Steps:
- Make the butter by mixing together all the ingredients, then season and set aside. Can be made two days ahead. Remove from the fridge to soften before using.
- Use kitchen scissors to cut along the tops of the lobster shells, then flip the tails over and crack the ribs of the shell. Use your fingers to open the shell and loosen the meat keeping it attached at the base and pull it half out. Use a knife to cut along the top of the tail without cutting all the way through and remove the vein if you see one. Sit the tail in a shallow roasting tray and add some butter to each one. Tails can be prepared a few hours ahead and chilled.
- Heat the grill to high, then grill the lobster tails for 10 mins until cooked through. Put them on plates and drizzle with the butter from the pan, or pour the butter into a ramekin and put it in the middle of the table for dipping the lobster meat in. Serve with lemon wedges and scatter with extra parsley, if you like.

- Preheat the broiler. Place a wire cooling rack inside a rimmed baking sheet. Cut the top shell of the lobster tails lengthwise down the middle with kitchen shears. Then, using a knife, cut all the way through the tails to split into 2 pieces. Place them flesh-side up on the prepared baking sheet.
- Mix together the butter, parsley, shallot, lemon zest, 1/2 teaspoon salt and a few grinds of pepper in a small bowl until well combined.
- Spread 2 teaspoons of the compound butter on the flesh of each lobster tail half. Broil until the shells turn a bright orange, the flesh is opaque and cooked through and the tails begin to curl, about 4 minutes.

- Using a clean pair of scissors or kitchen shears, cut along the middle of the top of the shell towards the fins of the tail, making sure to cut in a straight line. Do not cut through the end of the tail.
- Using a spoon, separate the meat from the two sides of the shell, then lift the meat up and out from inside the shell.
- Press the two sides of the shell together, then lay the meat over the seam where the two shells meet.
- If you are having difficulty opening the shell up to lift out the meat, flip the tail over and make cuts along the carapace where the legs meet the bottom part tail. This will help break the rigid structure of the shell and allow it to be more flexible.
- While cutting through the shell, you may have also cut into the meat, which is perfectly okay. Make a shallow cut through the middle of the lobster meat so that you can peel down the thin layer of meat over the sides. This gives the lobster tail its signature look.
- Preheat oven to 450°F (230°C).

- 1. Thaw lobster tails overnight in the refrigerator for approximately 10 hours .
- 2. Using a pair of good kitchen sheers, cut the shell down the center of the back, leaving tail intact.

- In a bowl add the softened butter, garlic, salt, black pepper, 2 tablespoon lemon juice and parsley. Stir to combine the garlic butter and adjust the seasoning to taste, set aside.
- Preheat an oven to 375°F.

- Using kitchen shears, cut the top of lobster tails lengthwise. During this process, you'll cut the top of the meat, which is totally fine.

I saw different recipes for either steaming or broiling them, but I did both and they turned out fantastic!! - In a large pot, add the water and kosher salt to boil. Add the lobster tails and allow to boil for about 20 minutes and the meat is white and the shells are bright red.
- Remove the tails from the water. I used tongs and they were easy to remove them that way. Allow them to cool for about 10 minutes.
- Turn on the broiler in your oven.
- Make the citrus butter in a small bowl. The 10 minutes while the lobster cools will allow the flavor to increase!
- Using a very sharp knife or kitchen shears, Cut off the top shell of the tail, exposing the meat. Lay the tails on a baking sheet and brush on the butter.
- Broil for about 6-8 minutes. Watch carefully to not burn!

- Preheat oven to 450°F. Using kitchen shears, cut straight down top center of lobster tail shell. Use a spoon to gently release lobster meat from each side of shell. Gently pull meat away from bottom of lobster, and place on top of shells. Place lobster tails on a baking sheet lined with parchment paper, and spoon 1 tablespoon of the butter over each. Bake in preheated oven until bright red and opaque, 12 to 14 minutes.
- Meanwhile, heat remaining 1/4 cup melted butter in a small saucepan over medium-low. When ready to serve, remove butter from heat, and transfer to a small serving bowl. Stir in lemon juice, tarragon, parsley, chives, garlic, and salt. Serve lobster tails with citrus-herb butter and lemon wedges.

- Bring a deep pot of water to a boil. Plunge the lobster into the boiling water, head first, and cook for 3 minutes. Remove from the water and place in an ice bath to stop the cooking.
