CROCKPOT PORK RIBS WITH HONEY BALSAMIC GLAZE
These slow cooker Honey Balsamic Ribs are fall-off-the-bone delicious! The slow cooker makes them incredibly tender and moist, and the honey balsamic glaze just doesn't need an explanation. Does it?? They are SO easy to make!

- In a 6-quart or larger slow cooker that has not been turned on, add the ribs. Cut and layer as necessary to get them to fit.
- In a small bowl, combine the lemon juice, salt, mustard, garlic, onion powder, thyme, and black pepper.
- Use your hands to rub the mixture into the ribs, top and bottom and all over.
- Place the lid on the turned off crockpot and let the ribs sit at room temperature for 30 minutes.
- After 30 minutes, add 1/4 cup water to the bottom of the slow cooker. Try not to wash the rub off of the ribs, add the water near the edge.
- Turn the crock pot on and turn the heat to low. Cook for 5-6 hours. The meat should be tender and shred easily with a fork.
- Line a large rimmed baking sheet with aluminum foil or parchment paper. Transfer the ribs to the baking sheet.
- Make the glaze: Pour 1 and 1/4 cups of the cooking juices from the crock pot into a small saucepan and set over medium high heat. Add the balsamic vinegar and honey. Bring to a boil, then reduce to a simmer. Let simmer and bubble actively for 6-8 minutes, until the glaze has thickened and looks syrupy. It should coat the back of a spoon.
- Preheat your broiler to high heat and move the oven rack to the top, so that it's just a few inches away from the heat source.
- Brush some of the glaze over the ribs. Broil in the oven for 2-3 minutes. Brush the ribs again with the glaze, rotate the pan, and return to the broiler. Broil for another 2-3 minutes. Don't walk away! Set a timer! Can you imagine burning your ribs at this point after waiting this long??? All the tears.
- Serve ribs hot with the extra glaze!
- I served these with My Favorite Coleslaw and Literally the Best Mac and Cheese I've Ever Had. Soooo good.

BRUSSELS SPROUTS WITH BALSAMIC HONEY
Steps:
- Preheat the oven to 400 degrees F. Combine the garlic and olive oil in a small saucepan over low heat. Gently simmer, stirring occasionally, until the garlic is lightly golden and crisp, 5 to 6 minutes. Remove from the heat; transfer the garlic to a paper towel-lined plate using a slotted spoon and season with salt. Reserve the garlic oil.
- Toss the Brussels sprouts with the reserved garlic oil on a baking sheet and spread in an even layer; season with salt and pepper. Roast until the Brussels sprouts are tender and slightly charred, 30 to 35 minutes.
- Meanwhile, combine the vinegar, brown sugar, honey and bay leaf in the saucepan and whisk until combined. Simmer over medium-high heat, whisking occasionally, until slightly syrupy, 10 to 12 minutes. Remove from the heat; let cool until thick and glossy, about 6 minutes. Remove the bay leaf.
- Transfer the Brussels sprouts to a platter; spoon the vinegar-honey syrup on top and sprinkle with the fried garlic and shaved cheese just before serving. (The Brussels sprouts can be made up to 2 hours ahead. Serve at room temperature.)

This is a salad dressing that I really enjoy on a green salad with walnuts, cranberries, avocado and goat cheese crumbles. This dressing is strong, so a little goes a long way.

GARLIC VINAIGRETTE
Long ago, before I could just throw a vinaigrette together, I started with this recipe. It's called The Best Vinaigrette Dressing in the Celebrations on The Bayou cookbook, put out by the Junior League of Monroe, Louisiana. The recipe calls for white wine vinegar but you can use either red or white wine or champagne vinegars. And, it's delicious with Feta crumbled over your green salad. 7/2013: Added a tweak of a little agave or honey to soften the taste.

- Bring 1 cup balsamic vinegar to a boil over medium-high heat in a one-quart saucepan. Reduce the heat to medium or medium low, so the vinegar stays at a simmer. Simmer for about 15 minutes or until the vinegar is reduced by half.
- Add the honey and stir to combine. Continue simmering until the glaze has thickened slightly. You will see that the bubbles take longer to pop, and the surface of the liquid seems to have more tension. By this time, the vinegar will be reduced to about 1/3 cup. This takes about 10 additional minutes after adding the honey.
- Allow the glaze to cool, and pour into a small jar or squeeze bottle. Store in the refrigerator.

- Trim, wash and dry the spinach thoroughly and place in a salad bowl.
- Coat a saute pan with 2 tablespoons olive oil and put over medium heat. Fry the prosciutto and garlic for a minute to flavor the oil, and then add the mushrooms and onions. Saute the mushrooms and onions until they are slightly brown and tender, about 3 minutes.
- Scrape the mixture on top of the spinach, return the pan to the stove. Add balsamic vinegar and scrape up the bits at the bottom of the pan. Add remaining oil and honey. Swirl pan around for a minute to warm the vinaigrette.
- Pour the vinaigrette over the salad, top with Gorgonzola. Season with salt and pepper, toss, and serve immediately.

- Gather the ingredients.
- In a small bowl or measuring cup, whisk together the oil, vinegar, mustard, and honey. If you're using the dressing right away, make the dressing in the bottom of the large salad bowl.
