My husband's family loves traditional Chex Party Mix which is a favorite at our Thanksmas celebration every year. My husband was craving something sweeter and asked for Maple Chex mix instead. I tried the only recipe I could find online but wasn't completely pleased with the results since the recipe really didn't coat the chex very well. I made a few changes to increase the coating. Very rich, very yummy. Definitely not for those on a diet.

2 cups butter
2 cups brown sugar
1 (2 ounce) bottle maple flavoring
2 cups mixed nuts
2 cups pretzels
14 cups Corn Chex
Rice Chex, and
Crispix cereal
2 cups oyster crackers

Steps:

  • Heat oven to 200.
  • Melt butter in large roasting pan. Stir in brown sugar & maple extract. Stir in nuts until well coated, stir in pretzels until coated. Gradually stir in cereal, add oyster crackers, stirring until evenly coated.
  • Bake 40-45 minutes, stirring every 15 minutes. Cool. Break apart if needed. Store in airtight container.

2 cups each Rice Chex, Corn Chex and Wheat Chex
2 cups miniature pretzels
2 cups pecan halves
2 cups salted cashews
3/4 cup butter, cubed
3/4 cup packed brown sugar

Steps:

  • In a large bowl, combine the cereal, pretzels and nuts. In a small saucepan, combine butter and brown sugar. Bring to a boil; cook and stir until thickened, about 2 minutes. Pour over cereal mixture; toss to coat. , Spread into 2 greased 15x10x1-in. baking pans. Bake at 350° for 8 minutes. Stir; bake 6 minutes longer. Transfer to waxed paper-lined baking sheets. Cool completely. Store in airtight containers.

I first tasted this sweet, different version of Chex mix at a Watkins home-demo party. Almost everyone went home from the party with a copy of this recipe. The maple flavor extract is the secret ingredient. Plan ahead - once cooked, this will need to cool before serving.

1/2 cup sweet unsalted butter or 1/2 cup margarine, melted (1 stick)
1/3 cup brown sugar
2 teaspoons maple extract
8 cups Chex cereal (any flavor - they used a mixture of corn, rice, and wheat flavor)
1 cup mixed chopped nuts, to taste

Steps:

  • Melt butter or margarine in a large microwavable bowl big enough to hold all of the cereal& nuts later (about 2 quarts)- don't put the cereal& nuts in yet, though.
  • If your microwave is very small, you may need to make half batches.
  • Once melted, quickly whisk in brown sugar and maple extract.
  • Stir in the cereal and the nuts until coated and return bowl to microwave and cook on HIGH heat 4-5 minutes, stirring after every minute.
  • Spread out mix onto cookie sheets lined with wax paper and let cool.
  • Break apart and store in an airtight container.

½ cup butter
¾ cup white corn syrup
1 cup packed brown sugar
1 cup chopped pecans
1 cup almonds
1 (12 ounce) package crispy corn and rice cereal

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Spray a large roasting pan with non-stick cooking spray.
  • In a medium-size microwave safe bowl, mix butter, white corn syrup and brown sugar. Place the mixture in the microwave and cook 2 minutes, or until butter melts.
  • Place the cereal, pecans and almonds into the prepared roasting pan. Pour the melted butter mixture over the cereal and nuts and mix gently until the cereal and nuts are coated.
  • Bake for 1 hour, stirring every 15 minutes.
  • As the snack mix is cooling, be sure to continue to stir so that the mix will not harden in one big lump.

6 c crispy cereal, chex or crispix
3 c plain popped popcorn
2 c small square pretzels
1 c cocktail peanuts (optional)
1 c firmly packed brown sugar
1/2 c butter or margarine
1/2 c light corn syrup
1 tsp vanilla
1/2 tsp baking soda

Steps:

  • 1. Coat 17 x 11 x 2-inch baking pan with cooking spray. Combine cereal, popcorn, pretzels and peanuts (if desired). Set aside.
  • 2. In heavy 3-quart saucepan combine brown sugar, butter and corn syrup. Bring to boiling over medium heat, stirring constantly. Reduce heat. Simmer for 5 minutes, stirring constantly. Remove from heat. Stir in vanilla and baking soda. Immediately pour over cereal mixture. Stir until evenly coated.
  • 3. Bake at 250°F about 1 hour or until deep golden brown, stirring every 15 minutes. Spread on wax paper. Separate clumps. Cool completely. Store in airtight container.

  • Remove and discard unpopped kernels from popped popcorn. In large microwavable bowl, mix popcorn, cereal and nuts; set aside.
  • In 2-cup microwavable measuring cup, microwave butter, brown sugar and corn syrup uncovered on High about 1 minute 30 seconds, stirring after 1 minute, until mixture is boiling.
  • Pour over cereal mixture, stirring until evenly coated. Microwave uncovered on High about 5 minutes, stirring and scraping bowl after every minute, until cereal just begins to turn brown. Spread on waxed paper or foil to cool, about 15 minutes, stirring occasionally to break up.
  • In medium microwavable bowl, microwave baking chips uncovered on High 1 minute to 1 minute 30 seconds, stirring every 30 seconds, until melted and smooth. Add 3 cups of the cooled cereal mixture to melted chips; toss gently until evenly coated. Spread on waxed paper or foil. Cool about 30 minutes or until set.
  • In serving bowl, mix both cereal mixtures and cranberries. Store in airtight container.
