FOCCACIA BREAD STICKS-BREAD MACHINE RECIPE

Steps:
- 1. Melt butter on stove with garlic and salt.
- 2. For dough: Place wet ingredients into bread machine, add dry ingredients with yeast being the last thing you add, place it on top of flour. Run bread machine on "dough" cycle. When dough has finished rising, remove and pat into large cookie sheet. Let rise again. Then punch down with fingertips and make indentions in dough. Generously brush on garlic butter, and sprinkle on cheese and parsley. Bake 20 min. at 400°. Cut into strips.
STUFFED FOCACCIA BREAD STICKS
A MUST try make if you can. Loaded, loaded with flavor, and the dough is so tender, not tough like pizza dough. You can make small ones for appetizers, or large like I did for meal size. Prep time includes time for dough to mix, rest and rise.

- 1. For bread machine, place wet ingredients in bread pan, add yeast and dissolve, place dry ingredients in and use DOUGH ONLY cycle.
- 2. Take sausage out of casing and brown and break up as it is cooking. If it is too chunky after cooking, place in food processor and pulse till small crumbles. Dab excess oil off with a paper towel. Add just enough pasta sauce to make it moist, but NOT runny or soupy.
- 3. Grate Bruschetta Jack cheese. You could also use mozzarella or provolone or any flavorful Italian melting cheese.
- 4. Once dough has finish cycle, rested and risen, take out and roll into a log. Cut into 8 even amounts.
- 5. On a lightly floured surface roll dough out to a very thin rectangle shape, (approx. 8-10" by 6" wide, dough will stretch to tuck over and under) place cheese and sausage in center leaving room on each end and along sides. Stretch dough over stuffing and tuck in and roll into log. Seal both ends and tuck under. Place seam side down on parchment paper lined baking sheet, make sure to spray parchment paper with spray oil.
- 6. Repeat, and place each bread stick slightly apart, they will rise slightly while cooking.
- 7. Brush each with garlic infused olive oil, sprinkle on grated parmesan and red pepper flakes if desired. Lightly sprinkle with coarse sea salt.
- 8. Bake 400° for 23 minutes till light brown. Allow to rest for a few minutes before serving.
FOCACCIA (BREAD MACHINE)
My family loves this bread & it is so easy to make. I serve it with Italian food. It is adapted from a recipe in Pizza, Focaccia, Flat, & Filled Breads From your Bread Machine. You may substitute herbs in the topping, or use fresh. The original recipe calls for a roasted vegetable topping, but I am going to post that as a separate recipe because the bread alone is great. (Cooking time includes rising times & will vary with your bread machine cycle).

Steps:
- Place the ingredients into the pan in the order recommended by your bread machine.
- Program the machine for "dough cycle".
- Check dough about 10 minutes before the end of the 2nd kneading cycle.
- It should be a smooth, sticky ball.
- Adjust if needed with more flour or water.
- When the machine has completed its cycle, transfer the dough to a lightly floured work surface.
- Roll or pat it into a large rectangle, about 17x12 inches.
- Transfer the dough onto a large, lightly greased cookie sheet.
- Let it rest 10 minutes then pat it back to its original shape if it has shrunk.
- Cover with a towel and let rise for about forty minutes or till puffy.
- Sprinkle the salt & herbs over the bread.
- Press into the dough at intervals with your fingers& sprinkle with the olive oil.
- Bake the focaccia in a preheated 425°F oven for 15 minutes or until the crust is golden brown.
- Remove from the oven & cool on a wire rack.
FOCACCIA (USING BREAD MACHINE FOR THE DOUGH)
This bread is SO appealing and very versatile too! We often have it in the summertime quartered and sliced horizontally and filled with barbecued chicken thighs, lettuce, sliced red onions, tomatoes and avocado and some Paul Newman's Own Ranch Dressing! Simply divine!! The preparation time I have given does not include the time it takes for the Bread Machine to make the dough or the time it takes for the dough to rise.

- Place all of the above ingredients, accurately measured and in the order I have listed them, in the Bread Machine.
- Select the 'dough' cycle.
- When the cycle is complete, take the dough out of the Bread Machine, and proceed with the following steps: On a lightly floured surface, gently knead the dough for about 10 minutes.
- (you may need to add extra flour during this time) Place the 'Focaccia' dough in a well grease bowl, cover and leave to rise in a warm (and draught free) place for about 1/2 an hour.
- Then, knead the dough lightly (in the bowl) for about 1 minute.
- On a lightly floured surface, roll the dough into a rectangular shape (about 20 cm x 30 cm)
- Place on a well greased baking tray (or sponge roll tin) and leave to rise again, in a warm place, this time for about 1 hour (or until it has doubled in it's original size) Now pour and smooth over with your fingers, 1 tablespoon of olive oil.
- 'Poke' the dough with 2 fingers at intervals over the surface, and sprinkle liberally with rock salt or equal measurements of olive oil and Basil pesto mixed together with grated Parmesan or Romano cheese, top with chopped up sun-dried tomatoes and sliced black olives!
- YUM!
- Bake at 225°C for about 15 minutes or until golden brown!

BREAD MACHINE FOCACCIA
This is fantastic with olive oil and balsamic vinegar with a little grated Parmesan cheese.

Steps:
- Place water, 2 tablespoons olive oil, salt, garlic, 1 tablespoon rosemary, bread flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select Dough cycle; press Start.
- Remove dough from bread machine when cycle is complete. Pat dough into either a 9x13 inch baking pan or 12 inch pizza pan. Use your fingers to dimple the dough every inch or so. Brush with remaining olive oil and sprinkle with remaining rosemary.
- Preheat oven to 400 degrees F (200 degrees C). Cover foccacia with plastic wrap while oven preheats.
- Bake in preheated oven for 20 to 25 minutes, or until golden brown. let cool for 5 minutes before serving.

BREAD MACHINE STUFFED ROSEMARY FOCACCIA
Based on a recipe from Lora Brody's cookbook, Pizza, Focaccia, Flat, and Filled Breads From Your Bread Machine - Perfect Every Time. She says, "Just when you thought things couldn't get better bread-wise, along comes a whole new concept: two layers of rosemary-scented dough surrounding a savory filling of oil-cured olives, sun-dried tomatoes, and cream cheese (or goat cheese if you wish). The cream cheese makes a smooth mild filling while the goat cheese has a more assertive flavor. Think of this as a pizza with hidden filling. "The focaccia dough can be made up to three days ahead, placed in a large plastic bag or in an oiled bowl and covered with plastic wrap, and refrigerated. Alternatively, the cooled baked focaccia can be wrapped in plastic and frozen for three months. Defrost the wrapped focaccia at room temperature, then warm it in a 250°F oven for fifteen minutes."

- Place all the ingredients in the machine in the order according to the manufacturer's instructions and program for "manual" or "dough", and press "start". Add just enough extra water, if necessary, to make a soft, slightly tacky dough. At the end of the final knead, remove the dough from the machine to a lightly floured work space.
- Knead the dough several times, adding just enough flour to keep it from sticking to the surface.
- Cover it with a clean cloth while you prepare the filling.
- TO FINISH THE FOCACCIA.
- Spray a 9- or 10-inch springform pan with nonstick vegetable spray or coat it lightly with vegetable oil.
- Cut the dough in half and stretch or roll one half in a circle large enough to fit the 9- or 10-inch bottom of the springform pan, and place it in the bottom of the prepared pan.
- Sprinkle the tomatoes, the olives, and pinches of the cream cheese (or crumbles of the goat cheese) over the dough, leaving a 1-inch border of dough around the circumference. Moisten the outer edge of the dough with water.
- Roll the remaining dough out to the same size as the first one and place it over the filling. Pinch the edges of the two doughs together to seal.
- Using the tip of a knife, carve three 1/2-inch vent strips in the top layer of dough.
- Cover the pan with plastic wrap and set it in warm place to rise for 30 minutes, or until doubled in bulk.
- Preheat the oven to 475°F with the rack positioned in the middle of the oven.
- Before placing the pan in the oven, using your fingertips, make indentations in the top of the dough. Drizzle on the tomato oil and sprinkle with the salt.
- Bake for 20 to 25 minutes, or until the top is golden brown.
- Release the springform sides and allow the focaccia to cool for 10 minutes before cutting.
- Serve hot or at room temperature.

BAKED " BREAD MACHINE" FOCACCIA WITH THE WORKS
I use my bread machine to do all the grunge of making the dough for this recipe. Keeps the kitchen clean too.

- Dough: Put the 1 1/2 cup water in the bread machine.
- Add the other ingredients in this order: sugar, salt, oil, flour, yeast, garlic powder, onion powder, oregano and black pepper.
- Place bread machine on dough setting and start.
- Note the amount of time your bread machine will take and set another timer for this amount (or do it manually, I use the timer on my microwave for for this).
- As soon as the dough forms a ball (several minutes) add the 3 tbsp lukewarm water.
- This amount of flour is more than most bread machines can handle, so check every 10 minutes when it is not actively mixing.
- If it's getting too high, just stop the dough cycle and restart it (this is why the other timer is needed).
- At the end of the time (on my machine it is 130 minutes) turn off the bread machine and remove the dough.
- Grease a large pizza pan (or a large rectangular cookie sheet with sides, or 2 small pizza pans) and turn the dough out on it (I usually put a bit of oil or cooking spray on my hands so It doesn't stick to me).
- Spread the dough evenly on the pan, making it higher on the edges of the pan for a crust.
- Cover with plastic wrap and let rise until double.
- About 15-20 minutes.
- Toppings: Brush the dough with olive oil and sprinkle with oregano and garlic powder.
- Add as many optional toppings as you wish (invent some if you wish).
- Sprinkle with parmesan.
- Bake until golden about 15-20 minutes at 350°F.
GARLIC ROSEMARY FOCACCIA FOR THE BREAD MACHINE
This is my favourite breadmachine recipe. It is so moist and flavourful. Although it is not a high rising bread, it makes great flat italian sandwiches. It is also good warm, served with butter and soup. You can use all white flour if desired, but for best results, follow the recipe. Prep time includes machine's time (your machine may vary)

- Crush two of the garlic cloves and place it in your breadmachine pan along with the flours, milk, salt, water, 3 tbsp.
- Olive oil, honey, and yeast (according to your machine's instructions, some call for liquid ingredients first, other call for dry first) Place the bread pan inside the machine and close the lid.
- (I add some of the basil and rosemary at this point as well) Program bread maker for the whole wheat dough mode Turn dough onto floured surface (it is quite sticky, don't add more flour) Divide dough into two pieces and cover and let rest 10 minutes+.
- Crush the remaining garlic.
- In a small bowl combine garlic with herbs and remaining 1/4 cup oil.
- Add salt if desired.
- Oil two round cake pans.
- Place in dough.
- Brush dough with garlic oil.
- Bake in bottom third of preheated 400 oven for 18-24 minutes.
- Until golden brown.
BREAD MACHINE BREADSTICKS
The machine does the hard work and the shaping and baking in the oven is easy with this dough. Add your own toppings like dried onion bits if you like, but I like to top with kosher salt to bake and serve them with a roasted garlic butter. From The Bread Machine Cookbook by Donna Rathwell German.

- Add ingredients into your bread machine in the order given, excluding the egg white and water (glaze ingredients).
- Start machine on dough cycle.
- When the dough is ready turn out onto your countertop. You shouldn't need much flour.
- Cut dough into pieces the size of an egg and roll and stretch with your hands into 6 to 8 inch ropes. Place on an ungreased baking sheet.
- Cover with a tea towel and let rise 20 minutes.
- Mix the egg white and Tbsp water to make a glaze and brush over the breadsticks after they are risen. Add kosher salt, sesame seeds, or other toppings if you like.
- Bake at 400 degrees for 12 to 15 minutes until golden brown.
- Time includes the 2 hour dough cycle.
FOCACCIA FLAT BREAD HOMEMADE (BREAD MACHINE)
My version of Italian flatbread, brushed with olive oil and flavored with grated Parmesan cheese, galic salt bread heavenly. Cut it into squares and top with Prosciutto Panino rolled in Mozzarella cheese and toasted under the broiler for 5 min.... oh my, this is dangerously good! It is so easy to make. Can't wait to have this with a bowl of soup or top with Pizza topping, or to just dip in garlic olive oil. This comes from a bread machine cookbook with instructions to layer ingredients liquid first. Yummers! :) Family Favorite! (Cooking time does not include dough cycle or rising)

- BREAD DOUGH CYCLE:.
- Add lukewarm water to pan.
- Add bread flour, dry milk, sugar and salt to pan. Tap pan to settle dry ingredients, then level ingredients, pushing some of the mixture into corners. Place butter into corners of pan.
- Make a well in center of dry ingredients; add yeast, lock pan into bread maker.
- Program for DOUGH. Start bread maker. When done, remove pan from bread maker. Place dough onto floured surface. Let rest 15 minutes.
- Knead dough about 1 minute. Roll dough into a rectangle to fit a jelly roll pan or large cookie sheet, about 15x10 inches. Place on greased pan and press dough evenly into pan forming an edge. Cover and let rise in warm, draft-free place for 20-30 minutes until slightly risen. With handle/end of wooden spoon, make indentations in dough at every inch. Brush dough with olive oil, then sprinkle with Parmesan cheese, Italian Seasoning (Grinder) and garlic salt.
- Bake in preheated 400' F oven for 12 minutes or until nicely browned. Cool slightly and cut into squares for serving. Can be served warm or cooled.
