STIR-FRIED PRAWNS - HONG KONG STYLE
From the *Carnival Creations* cookbook by Cyrus Marfatia (Exec Chef of Carnival Cruise Lines) comes this recipe described in the intro as a "Stir-fry favorite that requires just a bit of chopping plus quick wok cooking to provide a complete meal". (Time was estimated & does not include the 20 min to marinate the prawns. The wok cooking time is very fast & I allowed 20 min for ingredient prep) *Enjoy* !

Steps:
- Mix 1/2 tsp garlic, 1/4 tsp gingerroot & 2 tbsp soy sauce in a med bowl. Add shrimp, toss to coat & marinate 20 minute.
- Heat oil in wok (or lrg non-stick skillet) over high-heat till hot. Stir-fry prawns till they turn pink, remove from wok & set aside.
- Stir in red bell pepper, mushrooms, leek, green onion + water chestnuts & stir-fry 2-3 min or till crisp-tender.
- Add cooked shrimp, remaining soy sauce & oyster sauce.
- Mix cornstarch w/water + remaining garlic & gingerroot. Stir into prawn mixture & cook till thickened.
- Add snow peas & stir-fry till crisp-tender (about 1 min). Serve immediately w/steamed rice or your favorite fried-rice.

- In a wok or large pan, turn on burner to medium/high heat and slowly heat to a high heat. Once the pan is hot, add 1 tablespoon of oil to wok or pan.
- Add aromatics such as onion, ginger and garlic and fry just until the aroma hits your nose.About 1 minute. Do not burn garlic or otherwise it will have a bitter taste.
- Place prepared shrimp(or other proteins as desired) into the pan. Stir fry shrimp until no longer translucent.If frying meats, cook until just golden brown moving your wok fast. Remove shrimp or other protein products from the pan and set aside.
- If you are cleaning out the refrigerator, add any raw uncooked firm vegetables to the pan first. Stir fry for 1-2 minutes until vegetables are aldente. Keep your vegetables moving in the pan. However, we chose to use thawed and dried frozen mixed vegetables and quick cooking chopped snow peas. You do not need to stir fry these first as they are quick cooking. We will be adding these later in the recipe to keep them crisp.

- Bring 2 quarts of water to a boil, and cook the noodles for 1 minute. Drain, rinse in cold water, and spread the noodles out to drain further.
- I recommend that you use uncooked, cleaned frozen shrimp. For this Shrimp Chow Mein recipe, I used uncooked shrimp, peeled off the shells, and left the tails on. The tails add nice flavor to the dish, but you can remove them if you prefer. I also like to butterfly the shrimp: use a sharp knife and carefully cut about two thirds of the way into the backs of each shrimp to do this. Next, toss the shrimp in 2 teaspoons of oil, 1/8 teaspoon salt, and 1 teaspoon of cornstarch. Set aside.
- Rinse the mung bean sprouts in cold water. Keep them in cold water until you are ready to cook, and put them into a colander to drain just before you heat up the wok.
- In a small bowl, mix the hot water and sugar until dissolved, and add the soy sauces, sesame oil, oyster sauce, 2 teaspoons Shaoxing wine, and white pepper. Set aside.
