HONEY DIJON DIPPING SAUCE
This sauce is great for dipping with my Recipe #245645, chicken fingers or raw veggies. It's quick and easy to prepare and it will "hold" in the refrigerator for two weeks.

SPICY HONEY DIJON SAUCE
Steps:
- In a small food processor, combine all ingredients. Refrigerate until ready to use.
KETTLE CORN DOG WITH CHIPOTLE HONEY MUSTARD DIPPING SAUCE
Steps:
- For the dipping sauce: Puree the honey, chipotles and adobo sauce in a blender or with a stick blender. Season to taste with salt and pepper. Mix the chipotle honey with the Dijon. Set aside.
- For the kettle corn dog: Add vegetable oil (about 8 cups) to a deep-fryer and preheat to 350 degrees F.
- Whisk together the cornmeal, flour, sugar, baking powder, 1 teaspoon salt and 1 teaspoon pepper. Stir in the eggs and milk. Gently fold in the kettle corn. (You will have about 5 cups batter.)
- Pat the hot dogs dry and then insert a bamboo skewer lengthwise through each one; roll in flour to coat.
- Dip a hot dog in batter, turning to coat completely. Allow excess batter drip off before lowering the battered hot dog into the hot oil. Immediately repeat with 2 hot dogs. Fry until deep golden brown, 5 to 7 minutes, turning to cook evenly. Repeat with the remaining hot dogs, working in batches of three.
- Transfer the corn dogs to a paper-towel-lined baking sheet to drain, turning the corn dogs to blot oil.
- Serve the corn dogs with the dipping sauce.
SHRIMP CORN DOGS
Steps:
- For the Dijon mayo: Combine the mayonnaise, mustard, lemon juice and cayenne and mix well. Set aside.
- For the batter: Mix the buttermilk, oil and eggs together. Mix the cornmeal, flour, parsley, Creole seasoning, baking powder and baking soda together. Combine, adding the wet to the dry. Set aside.
- For the plate: Heat oil in a deep-fryer to 350 degrees F. Skewer each shrimp through the tail towards the head. Combine the flour and cornstarch and dust over the shrimp. Next, dip the shrimp in the batter, rubbing off any excess.
- Hold the shrimp by the stick, two at a time if able, and place in the oil, holding the stick until the batter starts to cook. Then let go and fry until the shrimp is cooked, about 4 minutes. Repeat with the remaining shrimp.
- Serve the shrimp with the Dijon mayo dipping sauce on the side.
MINI CORN DOG MUFFINS WITH CREOLE MUSTARD SAUCE

- Preheat the oven to 375 degrees F and spray the mini muffin pan with nonstick spray.
- For the muffins: Whisk together the buttermilk, melted butter, sugar and egg in a medium bowl. In another medium bowl, whisk together the cornmeal, flour, baking soda and salt. Add the wet ingredients to the dry ingredients and stir to combine. Don't overmix.
- Fill each mini muffin cup halfway with the batter. Gently push a piece of hot dog into the batter in each cup, being careful not to push it all the way to the bottom. Bake until the edges just start to brown and the muffins are cooked through, about 10 minutes.
- For the Creole mustard sauce: Meanwhile, whisk together the mustard, mayonnaise, honey, hot sauce and vinegar in a small bowl.
- Serve the mini corn dog muffins warm with the mustard sauce.

- Preheat oven to 375 degrees.
- Rinse the fillets and pat dry; set aside.
- In a shallow bowl, whisk together the honey, mustard, and lemon juice.
- In a separate shallow bowl, combine the bread crumbs with the thyme and add a few shakes of salt and pepper.
