Yield 8 to 10 servings

Number Of Ingredients 9

1 1/2 cups all-purpose flour
Kosher salt
1 cup cornmeal
2 tablespoons finely chopped fresh sage
1 cup buttermilk
16 to 20 1/8-inch-thick slices peeled butternut squash (from 1 medium squash; use a mandoline)
Vegetable oil, for frying
1/4 cup honey

Steps:

  • Mix 1/2 cup flour and 1/2 teaspoon salt on a plate. Whisk the remaining 1 cup flour, the cornmeal, sage and 2 teaspoons salt in a large bowl. Pour the buttermilk into a medium bowl. ROASTED BUTTERNUT SQUASH WITH PECAN GINGER GLAZE

Roasted Butternut Squash With Pecan Ginger Glaze image

This is a great holiday side dish. A real crowd pleaser. It's a way of providing that little bit of rich nut and sweet squash flavor that goes so well with a turkey, ham or whole roasted fish. The ginger offers a little "zing" that your menu just might be looking for without straying too far from that classic squash side dish we love on the Thanksgiving table. I made this last year instead of classic sweet potato with marshmallow and there was barely any leftover! Always a good sign....

Provided by 2001193525

Categories     Vegetable

Time 45m

Yield 8 serving(s)

Number Of Ingredients 13

1 cup pecan halves, divided
1/4 cup granulated sugar
3 teaspoons kosher salt, divided
2 teaspoons dry ginger
6 lbs butternut squash, fully peeled, seeded and cut into 1-inch cubes
2 tablespoons extra virgin olive oil
1/3 cup honey
1/3 cup maple syrup
1 cinnamon stick
1/2 teaspoon orange zest
1/4 cup orange juice
1 tablespoon red wine vinegar
2 tablespoons grated fresh ginger

Steps:

  • Preheat oven to 400 degrees F. Line 2 rimmed baking sheets with aluminum foil. Spread pecans onto one of the baking sheets. Bake in oven for 5 minutes or until they are lightly toasted and aromatic. Remove nuts from baking sheet and set aside.
  • Combine sugar, 2 teaspoons salt and dry ginger in a large bowl. Add squash pieces and toss to coat evenly. Drizzle with olive oil and stir to combine. Transfer 1/2 of mixture to each of the prepared pans, spreading the squash so that the pieces are not touching. Bake for 30 minutes (rotate the pans in the oven after 15 minutes) or until the squash has begun to brown and is tender when pierced with the tip of a knife.
  • Meanwhile, combine honey, maple syrup, cinnamon stick, orange zest and juice, 1 teaspoons salt, vinegar and fresh ginger in a small saucepan. Bring to a boil over medium high heat. Reduce heat to medium and maintain a low boil until the mixture has reduced and become syrupy. Coarsely chop 1/2 cup of the toasted pecans, add them and the remaining pecan halves to the honey mixture.
  • To serve, transfer cooked squash to a large bowl and toss with the honey pecan mixture. Serve immediately.

ORANGE-GLAZED BRUSSELS SPROUTS

Orange-Glazed Brussels Sprouts image

A delicious and easy recipe for orange-glazed brussels sprouts with butternut squash! Tossed with sweet, tangy sauce, cranberries, and crunchy pecans.

Provided by Jessica Gavin

Categories     Side

Time 25m

Number Of Ingredients 14

2 tablespoons unsalted butter (melted)
2 tablespoons honey
zest of one orange
3 tablespoons orange juice (fresh-squeezed)
¼ teaspoon black pepper
2 teaspoons apple cider vinegar
⅛ teaspoon cinnamon (ground)
½ teaspoon thyme (fresh chopped)
1 pound brussels sprouts (washed, trimmed and halved)
3 cups butternut squash (peeled and cut into ½-inch cubes (about 1 squash))
2 tablespoons olive oil (divided)
¾ teaspoon kosher salt (divided)
½ cup dried cranberries
½ cup pecans (toasted)

Steps:

  • Combine all glaze ingredients in a small bowl and set aside.
  • In a large sauté pan, heat 1 tablespoon olive oil over medium heat. Swirl to coat the pan, then add in butternut squash.
  • Sprinkle the squash with a ¼ teaspoon of salt, stir to coat in the oil, and spread out in a single layer. Allow it to cook for 5 minutes without stirring, so that the pieces begin to brown lightly.
  • Stir and redistribute the pieces and allow it to cook for another 5 minutes. Stir again and cook until the squash is fork-tender, about 15 minutes total. Remove the squash from the pan and pour into a bowl.
  • As the squash cooks, bring enough salted water to cover the brussels sprouts to a boil. Add the halved sprouts and cook until tender, about 5 to 6 minutes. Drain well and shake off excess water.
  • Heat another tablespoon of oil over medium heat using the same pan. Place the blanched sprouts cut side down, and sear until nicely browned, about 3 minutes.
  • Turn over and sprinkle sprouts with ½ teaspoon of salt and cook for an additional 3 minutes until browned. Reduce the heat to low and add the squash back to the pan, and the orange glaze. Season with more salt and pepper as desired.
  • Stir in the cranberries and pecans right before serving. Serve warm and enjoy!

  • You have two choices. You can make the vegetables on the stovetop, or roast them! If you'd like to roast: mix squash with 1 1/2 tablespoons olive oil, and brussels with 1 1/2 tablespoons olive oil. Season with 1 teaspoon salt, each. Roast for 25 minutes at 400 degrees F.
  • If you'd like to make on the stovetop: In a large saute pan, heat 1 1/2 tablespoons olive oil over medium heat. Swirl to coat pan, then add in squash. Stir the squash pieces so they are coated with oil and sprinkle with 1 teaspoon salt. Shake the pan so squash spreads out in an even layer and let cook, without stirring, so that they brown a bit on one side, about 5 minutes.
  • Stir and spread the pieces out again and let cook withoutstirring so more sides brown. Cover, and cook about 6 minutes, until the squash is soft, but holds its shape. (This will depend on the size you cut your squash so try one to test.) Once done, remove from heat and pour into a bowl.
  • Heat remaining 1 1/2 tablespoons olive oil of oil over medium-high heat using the same pan. When it's very hot, place the brussels sprouts cut side down in the oil, sprinkling with 1 teaspoon salt. Turn the heat to medium, and sear on one side until nicely browned, about five minutes.

SUPER SWEET HONEYNUT SQUASH IS BASICALLY A MINIATURE BUTTERNUT
The squash has a noticeably different interior and exterior from a butternut. The rind has a more caramel color and the inside reveals a deeper orange. The honeynut squash starts growing as a deep green, and turns caramel as it ripens. Mazourek says this is great for the consumer, because squash don't have a scent or a feel to show they are ripe.
