2/3 cup salsa
1/3 cup sliced green onions
3/4 to 1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon dried oregano
6 flour tortillas (8 inches)
1/4 cup butter, melted
2 cups shredded Monterey Jack cheese
Sour cream and guacamole

Steps:

  • In a large skillet, combine the first 6 ingredients. Cook, uncovered, over medium heat until heated through, about 10 minutes, stirring occasionally. , Brush 1 side of tortillas with butter; place buttered side down on a lightly greased baking sheet. Spoon 1/3 cup chicken mixture over half of each tortilla; sprinkle with 1/3 cup cheese. , Fold plain side of tortilla over cheese. Bake at 375° until crisp and golden brown, 9-11 minutes. Cut into wedges; serve with sour cream and guacamole.

There is one caveat when using leftover grilled meat. As the meat chills, the flavors recede, becoming quieter and mellower. For these quesadillas that I made out of Sunday's grilled chicken thighs, shredded and stuffed into a corn tortilla with a little cheese and quickly toasted, I stirred together a lime-zest-imbued cucumber and avocado salsa that added a welcome citrus edge.

1 avocado, peeled, pitted and diced small
2 Kirby cucumbers, peeled and diced small
2 tablespoons finely chopped red onion
1 1/2 tablespoons chopped fresh cilantro
1 1/2 teaspoons finely grated lime zest
1 tablespoon freshly squeezed lime juice
1/2 jalapeño, seeded, if desired, and finely chopped
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 pound cooked chicken, shredded (about 1 1/3 cups)
1/4 pound Monterey Jack cheese, grated (about a cup)
8 6-inch corn tortillas
Olive oil, for brushing

Steps:

  • In a bowl, mix together the avocado, cucumbers, red onion, cilantro, lime zest, lime juice, jalapeño, salt and pepper.
  • Sandwich some of the chicken and cheese between two tortillas; repeat with the remaining chicken, cheese and tortillas. Brush the top and bottom of each quesadilla lightly with oil.
  • Heat a large, nonstick skillet over high heat until very hot. Cook the quesadillas, in batches, if necessary, until the cheese melts and the tortillas are crisp and golden, 1 1/2 to 2 minutes per side.
  • Cut into wedges and top with some of the salsa.

Salsa:
1 lb ripe plum tomato
1 lime
1/2 small yellow onion
1 small clove garlic
salt and pepper
Queadilla:
1 breast from rotisserie chicken
1 piece (4 oz.) sharp cheddar cheese, shredded
4 soft whole tortillas 7"
4 T. softened cream cheese or mayo
EVOO for drizzle
1 C. plain reduced-fat greek yogurt

Steps:

  • Fit the food processor with chopping blade and put the lid in place. Quarter and core the tomatoes, using your fingers, remove the seeds. Halve the lime, trim, quarter and peel the onion; then trim the garlic clove and smash it. Juice the lime with a citrus juicer, working over a small bowl. In the food processor with the machine on, add the garlic through the feed tube ( it will stick to the sides of the bowl.) Add the onion through the tube, processing until chopped. Turn off the machine and remove the lid. Add the tomato pieces and the lime juice; attach the lid and pulse with 1 second pulses until chopped but not soupy. Gisve your salsa a taste test. Then add just a little seasoning: 1/2 tsp. salt and 1/4 tsp. pepper. Pulse for 1 second to blend. Taste again! Add more salt if you wish. Transfer the salsa to a bowl. Discard the chicken skin. Using your fingers, shred the meat. Shred the cheese with a box grater, Preheat a large cast-iron skillet over med.-high heat. Meanwhile place a tortilla on a work surface and spread with 1 T. cream cheese. Sprinkle 1/3 C. shredded cheese on top. Sprinkle 1/3 C. chicken on half of the tortilla. and fold in half. Repeat the process with the remaining tortillas. Drizzle little EVOO in the hot skillet, add 1 or 2 quesadillas to the pan and cook, turning once or twice, until golden-brown and crisp on both sides, about 5 min. Repeat the remaining tortillas. Cut the quesadillas in half, stack on plates and serve warm with the salsa and yogurt.

1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1 can pinto or black beans,(about 15 ounces) rinsed and drained
1 to 2 pickled jalapeno, roughly chopped
1/2 teaspoon kosher salt
1/4 cup water or chicken broth, homemade or low-sodium canned
1 to 2 tablespoons extra-virgin olive oil
8 scallions (white and green), trimmed
2 cups shredded cooked chicken, about 8 ounces
2 teaspoons minced chipotle peppers en adobo
1/4 cup prepared salsa
4 ounces shredded Montery jack cheese, about 1 cup
4 (10-inch) flour tortillas
Optional garnishes: sour cream, cilantro sprigs, salsa
Alternative methods, recipes follow
4 tablespoons vegetable oil, like soy, peanut, or corn

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with aluminum foil.
  • To make the beans: Melt the butter in a skillet over medium-high heat, add the cumin and coriander, and cook until fragrant, about 1 minute. Add the beans, jalapeno, and water and bring to a simmer. Using a potato masher or a large fork to smash the beans into a rough paste. Season with salt and transfer to a bowl.
  • Preheat a stovetop grill. Brush or drizzle oil over scallions, and then grill until soft and charred, 5 to 7 minutes. Cool and coarsely chop. In a small bowl, combine chicken with the chipotle and scallions.
  • Toast the tortillas directly over a medium gas burner, turning occasionally until slightly blistered on each side. (If you have an electric burner, do this in a dry cast iron skillet.) Place the tortillas on the prepared baking sheet. Spread the beans on half of the tortilla, top with the chicken, salsa, and cheese. Fold the other half of the tortilla over the filling, to make a half moon shape. Lay another sheet of foil over the top of the quesadillas.
  • Bake until the cheese melts and the filling hot, about 12 minutes. Serve whole or sliced into wedges, with optional garnishes.
  • Hold the tortillas over an open burner until slightly blistered on each side. Put 4 tortillas down on the prepared baking sheet. On each tortilla, layer the fillings, and then top with another tortilla. Lay another sheet of foil over the top of the tortillas. Bake at 350 degrees F. until cheese is melted and the filling is hot, about 12 minutes.
  • Heat a large skillet over medium high heat. Add 1 tablespoon of oil. When hot, lay a tortilla in the pan. Layer the filling ingredients on one half of the tortilla. Fold the other half of the tortilla over the filling, forming a taco shape. Remove to a prepared baking sheet and continue this process with the remaining tortillas. Bake at 350 degrees F until the cheese is melted and the filling is hot.
  • Quesadilla for one:
  • Heat a large skillet over medium high heat. Add 1 tablespoon of oil. When hot, lay a tortilla in the pan. Layer the filling ingredients on one half of the tortilla. Fold the other half of the tortilla over the filling, forming a taco shape. Transfer the skillet to the oven, and cook until the cheese is melted and the filling is hot.

1 (1.27 ounce) packet fajita seasoning
1 tablespoon vegetable oil
2 green bell peppers, chopped
2 red bell peppers, chopped

1 (8 ounce) package shredded Cheddar cheese
1 tablespoon bacon bits
1 (8 ounce) package shredded Monterey Jack cheese

Steps:

  • Preheat the broiler. Grease a baking sheet.

I have found that it works great to make the "filling" up a head of time. Just prep and put in the refrigerator until needed. This is one of our favorite meals. NOTE: The friend who gave me this recipe uses canned cooked chicken. I'm sure the other precooked chicken tenders they sell now would also work.

1 lb boneless chicken breast
1 (16 ounce) jar salsa
1/2 lb cheddar cheese, Shredded
10 (8 inch) flour tortillas

Steps:

  • Broil the chicken for about 5 minutes on each side, or until no longer pink inside. Cool and then shred or cube the chicken. (I have found the slicer in my salad shooter works great for this!).
  • Mix chicken, salsa and cheese in a bowl.
  • Place 1/10th of the mixture on half of the tortilla, fold over and press down slightly to "seal". You can moisten the edges with water to help the edges seal but I usually don't. I've found pressing firmly so that the tortilla sticks to the mixtures works fine.
  • Bake at 400°F for about 5 minutes or until tortillas start to brown.
  • Serve with additional salsa, sour cream, or guacamole for dipping.
  • Goes well with refried beans and/or Spanish Rice.

This is a 1999 runner-up recipe from Southern Living, courtesy of Mary Lou Cook. I did make this, and it is a wonderful, flavorful dish. Instead of serving as an appetizer, I served it for a light lunch for two. You will love that salsa. Prep time includes letting the salsa sit for 1 hour.

2 cups chopped plum tomatoes
1 small onion, chopped
3 cloves garlic, minced
3 tablespoons fresh lime juice
2 teaspoons minced canned chipotle chiles in adobo sauce

5 green onions, minced and divided
1/2 cup fresh cilantro, divided
1 cup finely chopped cooked chicken
1 (4 1/2 ounce) can diced green chilies, drained
8 7-inch flour tortillas
8 ounces brie cheese, trimmed and diced

Steps:

  • Stir together first 6 ingredients, with 1/4 cup green onions, and 1/4 cup cilantro.
  • Let stand 1 hour.
  • Stir together remaining green onions, cilantro, chicken and green chiles.
  • Arrange 4 tortillas on a large baking sheet greased with cooking spray.
  • Top evenly with cheese, chicken mixture, and remaining tortillas, pressing down slightly.
  • Bake at 425ºF for 8 to 10 minutes or until cheese melts.
  • Cut into wedges, and serve immediately with salsa.
  • Freeze remaining chipotle chiles in adobo sauce, if desired.

1 1/3 cups carrots, shredded
1 cup green onion, thinly sliced
4 ounces monterey jack pepper cheese, shredded and divided (1 cup)
8 flour tortillas (8 inch)
1 lb boneless skinless chicken breast, cooked and chopped, about 2 cups (can use a rotisserie chicken, just remove the skin and bones)
1/2 cup fresh cilantro leaves

Steps:

  • Place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add shredded carrot and onions; saute 5 minutes or until tender.
  • Sprinkle 2 tablespoons shredded cheese over each of 4 tortillas, and divide carrot mixture evenly over tortillas.
