8 slices bacon
½ cup butter
¼ cup brown sugar
¼ cup red wine vinegar
1 tablespoon soy sauce
2 cloves garlic, chopped
salt to taste
4 avocados - halved, pitted, and peeled

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
  • Mix butter, brown sugar, vinegar, soy sauce, and garlic in a saucepan; cook and stir mixture over medium heat until sugar is dissolved, about 10 minutes.
  • Sprinkle avocado halves with salt; fill each half with crumbled bacon. Drizzle sauce over filled avocados.

1 (8 ounce) package bow-tie pasta
6 slices bacon
⅔ cup chopped basil
3 tablespoons lemon juice
2 tablespoons olive oil
3 cloves garlic, minced
¼ teaspoon ground black pepper
⅛ teaspoon salt
2 avocados, chopped
½ cup grated Romano cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta; cook, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels; crumble into small pieces.
  • Mix basil, lemon juice, olive oil, garlic, pepper, and salt together in a small bowl.
  • Combine bacon pieces and avocado in a large bowl. Stir in basil mixture. Add pasta; toss to combine. Sprinkle Romano cheese on top.

One 8-ounce avocado, halved, pitted and peeled
One 14-ounce can sweetened condensed milk
2 tablespoons lemon juice (from 1 lemon)
Pinch fine salt
2 cups cold heavy cream

Steps:

  • Chill the loaf pan in the refrigerator for at least 30 minutes.
  • Puree the avocado, milk, lemon juice and salt in a blender until smooth, about 1 minute; transfer to a large bowl.
  • Whip the cream in another large bowl with an electric mixer on medium-high speed until firm peaks form, about 2 minutes. With a rubber spatula, fold about 1 cup of the whipped cream into the avocado puree until combined. Fold the lightened mixture back into the whipped cream until well blended. Pour into the chilled loaf pan, and place in the freezer until firm, 4 hours or overnight.

  • Peel and pit the avocado. Place the avocado into the bowl of a stand mixer fitted with the whisk attachment along with the lemon juice and beat until lightened in color, approximately 2 to 3 minutes. Add the powdered sugar a little at a time and beat until smooth. Add the lemon extract and mix to combine. If not using right away, store in the refrigerator.

½ pound bacon
1 medium onion, chopped
2 stalks celery, chopped
1 quart chicken stock
2 avocados - peeled, pitted, and chopped
½ cup white wine
1 lime, juiced
1 cup heavy cream
salt and pepper to taste

Steps:

  • In a skillet over medium heat, cook the bacon until evenly brown. Drain, reserving 1 tablespoon grease in the skillet, chop, and set aside. Place onion and celery in the skillet, and cook until tender.
  • Transfer the onion and celery to a blender or food processor. Pour in 1/2 the chicken stock, add avocados, and blend until smooth.
  • Transfer blender mixture to a large pot over medium heat. Whisk in remaining stock, wine, lime juice, and heavy cream. Season with salt and pepper. Cook, stirring often, until heated through, but do not boil. Garnish with chopped bacon to serve.

4 tablespoons cornflour
1 1/2 liters strong home-made chicken stock
salt
fresh ground black pepper
2 large ripe avocados, skinned, stoned and pureed
65 ml fruity white wine
125 -250 ml cream
2 tablespoons crisped bacon, crumbled
3 sprigs fresh coriander

Steps:

  • Melt butter in a saucepan.
  • When hot and bubbly, stir in cornflour and continue to stir until mixture turns golden.
  • Gradually add chicken stock, whisking constantly to smooth away any little lumps.
  • Sprinkle with salt and pepper.
  • Remove from stove.
  • Add avocado puree, white wine and cream.
  • Reheat carefully, but do not allow to boil.
  • Transfer to a heated soup tureen and sprinkle with crisped bacon crumble.
  • To serve, ladle into heated soup plates and garnish with fresh coriander.
