This best tasting potato soup is perfect for when the weather is bad or good. Simple to prepare, but tastes like you've slaved away. Excellent by itself or with crackers and other favorite additions. So when you're snowed in, make up a batch and call the family around to enjoy! Thanks Mary Ella!

Ingredients

1 pound bacon
1 large onion, diced
8 potatoes, diced
1 tablespoon salt
1 tablespoon ground black pepper
3 tablespoons all-purpose flour
3 cups water
1 gallon whole milk

Steps:

In a large pot over medium heat, cook the bacon until evenly brown, but not crisp. Mix in the onion, and coat with the bacon drippings. Stir in potatoes, and season with salt and pepper. Mix in the flour and water, stirring until smooth. Cover pot, and cook 10 minutes, until potatoes are tender.
Reduce heat to low. Gradually stir in the milk. Simmer soup 1 hour, stirring frequently to avoid scorching.

Ingredients

10 -15 small red potatoes, washed and cubed with skin left on
2 cups snow peas, washed
1/3 cup vegetable oil
1 tablespoon coriander powder
2 teaspoons lemon pepper
1 tablespoon cumin powder
1/2 tablespoon turmeric powder
1 tablespoon garam masala
1 teaspoon salt
1/2 cup chopped fresh cilantro

Steps:

Boil potatoes until just starting to get tender- about 10 minutes.
Drain and set aside.
Heat oil in pot for a couple minutes.
Add potatoes and peas and stir-fry about 5 minutes.
Add all other ingredients except cilantro and stir well.
Lower heat to low, cover, and cook until vegetables are done/tender.
Sprinkle with cilantro just before serving.
