¼ cup honey
3 tablespoons lime juice
2 cloves garlic, minced
1 pound tilapia fillets
salt and pepper to taste
1 butternut squash - peeled, seeded and sliced
1 bunch fresh asparagus spears, trimmed and chopped
poultry seasoning
½ cup mozzarella cheese

Steps:

  • In a large bowl, mix the honey, lime juice, and garlic. Season tilapia with salt and pepper, place in the bowl, and marinate 1 hour in the refrigerator.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Arrange the squash and asparagus in the baking dish. Place tilapia on top of vegetables, and season with poultry seasoning. Discard remaining marinade.
  • Bake 20 minutes in the preheated oven, until vegetables are tender and fish is easily flaked. Sprinkle with mozzarella, and continue baking 5 minutes, or until cheese is lightly browned.

4 fresh or thawed talapia filets
2 Tbsp olive oil
2 Tbsp honey
2 Tbsp lime juice
1 tsp lime zest
2 clove garlic, crushed
1/2 tsp salt and pepper
1/3 c flour
2 Tbsp olive oil for frying
additional honey and lime zest mixed for drizzling

Steps:

  • 1. 60 minutes before cooking season tilapia filets with salt and pepper then lay in a baking dish or into a large ziplock bag.
  • 2. In a bowl combine olive oil, honey, lime juice, zest, crushed garlic and whisk until combined.
  • 3. Pour over tilapia and let marinate for an hour. Add flour a bit more salt, pepper and lime zest to a bowl and set aside.
  • 4. Heat a cast iron or a nonstick skillet over medium high heat and add olive oil.
  • 5. Dredge each piece tilapia through the flour until you have a very light coating.
  • 6. Make sure the pan is hot. Add tilapia to the oil and cook until flaky and crispy on each side about 3-4 minutes per side.
  • 7. Remove tilapia from pan and let drain on a paper towel for a few minutes. Serve with an additional drizzle of lime and honey.

4 limes, thinly sliced
2 ears corn, shucked
2 tbsp. fresh cilantro leaves
1/4 c. extra-virgin olive oil
Kosher salt
Freshly ground black pepper

Steps:

  • Heat grill to high. Cut 4 sheets of foil about 12" long.
  • Top each piece of foil with a piece of tilapia. Brush tilapia with honey and top with lime, corn, and cilantro. Drizzle with oil and season with salt and pepper.
  • Fold each foil pack crosswise over to completely cover the food mixture. Roll top and bottom edges to seal.
  • Grill until tilapia is cooked through and corn is tender, about 15 minutes.

4 (4-5oz) tilapia fillets (thawed if frozen)
Juice and zest of 1 lime
1 Tbsp olive oil
1 1/2 Tbsp honey
1/2 tsp salt
1/2 tsp pepper
1/4 tsp garlic powder
1/2c flour (I tried both white flour and whole wheat pastry flour with good results)
1/4 tsp salt
1/4 tsp pepper
1-2 Tbsp olive oil

Steps:

  • Assemble marinade by combining lime zest, lime juice, olive oil, honey, salt, pepper, and garlic powder in a gallon-sized zip-top bag or shallow container with a lid. Add fish and marinate in the refrigerator anywhere from 1 hour up to 24 hours*.
  • When ready to cook, combine flour with salt and pepper on a plate. Remove each fish fillet from the marinade and dredge lightly with the flour on both sides (just a light, light coating).
  • Heat 1-2 Tbsp olive oil in a medium skillet over medium-high heat until shimmering. Cook fillets 2 at a time for 3-4 minutes per side or until opaque and browned (this works best if you don't disturb the fish much while letting it cook).
  • Serve with lime wedges or peach salsa.
