Steps:
- Preheat oven to 350°. In a large skillet, cook ground beef over medium heat until no longer pink, breaking it into crumbles; drain. Stir in enchilada sauce and salsa; set aside. , Place 2 tortillas, overlapping as necessary, in the bottom of a greased 13x9-in. baking dish. Cover with a third of the meat mixture. Top with 1 cup corn; sprinkle with 1-1/3 cups cheese. Repeat layers once, then top with remaining tortillas, meat and cheese. , Bake, uncovered, 30 minutes or until bubbly., Freeze Option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

- Grill peppers until browned, place them in a papersack for about 10 minutes. Peal skin and deseed, set aside. (optional 16 oz can chilies).
- Shred cheese and set aside. Whip together flour, egg and evaporated milk.
- Layer in 9x13 pan with 1/2 peppers, 1/2 egg mixtture, 1/3 cheese, then 1/2 peppers, 1/2 egg mixture, 1/3 cheese. Top with remaining cheese.
- Bake at 350 for 40-45 minutes, let stand 10 minutes before serving.

MOM'S ENCHILADA CASSEROLE
An house wife's twist on a Mexican dish. My Mom used to make this for us all the time. It's quick and simple, a lot easier than rolling each individual enchilada. This recipe uses ground beef, beans, and green sauce, but the idea of this dish can be applied to any meat/cheese/sauce combination.

Steps:
- Preheat oven to 350°F.
- Warm refried beans. Combine with ground beef.
- Cover bottom of casserole dish with one layer of corn tortillas.
- Spread green sauce over tortilla layer until completely covered.
- Spread a third of the beef/bean mixture on top of sauce/tortilla layer.
- Top layered combo with shredded jack cheese.
- Repeat layering combo (steps 3-6) two more times.
- Cover casserole with one layer of corn tortillas.
- Top with remaining green sauce and cheese.
- Cook until casserole is warmed and cheese is melted.

- Stir in enchilada sauce and salsa; set aside.
- Place two tortillas, overlapping if necessary, in the bottom of a 13 X 9 inch baking pan, coated with cooking spray.

- Preheat oven to 350°F.
- Lightly grease deep oval casserole dish or dutch oven with small amount of Olive Oil.
- Sautee Mushrooms, Zucchini and Onion with Fresh Garlic in small amount of Olive Oil with 1 TBSP of Salt in skillet over medium heat until soft and lightly browned. Turn off heat and set aside to cool.
- Sautee Beef in skillet over medium heat with small amount of Olive Oil until cooked through, add Green Chili, 1 TBSP of Salt, and 1 TBSP of Garlic Powder and combine. Cook until lightly browned. Turn off heat, remove beef mixture from skillet, place in dish and set aside to cool. Be sure to leave oil in pan.
- Make sauce, using skillet and oil that was used to cook beef mixture, return to medium heat and add Salsa, 2 TBSP Cumin, 2 TBSP Oregano, 1 TBSP Paprika, 1 TBSP Chili Powder, 1 TBSP Garlic Powder, 1 TBSP Salt and 1 TSP Nutmeg, Simmer for 10 minutes. Turn off heat and set aside to cool.
- Layer casserole dish with light amount of sauce 2 flour tortillas or 4 corn tortillas, 1/2 of beef mixture, light layer of sauce, light layer of cheddar, 2nd layer of tortillas, 1/2 of Zucchini/Mushroom/Onion Mixture, light layer of sauce, light layer of cheddar, 3rd layer of tortillas remaining beef mixture, light layer of sauce, light layer of cheddar, 4th layer of tortillas, remaining Zucchini/Mushroom/Onion Mixture, light layer of sauce, light layer of cheddar, 5th layer of tortillas, top with remaining sauce and cover with remaining cheddar. Sprinkle top with 1 to 2 TBSP of Paprika.
- Bake covered at 350F for 30 minutes. Remove cover and bake for an additional 15 minutes. Remove from oven and allow to cool for 10 minutes before serving.
