A lovely, spicy new way with salmon, with the horseradish perfectly complementing the fish, and a good source of omega-3 to boot.

2 slices bread , crusts removed
2 tbsp horseradish sauce
2 tsp chopped thyme or 1 tsp dried
4 thin skinless salmon steaks, about 140g/5oz each
1 small Savoy cabbage , shredded
2 rounded tbsp 0% Greek yogurt

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Whizz the bread into crumbs in a food processor. Add the horseradish and thyme, then season and mix well.
  • Put the salmon in one layer in a lightly oiled baking dish. Press the crumbs on to the flesh, then bake for 10-12 mins.
  • Meanwhile, put the cabbage in a large pan with a little salt and pour in boiling water to come halfway up. Cover and cook for 8-10 mins until tender. Drain well, then return to the pan with the yogurt and plenty of black pepper. Reheat gently. Pile the cabbage onto plates and serve with the salmon.

  • Spray broiler pan with Pam and then place salmon skin side down (no need to turn this salmon) on the broiler rack. Sprinkle with salt and pepper and then cover the salmon with the horseradish and then the panko. Spray with Pam.

  • Preheat broiler and broil fish for a few minutes or until the breadcrumbs brown.

  • Check that all bones have been removed from filets. In a small bowl, cream together butter and horseradish with a spoon. Stir in breadcrumbs and combine well. 1 medium russet potato (about 9 ounces), peeled and cut into sixths
Kosher salt, as needed, plus 2 teaspoons
6 tablespoons unsalted butter, at room temperature
Four 6-ounce center-cut skinless salmon fillets
Freshly ground black pepper
3 tablespoons half-and-half
2 to 3 tablespoons drained prepared horseradish
Four 2-inch-long chive segments, for garnish

Steps:

  • Place a rack about 4 inches from the broiler element and preheat.
  • Put the potato in a medium saucepan, cover with water by 2 inches, and season generously with salt. Bring to a boil over high heat, lower the heat, and simmer until very tender, about 10 minutes. Drain and cool slightly.
  • Meanwhile, preheat a large skillet over medium-high heat. Add 2 tablespoons of the butter and heat. Season the salmon all over with salt and pepper. When the butter's foaming subsides, place the salmon, in the skillet and cook, turning once, until well-browned, about 1 1/2 minutes per side. Transfer to a baking sheet.
  • Put the cooked potatoes in a small bowl with the 2 teaspoons salt, 2 tablespoons butter, half-and-half, and horseradish and, using a fork, mash until fluffy. Season with pepper, to taste.
  • Melt the remaining 2 tablespoons butter in a small saucepan. Using your hands, press about 1/4 of the potato mixture onto the top of each salmon fillet, to form a thin crust. Lightly brush the potato with the melted butter.
  • Place the salmon under the broiler and cook until still slightly pinkish inside and the crusts are golden brown, about 10 minutes. Transfer to serving platter and garnish with the chive segments. Serve immediately.

1 fresh horseradish, peeled and grated
2 cups dried plain bread crumbs
1 (3 pound) salmon fillet

4 cucumbers, peeled, seeded and sliced
2 small bunches fresh dill, trimmed and snipped

Steps:

  • To make the crust. In a food processor, combine the butter and horseradish. Process until mixture comes together. Add the bread crumbs in a stream and process until combined well. Transfer to a sheet of plastic, cover with another sheet of plastic and smooth into a thin layer and . Chill.;
  • Preheat the oven to 450 degrees F.
  • Cut the salmon fillet into 4 portions and season with salt and pepper. In a saute pan, over moderately high heat cook the butter and oil until hot and add the salmon. Sear both sides. Divide crust among salmon fillets and transfer to oven. Bake for 5 minutes.
  • Arrange cucumbers on a serving plate, top with the salmon, surround with sauce and sprinkle with chives.
  • To make the cucumbers: In a skillet set over moderate heat melt the butter, add the shallots and cook, stirring, until softened. Add the cucumbers and cook, stirring occasionally, for 3 to 4 minutes, or until just tender. Add the dill and chives.;
  • To make the sauce: In a skillet, melt the butter and shallots and cook, stirring occasionally, until softened. Add the vermouth and reduce by 1/2. Add the chicken stock and reduce until flavorful. Stir in the dill and chives.;

1 cup sugar

  • Preheat oven to 450°F. Oil large rimmed baking sheet. Using paper towels, pat salmon fillets dry. In large nonstick pan over moderately high heat, heat 2 tablespoons olive oil until hot but not smoking. Add 3 to 4 fillets, skin side down, and sear until undersides are golden brown, about 5 minutes. Transfer, skin sides up, to baking sheet. Sear remaining salmon in 2 batches, wiping pan clean and adding 2 tablespoons oil between each batch. Transfer salmon to oven and roast just until cooked through, about 5 minutes.   • Preheat oven to 425°F. Place beets, ginger and garlic in small glass baking dish. Cover with foil and bake until beets are tender, about 1 hour. Cool. Peel beets, ginger and garlic; place in blender.

  • Preheat oven to 425°F. Sprinkle salmon with salt and pepper. Heat remaining 1 tablespoon oil in heavy large skillet over medium-high heat. Add 3 salmon fillets to skillet; cook just until golden, about 2 minutes per side. Arrange salmon, skin side down, on large baking sheet. Repeat with remaining salmon. Spread horseradish mixture atop salmon. Bake until salmon is cooked through, about 12 minutes.
  • Bring beet sauce to simmer in pan, stirring. Remove from heat. Mix in sour cream. Season with salt and pepper. Place salmon on plates. Spoon sauce around salmon.

1/4 cup Chardonnay wine

1/2 cup Chardonnay wine
1/2 cup heavy cream
3 tablespoons lemon juice
1 1/2 cups butter, 3 sticks, chilled, cut into small pieces

1 tablespoon fresh chives, diagonally sliced

Steps:

  • Lightly butter shallow baking pan or broiler pan.

1/2 cup apple cider
2 tsp minced shallots

  • For ketchup: In a blender, combine cranberries, cider, shallots, salt and sugar. Puree until smooth. Stir in dill.
  • For salmon: In a shallow bowl, mix flour and salt well. In a separate bowl, combine egg and vinegar. Beat until combined. Spread horseradish in yet another shallow bowl. Dip each salmon fillet in flour mixture, then egg mixture, then horseradish. Heat oil in a sauté pan and sauté salmon over medium heat until cooked through and golden brown, about 3 to 5 minutes on each side. Top each fillet with ketchup.

4 small raw beetroot , thickly sliced
6 carrots , sliced lengthways
2 tbsp olive oil
4 x 125g/4½oz pieces salmon with skin
2 tbsp grainy mustard
2 tbsp hot horseradish
150ml crème fraîche
1 tbsp cider vinegar
1 tbsp chopped dill

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss all the vegetables with the oil and season well. Spread in a single layer on 2 baking trays (or 1 very large tray) and roast for 30 mins.
  • Season the salmon and spread over the mustard. In the final 10 mins of cooking the veg, add the salmon to the trays.
  • In a small bowl, mix together the horseradish, crème fraîche, vinegar, dill and some seasoning. Serve the salmon with the sauce and veg.
