SPICY PORK RIBS

Spicy pork ribs image

Make these sticky pork ribs with ginger, chilli, garlic and XO, a wonderfully spicy seafood sauce. Serve with lime wedges - and plenty of kitchen paper

Provided by Sophie Godwin - Cookery writer

Categories     Dinner, Lunch, Main course

Time 1h30m

Number Of Ingredients 13

2 tbsp vegetable oil
700g pork spare ribs
2 garlic cloves , sliced
thumb-sized piece ginger , sliced
4 spring onions , chopped
2 star anise
a few Sichuan peppercorns
3 tbsp XO sauce
3 tbsp malt vinegar
2 tbsp honey
500ml chicken stock
2 limes , 1 zested and 1 cut into wedges to serve
good pinch of chilli flakes

Steps:

  • Heat oven to 180C/160C fan/gas 4. Heat the oil over a high heat in a large flameproof roasting tin. Season the pork, then fry until browned in places - don't worry about the ribs getting evenly browned, you are just looking for a little colour as it will add lots of flavour to the dish.
  • Add all the remaining ingredients, except the lime zest and chilli, to the tin, stir, then arrange the ribs so they are in a single layer. Once the liquid has started to boil, transfer to the oven and roast for 1 hr, turning the ribs halfway.
  • Take the tin out of the oven and carefully put back on the hob over a medium heat. The liquid will have reduced considerably. Keep turning the ribs over to coat in the sauce - they are ready once they are all covered and glossy, around 10 mins. Scatter over the lime zest and chilli flakes and serve with lime wedges and plenty of kitchen paper.

HOT AND SPICY BBQ RUB FOR RIBS OR CHICKEN

Hot and Spicy BBQ Rub for Ribs or Chicken image

I can never go to Memphis, Tennessee, without having ribs! This city is known for their dry rub ribs. Here is a similar rub for you to try.

Provided by George Geary

Categories     Dry Mixes

Number Of Ingredients 15

1 cup (250 mL) lightly packed brown sugar
2/3 cup (150 mL) chili powder
¼ cup (50 mL) paprika
2 tbsp (25 mL) garlic salt
2 tbsp (25 mL) coarse sea salt
1 tbsp (15 mL) whole black peppercorns
2 tsp (10 mL) mustard seeds
2 tsp (10 mL) granulated sugar
1 tsp (5 mL) ground ginger
1 tsp (5 mL) whole cloves
¼ tsp (1 mL) ground turmeric
¼ tsp (1 mL) onion powder
¼ tsp (1 mL) garlic powder
¼ tsp (1 mL) cornstarch
Whole racks of spareribs, as needed

Steps:

  • To Make the Rub:
  • In work bowl fitted with metal blade, process brown sugar, chili powder, paprika, garlic salt, sea salt, peppercorns, mustard seeds, granulated sugar, ginger, cloves, turmeric, onion powder, garlic powder and cornstarch until finely ground, about 3 minutes.
  • To season and cook ribs:
  • I like to parboil my pork ribs first in a boiling pot of water for 5 minutes. Then place the ribs in a single layer on a baking sheet and cover with an even coating of the Hot and Spicy BBQ Rub, about ¼ cup (50 mL) per full rack. Cover and let stand in the refrigerator for 45 minutes. Bake ribs in a preheated 300°F (150°C) oven until fork tender, 75 to 90 minutes.
  • To season and cook chicken: Rub about half of the mixture on a 2- to 3-lb (1 to 1.5 kg) whole chicken. Let stand at room temperature for 20 minutes. Bake in a preheated 350°F (180°C) oven or barbecue chicken until an instant-read thermometer inserted in the thigh reaches 180°F (82°C), about 15 minutes per pound (33 minutes per kilogram).
  • Variation:
  • Add 2 cups (500 mL) Homemade Ketchup or store-bought to make this rub a wet sauce.

EASY FALL OFF THE BONE OVEN-BAKED RIBS

Easy Fall Off the Bone Oven-Baked Ribs image

Low and slow cooking make these oven-baked ribs fall off the bone tender. Once baked, we like to add our sweet and spicy barbecue sauce to the ribs, but use whatever you love. For the most tender ribs, we remove the thin membrane covering the back of the rack. Depending on where you have purchased ribs, this may already be done for you. If not, instructions are in the notes section below. FAQ: We call for baby back ribs in the recipe, but other types of ribs (spareribs, country-style, St. Louis-style) will work with this recipe. Cook time should be similar, we recommend that you check on the ribs while they cook to see how they are progressing. FAQ: Doubling or tripling the recipe below should not change the recipe method or bake time. You might need to use two pans for baking.

Provided by Adam and Joanne Gallagher

Categories     Dinner

Time 3h15m

Yield Makes 4 Servings

Number Of Ingredients 10

2 to 2 1/2 pounds baby back pork ribs
Salt and black pepper
1 tablespoon olive oil
1/4 cup finely diced onion
1/2 teaspoon ground cumin
1/2 cup ketchup, try our homemade ketchup recipe
1 tablespoon hot chili sauce (suggestion Sriracha)
2 tablespoons light brown sugar
1 tablespoon apple cider vinegar
Salt and ground pepper, to taste

Steps:

  • Heat oven to 275° Fahrenheit (135C).
  • If the ribs still have the thin membrane covering the back of the rack, remove it. See how in the notes section below.
  • Season both sides of the ribs with a generous amount of salt and pepper. If you are using a spice rub, add season the ribs with it now. Place the ribs, meat-side up, into a large roasting pan or rimmed baking sheet. (It may be necessary to cut the ribs in half for them to fit into the pan).
  • Cover the pan or baking sheet tightly with aluminum foil, and then bake until the meat falls easily from the bones, 2 ½ to 3 ½ hours. We like to check the ribs after 2 hours to see how they are progressing. The ribs are done when the meat is cooked through and tender.
  • While the ribs bake, make the barbecue sauce. Heat the olive oil in a saucepan over medium heat.
  • Add the onions and cook until soft and translucent, 5 to 8 minutes. Stir in the cumin and cook for an additional 30 seconds.
  • Add the ketchup, hot chili sauce, brown sugar, and apple cider vinegar. Stir to combine, season with salt then cook for 2 minutes. Set aside in preparation for the ribs to finish roasting.
  • Remove the ribs from the oven, discard the aluminum foil and generously brush both sides with barbecue sauce.
  • Optional: Move an oven rack near the top of the oven. Turn broiler to high and broil the ribs for 3-4 minutes, just until the barbecue sauce begins to caramelize. (Keep a close eye on the ribs while they broil so the sauce does not burn.)
  • Store baked ribs, in an airtight container, in the refrigerator for up to 3 days. Freeze, wrapped in foil or freezer paper and in an airtight container, for up to 3 months. Thaw in the refrigerator, and then reheat.
  • To reheat the ribs, wrap in foil or parchment paper and place into a 300°F oven until warmed through, about 30 minutes. If you have some leftover, slather some extra sauce that's been warmed over the ribs before serving.

  • In a small bowl, combine the brown sugar, salt, mustard, fennel, black pepper, cayenne and paprika. On 2 large rimmed baking sheets, sprinkle the spice mix all over the ribs, pressing and patting it. Cover with foil and refrigerate overnight.
  • Preheat the oven to 250°. Pour off any liquid on the baking sheets, cover the ribs with foil and roast for about 3 hours, until the meat is tender but not falling off the bone. Pour off any liquid on the baking sheets.
  • Meanwhile, in a saucepan, melt the butter. Add the onion, garlic and thyme and cook over moderate heat until the onion is softened, about 5 minutes. Add the ketchup, vinegar, beef broth, hot sauce, Worcestershire sauce and molasses and bring to a boil. Simmer over low heat, stirring occasionally, until thickened, about 30 minutes.
  • Preheat the broiler and position a rack 10 inches from the heat. Brush the ribs liberally with the barbecue sauce and broil for about 10 minutes, turning and brushing occasionally with the sauce, until well-browned and crispy in spots. Transfer the ribs to a work surface and let rest for 5 minutes. Cut in between the bones and mound the ribs on a platter. Pass any extra barbecue sauce on the side.
