PINEAPPLE HONEY-GLAZED HAM
Ham dressed in pineapple rings and maraschino cherries is a holiday classic, burnished with a glossy glaze made with pineapple juice, honey and brown sugar. If you like sweet and salty, you'll love this show-stopping centerpiece!

- Let the ham sit at room temperature for about 30 minutes.
- Preheat the oven to 325 degrees F.
- Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Push the cloves into the ham, if using, placing them at the intersections of the cuts. Put the ham, flat-side down, on a rack in a roasting pan.
- Drain the pineapples, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
- Pour 1/4 inch water in the bottom of the pan and tent the ham with foil.
- Roast until an instant-read thermometer inserted in the thickest part of the ham (avoiding bone) registers 130 degrees F, about 2 hours 30 minutes (or about 15 minutes per pound).
- Meanwhile, combine the honey, brown sugar and reserved pineapple juice in a large saucepan set over medium heat. Simmer, stirring occasionally, until thickened, syrupy and reduced to about 3 cups, 25 to 30 minutes. Set aside.
- Increase the oven temperature to 425 degrees F.
- Uncover the pan and carefully brush a third of the glaze all over the ham. If the water in the roasting pan has evaporated, add more. Bake the ham for 15 minutes more. Brush with another third of the glaze and bake for 15 minutes more. Brush the remaining glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 15 minutes more. Let rest for 15 minutes.
GRILLED PINEAPPLE
Steps:
- Prepare a charcoal grill with a single layer of hot coals.
- When the grill is ready, brush the pineapple wedges lightly with the oil and place them on the grill. Cook for 6 to 8 minutes per side until nicely charred and lightly colored. Remove to a serving plate and drizzle with honey.
GRILLED PINEAPPLE
These are SO easy and really good. The hot sauce gives it an extra kick and cuts the sweetness. They can help with patience while the rest of the grilled feast comes together, but be warned, they go quickly!

Steps:
- Drain pineapple reserving 2 tablespoons of the juice. Place this pineapple juice in a 13 x 9" baking pan. Cut pineapple into 6 sliced rings, about 1/2 inch each.
- Add the following to the pineapple juice in the baking pan: 1/2 teaspoon lime zest, 2 tablespoons fresh squeezed lime juice, 1/4 cup honey, and 1/8 teaspoon cinnamon; whisk together.
- Place pineapple slices in pan and turn to coat with glaze.
- Grill slices over medium low, indirect heat, for about 3 minutes per side or until slightly charred and hot. Garnish with mint.
RUM BUTTERED GLAZED GRILLED PINEAPPLE WITH VANILLA SCENTED MASCARPONE
Steps:
- Melt butter, sugar and rum in a small saucepan. Grill pineapple on both sides until golden brown, about 2 to 3 minutes per side. Spoon rum glaze over grilled pineapple.
- Whisk together mascarpone and vanilla seeds. Top each slice of pineapple with a dollop of vanilla mascarpone. Garnish with a few fresh blueberries.

HONEY-GLAZED PINEAPPLE
Steps:
- Using a large serrated knife, cut off top and bottom of the pineapple, just deep enough to expose the flesh. Stand pineapple on one end on a cutting board; begin cutting away the skin, from top to bottom, rotating pineapple on board until all skin is removed.
- Cut pineapple crosswise into 1/2 to 3/4-inch thick slices. Using a small biscuit cutter, core each slice and discard. Transfer to a shallow baking dish.
- In small bowl, combine honey and lime juice. Using a pastry brush, coat both sides of pineapple with mixture. Cover with plastic wrap, and let stand at room temperature for at least 1 and up to 8 hours.
- Preheat grill to medium. Sprinkle brown sugar evenly over slices. Grill 3 minutes, until golden brown. Garnish with mint leaves; serve hot or at room temperature with ice cream, if desired.

- Prepare outdoor grill for covered direct grilling over medium heat. In small bowl, combine hoisin, honey, ginger, and oil.
- Place pork on hot grill rack. Cover grill and cook pork 18 to 20 minutes, turning occasionally.
- With serrated knife, cut pineapple half into 4 wedges. Rub cut sides of pineapple with brown sugar.
- Grill pineapple 10 minutes or until browned on both sides, turning over once.
