EASY PUERTO RICAN ARROZ CON POLLO (RICE AND CHICKEN)

Easy Puerto Rican Arroz Con Pollo (Rice and Chicken) image

A simple and easy version of Puerto Rican Arroz Con Pollo (Rice and Chicken), based on a Bobby Flay recipe used on his show "Throw Down"

Provided by BryanNH

Categories     One Dish Meal

Time 1h

Yield 6 serving(s)

Number Of Ingredients 9

1 red bell pepper
1 green bell pepper
1 bunch cilantro
1/2 medium onion
4 cups chicken stock
6 chicken thighs
1/2 teaspoon adobo seasoning
2 tablespoons oregano
2 cups white rice

Steps:

  • Dice the peppers and onions into 1/8" by 1/8" pieces, or a little larger if you wish.
  • Coarsely chop the cilantro.
  • Set aside.
  • The Adobo seasoning this recipe mentions is not the one RecipeZaar thinks it is. It is the one you will find in the Mexican food area with the tacos and other Mexiocan inspired foods. For all reference of it in this recipe, season to taste as it is salty.
  • Season the chicken with Adobo seasoning and oregano.
  • Brown the chicken in the pan you will cook the dish in (large pot, tall enough to hold everything together when finished cooking).
  • Remove the chicken and add in your sofrito (the diced peppers, onions, and cilantro), some adobo seasoning to taste, and sautee until the onions become slightly translucent.
  • Stir the rice into the mixture.
  • Add the chicken stock.
  • Add the browned chicken.
  • Bring to a boil.
  • Once boiling, reduce heat to a simmer, put lid on the pan, and cook for 40 minutes. High altitude may need to add an additional 5 - 8 minutes cooking time.
  • DO NOT open the lid to check on it. Just be sure that you have it at a simmer when you put the lid on.
  • When the time is up, open to reveal the most incredible Puerto Rican Arroz Con Pollo!
  • You may also add 1lb of smoked sausage to give this an additional layer of flavor. Substitute 1c chicken stock for water if you do to cut down on the saltiness.

3 1/2 tablespoons olive oil, (divided)
2 tablespoons white wine vinegar ((or lime juice))
1 tablespoon chili powder
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground coriander
1 teaspoon coarse kosher salt
1/2 teaspoon dried oregano ((Mexican oregano preferred))
1/2 teaspoon ground cumin
1 small yellow onion, (diced)
1 green bell pepper, (diced)
2 teaspoons minced garlic ((about 4 cloves))
1 1/2 cups long-grain white rice, (rinsed and drained)
3 1/4 cups water ((or chicken broth))
1 tablespoon tomato paste
1 teaspoon coarse kosher salt
1 cup frozen green peas
chopped cilantro and lime wedges, (for garnish)

  • In a large freezer bag (or bowl), add chicken, 3 tablespoons olive oil, white wine vinegar, chili powder, onion powder, garlic powder, ground coriander, salt, oregano and cumin. Seal the bag and toss until everything is completely coated with the marinade. Refrigerate for at least 30 minutes, up to overnight.

  • Transfer the chicken onto a plate and cook the remaining chicken the same way. The chicken won't be fully cooked yet - that's okay. It will continue cooking with the rice later.
  • In the same pan using the oil that's already in there, add the diced onions and bell peppers. Cook for 5 minutes until onions have softened and are translucent.
  • Add the garlic and rice. Saute for 1 minute until garlic is fragrant and rice begins to brown slightly.
  • Add the water, tomato paste and salt, Stir together to combine until the tomato paste has fully dissolved.
  • Add the browned chicken thighs to the pan skin-side up and bring the water to a boil. Reduce heat to low, cover and cook for 20-25 minutes until the rice is fully cooked through and the chicken registers an internal temperature of 165°F.
  • Remove the pan from the heat and transfer the cooked chicken pieces to a clean plate. Add the frozen peas to the rice and fluff them in using a fork. The rice will be hot enough to thaw the peas out completely.
  • Serve the arroz con pollo immediately with a garnish of chopped cilantro and lime wedges.

ARROZ CON POLLO

Arroz con Pollo image

Almost every family I know has their own version of this dish. My mom made an amazing arroz con pollo. But my version is inspired by the Mexican coastal city of Mazatlán and all the amazing fresh produce that is available there throughout the year. It's a vegetable-forward recipe full of flavor, texture and color. When I open the lid after the dish is done, the colors look like confetti on a dance floor after a big party. And that's what this meal is: a party in a pot.

Provided by Rick Martinez

Categories     main-dish

Time 1h20m

Yield 4 servings

Number Of Ingredients 14

2 tablespoons bacon fat or olive oil
6 chicken thighs (about 2 pounds total)
2 medium carrots, peeled and chopped
1 cup corn kernels (from 1 large ear of sweet corn, or use thawed frozen kernels)
1/2 large white onion, chopped
1 poblano pepper, stemmed, seeded and chopped
1 serrano chile, chopped (remove seeds for milder flavor)
2 garlic cloves, finely chopped
4 teaspoons kosher salt
2 cups long-grain rice
3/4 teaspoon cumin seeds
3 canned whole tomatoes or fresh tomatoes if in season, crushed or chopped
Cilantro, for garnish
Lime wedges, for serving

Steps:

  • Heat the fat in a large heavy pot over medium-high heat. Add the thighs, skin-side down, and cook until browned on both sides and their fat has rendered, 8 to 10 minutes. Transfer to a plate.
  • Add the carrots, corn, onion, poblano, serrano, garlic and salt and cook, stirring occasionally, until the vegetables just begin to brown, 5 to 6 minutes. Add the rice and cumin and cook, stirring frequently, until the rice grains are opaque and the vegetables are very tender, about 5 minutes.
  • Stir in the tomatoes and 2 1/2 cups water and bring to a boil. Reduce the heat to low, cover the pot and simmer until all the water has been absorbed, about 20 minutes. You can check by
  • opening the lid, taking a fork and clearing a spot so you can see the bottom of the pot; if there is any liquid, cover and check in another 5 minutes.
  • Remove from the heat and let sit, covered, for 20 minutes to evenly distribute the moisture.
  • Serve topped with cilantro and a squeeze of lime.

ARROZ CON GANDULES

Arroz con Gandules image

Arroz con gandules is a combination of rice and pigeon peas cooked in the same pot with sofrito. This is Puerto Rico's national dish along with roasted pork. I make a whole pot of arroz con gandules at least once a month just for me. I eat it all week long with nothing but lots of hot sauce. This rice dish is a must for all family events, gatherings or even a day at the beach.

3 tablespoons Delicioso Adobo, recipe follows
1 teaspoon salt
3 tablespoons Worcestershire sauce

6 garlic cloves, roughly chopped
3 cups white rice
1 cup fresh or frozen peas
2 medium carrots, fnely diced
8 ounces green beans, trimmed and quartered

3 tablespoons unsalted butter
1/2 green bell pepper, cored, seeded, ribbed and thinly sliced

1 tablespoon lemon pepper seasoning
1 tablespoon garlic powder
1 tablespoon onion powder or flakes
1 tablespoon dried oregano
1 tablespoon parsley flakes
1 tablespoon achiote powder*
1/2 tablespoon ground cumin
1 tablespoon salt

Steps:

  • Place the chicken, quartered onions, 1 cup of chicken broth, beer, Delicioso Adobo, Worcestershire sauce, 1/2 of the cilantro, and garlic in a large pot or skillet over high heat. Bring to a boil, reduce the heat to medium-low, cover, and simmer until the chicken is cooked through, 30 to 35 minutes. Remove the chicken to a plate and set aside to cool; once cool shred and set aside. Strain the broth into a bowl through a fine-mesh sieve discarding the onion pieces.
  • Pour the broth into a measuring cup and add water to make 4 cups of liquid. Return it to the pot or skillet and add the rice, peas, carrots, green beans, ketchup, and salt. • Meanwhile, melt the butter in a large skillet over medium heat. Add the peppers and the remaining sliced onions and cook until they're tender, 8 minutes. Shred the cooked chicken meat discarding the skin and bones, and add the chicken to the vegetables. Cook until it is heated through, 2 to 3 minutes. Fluff the rice with a fork and add the chicken and vegetables to the rice mixture. Stir in the olives, sprinkle with the remaining cilantro and serve.
  • Combine all measured ingredients in a small glass jar with an airtight lid and shake to blend. Store in a cool, dry place for up to 2 weeks.

ARROZ CON POLLO

Arroz con Pollo image

Recipe for Mexican Arroz con Pollo- tomato vegetable rice, garlic and onion slow cooked with tender chicken. Easy healthy affordable one pot meal

Provided by Tori Avey

Categories     Main Course

Time 30m

Number Of Ingredients 12

2 cups white rice
1 1/2 lbs roma tomatoes, halved
1 garlic clove
1/2 medium onion, peeled
2 tbsp vegetable oil ((we used grapeseed))
1/2 tsp chili powder ((mild))
1/2 cup diced carrots
1/2 cup corn (fresh or frozen)
1/2 cup peas (fresh or frozen - not canned)
Salt
6 pieces chicken - legs and/or thighs
2 tbsp chopped cilantro for garnish ((optional))

Steps:

  • Rinse the rice well in a mesh colander, then shake to drain. Let the rice continue draining over the sink while you blend together the cooking liquid.
  • In a blender, combine the roma tomatoes, garlic, onion, and 1 1/2 cups of water.
  • Blend till the mixture is smooth. Pour the tomato mixture through another mesh colander or sieve into a large bowl, pushing the solids to extract as much flavored juice as possible.
  • Reserve the juice and discard the solids.
  • Heat up 2 tbsp of oil in a nonstick pot over medium high heat. Add the rice to the pot. Saute the rice, stirring almost constantly, for 10-15 minutes till the grains of rice start to turn golden. Be careful-- when they begin to turn golden, they can easily go to brown/burned if you don't watch them carefully.
  • Measure the reserved tomato liquid into the pot by cupfuls. You will need 6 cups of liquid total. First measure the tomato liquid and pour into the pot (there will be about 3 cups). Once you know how much tomato liquid there is, you can measure out the remaining amount of liquid needed-- in our case, we needed 3 more cups. Add that amount of water to the pot to make 6 cups of liquid total.
  • Stir in the diced carrots, corn, and peas along with 1 tsp of salt.
  • Sprinkle the chicken pieces with salt (skip salting the chicken if you're using kosher meat) and chili powder. You can use up to six pieces of chicken in one pot. We took the skin off of our chicken before cooking to make the dish a bit lighter. You can leave the skin on if you prefer, which will add more flavor to the dish.
  • Place the chicken pieces on top of the rice and vegetables, covered in the tomato liquid. Bring the mixture to a slow boil.
  • Reduce heat to a slow, even simmer over medium low heat and cover the pot. Let the mixture simmer for 1 hour till all the liquid is absorbed and the rice is tender. Check at 30 minutes to see if the pot looks too dry. Add additional liquid as needed, and additional salt to taste, if desired. We ended up adding another 1 cup of water to the pot after 30 minutes-- the liquid absorbs pretty quickly into the rice. Check the rice again for dryness at 45 minutes. When all of the liquid has absorbed and the rice, vegetables, and chicken are tender, remove from heat.
  • Serve the chicken over the rice, garnished with chopped cilantro if desired. I decided to debone the chicken and cut it into pieces before serving for a prettier presentation. You can serve it on the bone if you like. The rice will be quite soft-- this is the correct texture for this dish. It all comes together in a very warm, cozy, filling one-pot meal. It's simple, homey, healthy Mexican comfort food.

1 1/2 cups low-salt chicken stock
1/2 cup tomato sauce

Steps:

  • Combine the salt, garlic powder, cumin, black pepper and cayenne in a plastic gallon bag. Shake until the mixture is well combined.
  • Pat the chicken dry and place in the bag with the spice mixture. Shake the bag, making sure the chicken is well coated.
  • Heat the oil in a 12-inch high-sided skillet over high heat until hot but not smoking. Add the chicken and brown on all sides, about 6 minutes each side. Transfer the chicken to a plate, using tongs.
  • Add the onions, green peppers, red peppers and 1/2 teaspoon salt to the skillet. Cook the vegetables over moderate heat, stirring, until softened and fragrant, about 7 minutes. Add the rice and garlic and cook until the rice begins to turn gold in color and fragrant, about 1 minute.
  • Meanwhile, combine the stock, tomato sauce and remaining teaspoon salt in a medium bowl. Add 1 1/4 cups water and the stock mixture to the skillet and stir to make sure the rice is covered in liquid. Nestle the chicken in the rice, adding any juices from the plate. Bring the rice to a boil. Reduce the heat to medium-low and cover. Cook until the chicken is cooked through, the rice is tender and most of the liquid is absorbed, about 35 minutes. Let the skillet stand covered, about 10 minutes before serving.

  • 1. Cut the chicken into eight pieces total: cut each breast in half crosswise and then divide each leg into the drumstick and the thigh. Reserve the wings and back for stock or for another use. Rub the chicken pieces all over with 1 teaspoon salt, lots of black pepper and the oregano. Place in a large bowl, cover, and set aside in the refrigerator for 1 hour.
  • 2. Preheat the oven to 350°F. In an 8-quart Dutch oven or other heavy pot, heat the oil over medium-high heat. Working in batches if necessary to avoid crowding, add the chicken pieces in a single layer and cook, turning as needed, until golden on all sides, about 10 minutes. Transfer the chicken to a plate. Pour off all but 2 tablespoons of the fat from the pot.
  • 3. Return the pot to medium-high heat and add the onion, bell pepper, garlic, saffron, chile flakes, nutmeg and 1/2 teaspoon salt. Cook, stirring often, until the vegetables have softened, about 10 minutes. Increase the heat to high, add the tomatoes, 2½ cups water, the wine, and the chicken, and bring to a boil. Cover the pot and place in the oven for 30 minutes.
  • 4. Remove the pot from the oven, add the rice, olives and 1/2 teaspoon salt, and stir well. Re-cover the pot, return it to the oven, and cook for another 20 minutes. Retrieve the pot again, add the peas and fluff the rice with a fork. Re-cover the pot and return it to the oven for a final 10 minutes. At this point, the rice and the chicken will be tender and the liquid will be absorbed.

  • While the rice is soaking, sprinkle the chicken thighs with 1 of the teaspoons of sea salt, paprika, and garlic powder on both sides.
  • In a bowl or measuring cup, whisk together the broth, tomato paste, dried oregano, and sea salt until well-combined. Set aside until ready to use.
  • Heat a large cast iron skillet or thick-bottomed pot (like a Dutch oven) over medium-heat and add the avocado oil. Once the skillet is very hot (about 350 degrees if you have a laser thermometer), carefully place the seasoned chicken thighs on the hot surface, skin side down. Brown for 3 to 5 minutes, until the skin is golden-brown and crispy, then flip chicken to the other side and brown another 3 to 5 minutes. Note: depending on the size of your skillet or pot, you may need to brown the chicken in two batches. Transfer the chicken to a plate and set aside.

  • Add chicken to a large bowl. Add in 1 tablespoon olive oil and your adobo seasoning: cumin, paprika, chili powder, cayenne pepper, onion powder, garlic powder, coriander, salt and pepper. Use clean hands to toss the chicken in the mixture. Cover and allow chicken to marinate for 30 minutes, or you can skip this completely and begin the cooking process!
  • Next add remaining 1 tablespoon olive oil to a large deep 10 inch skillet and place over medium high heat. (If you do not have a skillet a large pot will also work very well!) Once oil is hot, add in chicken and season with a little more salt and pepper. Cook until browned 4-5 minutes, then flip and and cook an additional 4-5 minutes. Remove from pan and transfer to a plate.
  • In the same skillet (it should be greased enough already for sauteing) you will make your sofrito by adding in garlic, jalapeno, diced green pepper, diced onion and cilantro.
  • Saute for 2-3 minutes, then add in your spices (also known as homemade sazon spices): cumin, turmeric, coriander, garlic powder, oregano, salt and pepper and cook for 30 seconds. Then add in tomato sauce and water and stir well to combine.
