Steps:
- Combine white sugar, brown sugar, salt, paprika, black pepper, garlic powder, onion powder, and cayenne pepper in a container with a lid; shake until rub is evenly combined.
- Generously rub both sides of each rib rack with rub.
- Preheat grill for medium heat and lightly oil the grate.
- Place 1 rack of ribs, meaty-side down, in the center of main grill rack; cook for 5 minutes; transfer to the far side of top grill rack, meaty-side up. Repeat process with remaining rib racks.
- Angle the rib racks on the top grill shelf so the meaty sides are facing out and they are stacked one in front of the other at an angle. Turn off heat directly below the ribs and turn other burner on low; close the grill lid and cook for 30 minutes.
- Flip ribs so the closest side to the flame is the furthest side and the meaty side is still facing forward and the rack that was in the front is now in the back. Continue to cook, flipping every 30 minutes, until outsides are crispy and meat is tender, about 5 hours. Slice into small chunks.

KANSAS CITY BARBECUE
Steps:
- Combine all ingredients in shaker and use as "rub" on the following meats.
- Peel membrane off the back of each slab. Then rinse the slab off to get rid of bone dust. Dry with cotton towel. Take shaker of "rub" and lightly coat both sides of meat.
- Preparing smoker: Put charcoal in chimney with paper underneath and light. (Do not use charcoal lighter-it will taint the flavor of the meat.) Let coals get hot, about 30 minutes. Transfer coals into smoker, and add 1 hickory log per hour on top of charcoal if smoker is big. (Adjust if using small smoker.) Wait until temperature of smoker reaches 220 degrees. Leave damper open so you don't trap stale smoke in chamber. Over course of cooking, maintain heat with additional coal and wood, as needed. After placing ribs inside smoker, spritz with apple juice once an hour. After about 3 hours, when meat is nice dark color, spritz one last time and wrap in foil. Let ribs cook in foil for another 2 hours, giving you a total cook time of 5 hours. You can feel when the ribs are tender rather than rubbery (they bend rather than bounce back). Unwrap them (carefully), lift them out of juice and place on cutting board, brush on room temperature BBQ Sauce. Slice into individual ribs and serve.

Steps:
- Coat the entire turkey breast in about half of the BBQ Chip Dust. Place on a sheet pan fitted with a rack and let it dry brine in the fridge, uncovered, for 8 hours and up to overnight.
- Install an air fryer searing plate in an air fryer and set the temperature to 400 degrees F for 35 minutes for the plate to preheat.
- In a large bowl, toss the parsnips, sweet potatoes and baby potatoes with the avocado oil. Sprinkle with the remaining BBQ Chip Dust and toss until coated.
- Remove the searing plate and place the turkey breast skin-side down on one side. Arrange the vegetables on the other side. Cook until the turkey skin is golden brown, about 5 minutes (see Cook's Note). Flip the turkey breast and continue cooking until an instant-read thermometer inserted into the thickest part of the breast registers 165 degrees F and the root vegetables are tender, 35 to 40 minutes. Let the turkey rest for 10 minutes.
- Carefully remove the rib bone (if there is one) from the turkey breast and carve. Serve with the root vegetables.
- Combine the brown sugar, salt, chile powder, garlic powder, black pepper, onion powder and cayenne in a small bowl and mix until blended. Use immediately or transfer to an airtight resealable container.

THE BEST BARBECUE RUB RECIPES - THE SPRUCE EATS
From thespruceeats.com
- Carolina BBQ Rub. Chuck Ozburn sent in this fantastic, classic-style Carolina barbecue rub recipe. It's perfect for pork because it's a well-balanced rub that goes light on the salt and spice, with just a touch of sweetness from white and brown sugar.
- Memphis Rub. In Memphis, the rub is the most important ingredient aside from the meat. Often ribs are served with only a rub and without sauce. This means that the barbecue rub has to provide all the flavor in order to make Memphis-style barbecue.
- Magic Dust. Who would have thought that just 9 ingredients could make such a delicious seasoning? There's a big shaker of Magic Dust next to the salt and pepper in my own kitchen and at all my restaurants.
- Basic Pork Rub. This basic rub recipe goes great on any cut of pork, and because it has some salt in it, it's a convenient and simple mix of spices to have at hand.
- Best Odds Brisket Rub. This basic rub will give you the perfect balance of sweet and salty to make your beef shine. Commonly used in Texas, it is easy to make and contains everything you need for a delicious smoked barbecue brisket.
- Memphis-Style Rib Rub. Memphis ribs are traditionally served without sauce, though this doesn't mean that the meat is tough and dried out. It's just the common practice not to serve a barbecue sauce with this cut of meat.
- Kansas City Rib Rub. Kansas City knows its BBQ ribs. Unlike Memphis ribs, which are served without sauce, you can finish Kansas-style ribs off with a good barbecue sauce.
- Best Odds Pulled Pork Rub. Like its name says, this traditional pulled pork rub will provide you with the best odds of making a great batch of Carolina-style pulled pork.
- Brisket Brown Sugar Rub. If you have enough time, rub your brisket with this rub and keep overnight in a bag in the fridge before smoking. Adjust the heat by using mild or hot chili powder, or experiment with the amount of sugar to find your preference.
