I wanted to find a peanut butter granola recipe that works for me, and here it is! Eat it like cereal, on yogurt, or by the handful.

1 ½ cups oats
¼ cup raisins
¾ teaspoon ground cinnamon
3 ounces peanut butter, slightly melted
1 egg white, beaten
1 ½ teaspoons honey

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a baking sheet with waxed paper.
  • Mix oats, raisins, and cinnamon together in a bowl. Mix peanut butter with the oats mixture using your hands until ingredients are coated in peanut butter; add egg white and honey and continue mixing with hands until evenly mixed. Spread the mixture onto the baking sheet.
  • Bake in preheated oven for 10 minutes, stir, and continue baking until beginning to brown, 5 to 10 minutes more.
  • Let granola cool until it begins to harden, at least 30 minutes.

I found this recipe at hillbillyhousewife.com, a very interesting site. My kids love this granola...they eat it plain, or on top of yogurt with fruit, like a sundae.

Number Of Ingredients 6

2 tablespoons margarine
1/3 cup peanut butter
1/3 cup honey
1/2 teaspoon vanilla
1/4 teaspoon salt
3 cups oatmeal

Steps:

  • Melt together margarine, peanut butter and honey.
  • Add vanilla and salt.
  • Add oatmeal and toss to coat completely.
  • Spread on baking sheet.
  • Bake at 375 about 10 minutes. Stir after 5 minutes.
  • Store at room temperature in sealed container.
  • Note.watch it closely while it bakes -- it burns easily, especially around the edges where it's spread thinner on the pan.
  • Also note -- I omit the salt without noticing any change in flavour.

¼ cup or canola oil, or vegetable oil coconut oil
⅓ cup honey
½ cup honey roasted, or desired peanut butter brand peanut butter
1 tsp pure vanilla extract
3 cups old-fashioned rolled oats
1 cup honey roasted peanuts
½ tsp ground cinnamon
½ cup optional peanut butter chips
½ cup or regular sized M&M's, optional mini M&M's

Steps:

  • Preheat the oven to 300 degrees F. Line one large baking sheet with parchment paper or a silicone baking mat.
  • In a large heat-proof bowl, microwave the coconut oil and honey together for 30 seconds.
  • Remove from the microwave, then using a fork or rubber spatula, stir until everything's melted together and smooth. Microwave it again for an additional 10 seconds or so.
  • Stir in the peanut butter and vanilla until smooth. Add the oats, peanuts, and cinnamon.
  • Toss the mixture to coat everything, making sure all of the oats are moistened.
  • Spread onto the prepared baking sheet, then bake for 35 minutes, stirring every 10 minutes or so.
  • Remove from the oven, then allow the granola to cool for 10 minutes.
  • Sprinkle the peanut butter chips and M&M's on top, if desired.
  • Stir everything together gently on the baking sheet, then allow to cool completely.
  • Serve, and enjoy!

⅓ cup honey
⅓ cup brown sugar
¼ cup vegetable oil
2 tablespoons warm water
½ teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Lightly grease a baking sheet.
  • In a large bowl, combine oats, peanuts, and wheat germ.
  • In a separate bowl, combine honey, brown sugar, vegetable oil, water, salt, and vanilla. Stir well; then pour into the oat mixture, and stir. Spread out on a cookie sheet.
  • Bake for 1 hour, stirring every 15 minutes. Remove from oven, and cool before serving.

1/2 cup honey
1 1/2 teaspoons vanilla
2 cups old fashioned oats
1/2 cup raw almonds, toasted
1 1/4 cups Rice Krispies
1/2 teaspoon salt

Steps:

  • To toast almonds, spread out evenly on a baking sheet. Bake at 350 degrees for 8 - 10 minutes, stirring occasionally. You should be able to smell a nutty aroma when they are done.
  • Add peanut butter, honey and vanilla in a large saucepan and heat until the peanut butter melts.
  • Remove from heat and stir in the remaining ingredients.
  • Press into an 8x8 dish and let sit until firm.
  • Cut into bars and wrap in plastic wrap.

  • In a large heat-proof bowl, microwave the coconut oil and honey together for about 30 seconds. Alternatively, you may melt these ingredients together in a small pan on the stovetop. Remove from the microwave and using a fork or rubber spatula, stir until they are melted together and smooth. You may need to microwave it for 10 more seconds or so. Stir in the peanut butter and vanilla until smooth. Add the oats, peanuts, and cinnamon. Toss the mixture to coat everything. Make sure all of the oats are moistened.
  • Spread onto the prepared baking sheet (it usually always fits onto just one– if too crowded, use two baking sheets and bake at the same time on different racks) and bake for 35 minutes, stirring every 10 minutes or so. Remove from the oven and allow the granola to cool for 10 minutes, then sprinkle the peanut butter chips and M&Ms on top. Stir everything together gently on the baking sheet. Allow to cool completely before enjoying.
