. Kick up the heat when it gets going.
