Categories     Appetizer     Salad     Side Dish

Time 10m

Number Of Ingredients 11

8 cup brococli florets, roughly choppped (about 2 heads/550 grams)
1/2 cup diced red onion (65 grams)
1/2 cup raisins
1/3 cup sunflower seeds
red pepper flakes, to taste
salt and pepper, to taste
1/2 cup avocado oil
2 tablespoons dijon mustard
2 tablespoons apple cider vinegar
1 tablespoon honey
salt, to taste

Steps:

  • Make the honey mustard. In a jar or measuring cup, add the avocado oil, djion, apple cider vinegar, honey, and salt and mix to combine. Set aside.
  • Make the broccoli salad. In a large bowl, add the broccoli, red onion, raisins, sunflower seeds, red pepper flakes, and salt and pepper. Pour over the honey mustard dressing and mix to combine. I like to use a containter that has a lid so I can shake it up. Place in the fridge to let the flavors come together or eat right away.

ROASTED BROCCOLI WITH VINEGAR-MUSTARD GLAZE

Roasted Broccoli With Vinegar-Mustard Glaze image

On its own, roasted broccoli is a treat: caramelized and crisp-tender, with frizzled florets and sweet stems. To prevent overcooking, roast at a high heat and on one side the whole time. Flipping the broccoli to brown on both sides increases the chance that it will dry out or turn to mush before the outsides are as caramelized as you like. To give the broccoli a little pizzazz, this recipe takes inspiration from a classic mustard pan sauce, which makes chicken breasts or steaks sparkle. Toss the broccoli with butter, vinegar and Dijon mustard right out of the oven, and the heat from the sheet pan will meld them into a silky, bright sauce.

Provided by Ali Slagle

Categories     dinner, lunch, vegetables, side dish

Time 30m

Yield 4 servings

Number Of Ingredients 6

1 1/2 pounds broccoli, cut into 1 1/2- to 2-inch-long florets, stems sliced 1/4-inch thick
3 tablespoons extra-virgin olive oil
Kosher salt and black pepper
1 tablespoon unsalted butter
1 tablespoon sherry or red wine vinegar
1 teaspoon Dijon mustard

Steps:

  • Heat the oven to 450 degrees. On a baking sheet, toss the broccoli with the olive oil, salt and pepper. Arrange in a single layer, cut-sides down, and roast, without flipping, until browned and crisp-tender, 15 to 20 minutes.
  • Add the butter, vinegar and mustard to the broccoli on the sheet pan and toss until the butter's melted, scraping up browned bits from the pan as you go. Season to taste with salt and pepper.

SHEET PAN CHICKEN THIGHS WITH BROCCOLI

Sheet Pan Chicken Thighs with Broccoli image

Here's a pleasing and perfect weeknight dinner that comes together fast with a few real-food ingredients. Seasoned with a chipotle spice rub and drizzled with a honey-mustard sauce, this sheet pan chicken thigh recipe does not skimp on flavor!

Provided by Stacie Hassing

Time 30m

Number Of Ingredients 21

4 boneless, skinless chicken thighs (1 1/4 lbs), patted dry
1 (12-ounce) bag raw broccoli florets (6-7 cups)
½ medium red onion, sliced (1 cup)
1 tablespoon + 1 teaspoon avocado oil or olive oil, divided
2 teaspoons brown sugar
½ teaspoon ground cumin
½ teaspoon chili powder
½ teaspoon paprika
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon fine salt
⅛ teaspoon black pepper
⅛ teaspoon chipotle powder
Nonstick cooking spray
3 tablespoons mayonnaise
2 tablespoons Dijon mustard
1 tablespoon honey
2 teaspoons coconut aminos (or 1 teaspoon low-sodium soy sauce)
¼ teaspoon dried thyme
¼ teaspoon garlic powder
Pinch of fine salt and black pepper

Steps:

  • Place a large rimmed baking sheet in the oven and preheat the oven to 450℉ with the pan in the oven. Preheating the baking sheet helps the ingredients cook evenly.
  • While the oven preheats, place broccoli florets and onion in a medium bowl. Drizzle with 1 tablespoon of oil. Sprinkle with salt and pepper and toss to coat. Set aside.
  • Make the rub: In a small bowl, combine the brown sugar, cumin, chili powder, paprika, onion powder, garlic powder, salt, black pepper, and chipotle powder.
  • Rub the chicken thighs with the remaining 1 teaspoon of the oil. Sprinkle all over with the seasoning rub.
  • When the oven is preheated, use an oven mitt to carefully remove the hot sheet pan from the oven. Spray the sheet pan with cooking spray. Spread the vegetables in an even layer on the baking sheet, leaving spaces for the chicken thighs. Nestle the chicken thighs among the vegetables.
  • Return the baking sheet to the oven and bake for 15 minutes. Stir the vegetables and continue cooking until the chicken is cooked through and registers 165℉ on an instant read thermometer, about 5 minutes more.
  • While the chicken is cooking, prepare the Honey-Mustard Sauce by combining the mayonnaise, mustard, honey, coconut aminos, thyme, and garlic powder in a small bowl. Taste and season with salt and pepper as desired.
  • Serve Honey-Mustard Sauce with chicken and vegetables. Any leftover sauce may be stored in an airtight container in the refrigerator for up 4 days.

  • In a large bowl, combine the broccoli slaw, red onion, cilantro, almonds, and cranberries. Set it aside while you prepare the dressing.
  • In a glass measuring cup or small bowl, combine the olive oil, vinegar, mustard, honey, garlic, ginger, salt, and several grinds of black pepper. Whisk well to combine.
  • Pour the dressing over the salad ingredients, and toss well until everything is lightly coated. Allow the salad to rest for at least 15 minutes before serving, so the flavors can marinate, then serve.
  • Leftover salad can be stored in an airtight container in the fridge for up to 48 hours. If you want to make this salad ahead of time, I'd recommend storing the dressing and almonds separately, so the ingredients don't get too soggy. You can toss everything together 15 to 30 mintues before serving it, for the best crunchy texture.
