We thought we had explored every way to enjoy the buttery-rich yumminess of avocados. But then we swooned over a photo of the breaded avocado fries in chef Hans Röckenwagner's latest cookbook, Das Cookbook. Röckenwagner, known for applying German cooking techniques to Californian cuisine, features these delightful snacks on the menus at two of his Los Angeles-based cafés. Inspired by the photo, we created our own lighter version, and the results were even more delicious than we'd imagined: When you coat creamy avocado wedges with a crisp breadcrumb crust, that contrast of textures makes the avocado seem doubly silky-rich. Be sure to follow Röckenwagner's advice for success and start with firm, ripe avocados; cooking won't add flavor, so the avocado has to be perfect from the start.

Yield Serves 6 (serving size: 4 avocado wedges)

2 tablespoons all-purpose flour
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1/4 cup plain breadcrumbs
2 large egg whites
2 firm, ripe avocados
cooking spray
1 lemon, cut into 6 wedges

Steps:

  • Preheat broiler. Place a baking sheet in oven while broiler preheats.
  • Combine flour, salt, and pepper in a shallow dish. Place breadcrumbs in a shallow dish. Place egg whites in a small bowl, and whisk until foamy.
  • Halve avocados, remove pits, and cut each half into 6 wedges. Pull off peels.
  • Dredge avocado wedges in flour, dip in egg white, and then dredge in breadcrumbs. Remove baking sheet from oven; coat with cooking spray. Place avocado slices on baking sheet; coat avocados with cooking spray.
  • Broil 5 minutes or until brown on top. Turn and broil 2 more minutes. Remove and serve with lemon wedges.

2 dl 1 cup panko breading

Steps:

  • Peel the Avocado, remove the seeds and cut it into slices/wedges
  • In three deep plates or bowl, add the flour, beaten eggs and panko breading.
  • Now it is breading time. First cover the Avocado slices in flour, then in the eggs and finally in the panko breading.
  • Place the breaded Avocado slices on an oven grid and bake them at 220 C (425 F) for about 15-20 minutes or until they are nice and golden.

2 tablespoons ground flax
1 teaspoon mild chili powder
1 egg
2 avocados
Vegetable oil cooking spray

Hot sauce

Steps:

  • Heat oven to 400°. In a bowl, combine 3/4 cup panko breadcrumbs, 2 tablespoons ground flax and 1 teaspoon mild chili powder. In another bowl, whisk 1 egg. Cut 2 peeled avocados into 16 wedges, dip wedges in egg, press into breadcrumb mixture and transfer to a baking sheet. Coat with vegetable oil cooking spray. Bake until outside is crispy, 10 to 12 minutes. Season with salt and drizzle with hot sauce.

I came across this recipe, and intrigued, I played with ingredients, made a few changes to accommodate a more adventurous crowd for hot, and spicy eating. They were a hit! I invite you to make them yours with whatever seasonings, and dips you like! Healthy, quick, and easy, with a wow! What more could one ask of a recipe for 1 or 16? Easily doubled or tripled, make as many as you want, maybe a couple of different versions or a few different dips. Mine did not last even long enough for pictures, so thanks to Pinterest.

3/4 cup(s) panko bread crumbs
1/4 cup(s) parmesan cheese, freshly grated to powder consistency, if desired, leave out for vegan
1/4 teaspoon(s) cayenne pepper, if desired, to taste
1/2 teaspoon(s) garlic powder
1 teaspoon(s) mild chili powder
2 tablespoon(s) flax seed, ground
1/2 teaspoon(s) onion salt
1 large egg, beaten well in wide, flat, small bowl
2 medium ripe avocado, per every 4 servings, (can use 3 small)

Steps:

  • Preheat oven to 400℉. Prepare baking sheet with parchment paper , or oil pan, or spray with a vegetable oil cooking spray.
  • In a small, shallow bowl, beat egg well, set aside. In a medium shallow bowl, mix together the Panko crumbs, Parmesan cheese if using, the cayenne, garlic powder, chili powder, ground flax seed, onion salt. Peel, core, and slice the avocados into 16 slices. Place them one at a time into well beaten egg, and then into bread crumbs, tossing and pressing crumbs into avocado (don't toss all in a bag, so as not to break up the avocado).
  • Place on the lined baking sheet. Brush with oil, or spray the slices with the vegetable oil cooking spray. ( I just use oil for the recipe, lightly coating slices with a silicone brush).
  • Bake at 400℉, for 10 to 15 minutes, until coating is crispy. (will be a bit golden). Remove from oven and serve. Serve with a favorite creamy dipping sauce, or two, to just hot sauce to taste. **Can be made gluten free by using GF Panko crumbs. May salt lightly, but with onion salt, and parmesan in coating, they should be salty enough. Two avocados serve four, but double or triple the recipe for a crowd pleasing appetizer, or snack!

  • Slice the rutabaga into 1/4 inch thick strips and place into a large bowl.
  • Drizzle with the oil and toss to coat well. Sprinkle generously with salt.
  • Place onto the cooling rack, making sure to leave room between each fry. You may need to use two baking sheets.
  • Bake for 12 minutes, then flip each fry and bake another 10-15 mins until the fries are golden brown.
