JALAPENO-CHEDDAR BEER BREAD



Jalapeno-Cheddar Beer Bread image

This no-fail, no-fuss recipe, uses just a few ingredients, requires no rising time and has tons of savory flavor.

1 stick (8 tablespoons) unsalted butter, melted
2 3/4 cups self-rising flour, sifted (see Cook's Note)
2 tablespoons sugar
3/4 cup shredded Cheddar
One 12-ounce can or bottle lager, pilsner or IPA-style beer, at room temperature
1 cup sliced pickled jalapenos

Steps:

  • Preheat the oven to 375 degrees F. Brush an 8-by-4-by-2 1/2-inch loaf pan with some of the melted butter.
  • Whisk together the flour, sugar and 1/2 cup Cheddar in a large bowl.
  • Pour the beer into a medium bowl. Add half of the remaining butter and whisk together (it will get foamy!).
  • Pour the beer-butter mixture into the flour mixture and fold until just combined (it's ok if there are lumps). The batter will be relatively thick and shaggy. Transfer to the prepared loaf pan and pat out into an even layer. Pour the remaining butter over the batter and top with the remaining 1/4 cup Cheddar and the jalapeno slices. Bake until golden brown and an instant-read thermometer inserted into the center registers 190 degrees F, 1 hour to 1 hour 5 minutes.
  • Let cool in the pan on a rack for about 15 minutes. Invert the bread out of the pan and eat warm or at room temperature.

8 ounces all-purpose flour
4 ounces whole-wheat flour
1 tablespoon baking powder
1 1/2 teaspoons kosher salt
1 teaspoon sugar
1 teaspoon chopped fresh dill
4 1/2 ounces sharp Cheddar, grated
12 ounces cold beer, ale or stout
1 to 2 tablespoons sunflower seeds, optional

Steps:

  • Heat the oven to 375 degrees F. Coat the inside of a 9 by 5-inch loaf pan with the nonstick spray and set aside.
  • Whisk together the all-purpose flour, wheat flour, baking powder, salt, sugar, and dill in a large mixing bowl. Add in the cheese and stir in the beer just to combine. Spread the batter evenly in the prepared pan. Sprinkle with the sunflower seeds, if using.
  • Bake on the middle rack of the oven until the bread reaches an internal temperature of 210 degrees F on an instant-read thermometer, about 45 to 55 minutes.
  • Remove from the oven and cool in the pan for 10 minutes. Transfer the loaf to a cooling rack for 10 to 15 minutes before slicing and serving.

1 cup of grated cheese
1 small finely chopped fried onions
2 tablespoons sugar
1 teaspoon baking powder, i use american double action
ground pepper
1 (330 ml) bottle beer
2 tablespoons melted butter

Steps:

  • In a bowl mix all the ingredients except the beer and melted butter.
  • Mix together.
  • Then add the beer and mix together with your hand until all ingredients are mixed.
  • Put mixture into a loaf pan (I use a silcon loaf pan).
  • Then add the melted butter to the top of the mixture and bake at 350 degrees.

1 tablespoon baking powder
1 tablespoon white sugar
1/2 teaspoon salt

2 green onions, minced (white and green parts)
1 cup shredded old sharp cheddar cheese
1 (341 ml) bottle beer, any type (at room temperature)
1 small onion, peeled and sliced into thin rings
1/4 cup shredded old sharp cheddar cheese
1 tablespoon sesame seeds (optional)

Steps:

  • Preheat oven to 350F; grease a 9x5 loaf pan well and set aside.
  • Into a large mixing bowl, sift flour, baking powder, sugar, salt and mustard powder; it's easiest to do this by shaking mixture into bowl through a sieve.
  • If you don't want to sift (it's best to do so), combine those ingredients well using a fork.
  • Add basil, minced green onions and cheese.
  • Pour in beer, stirring only to combine; don't over-stir.
  • Spread batter evenly in prepared loaf pan.
  • Arrange the onion rings over entire top, then sprinkle cheese over, then sesame seeds if using.
  • Bake in preheated oven for 50 to 55 minutes, or until a tester inserted into centre of loaf comes out clean.
  • Remove loaf from pan immediately and let cool on a wire rack for a few minutes; loaf is best if served warm so should be served right away, but it can be make ahead of time and then rewarmed to serve, if desired.

Steps:

  • Preheat oven to 350 degrees F.
  • Using a cheese grater with small holes, grate the two portions of sharp cheddar cheese.
  • In a large bowl combine together the flour, baking powder, onion soup mix, basil, garlic powder, and sugar; stir in the grated cheese and chopped green onion.
  • Gradually pour in the beer, stirring with a fork until just blended and beer is incorporated.
  • Grease the bottom of a 9"x5" loaf pan and spread the dough in the pan.
  • Chop the additional green onion and sprinkle evenly over the surface of bread dough for topping (you can substitute chopped thinly sliced yellow onion for this, if you like).
  • Bake at 350 degrees for 50 to 55 minutes or until a cake tester comes out clean from the middle.
