HONEY MUSTARD PRETZEL-CRUSTED CHICKEN FINGERS

Steps:
- Preheat oven to 375°F
- Season the chicken tenders liberally with salt and pepper
- In a shallow dish, whisk together the honey and Dijon mustard until smooth
- Put pretzels into the bowl of a food processor and pulse to medium-sized crumbs
- Place crumbs into a shallow dish and add chopped thyme
- Coat chicken tenders first in the honey mustard and then with the crushed pretzels
- Place the breaded chicken tenders on a sheet tray lined with a cooling rack
- Spray the chicken tenders with cooking spray and place into the oven for 20 minutes or until crispy and brown
- For the barbeque sauce, heat oil in a small pot over medium-high heat
- Add onion and garlic, stir 1-2 minutes, then add vinegar, Worcestershire, honey, mustard, tomato sauce, and pepper
- Simmer to thicken over low heat, about 15 minutes
- Add hot sauce to taste
- Serve chicken with barbeque sauce and Jicama and Apple Slaw alongside
- For the Jicama and Apple Slaw: In a large serving bowl, whisk together vinegar, lemon juice, onion honey, oil and celery seed
- Add jicama, apple, celery and carrot; toss to coat and chill

- Prepare barbecue (medium-high heat). Whisk oil and butter in small bowl. Whisk mustard and next 3 ingredients in another small bowl.
- Run 2 thin metal skewers or soaked bamboo skewers parallel through each onion slice, placing skewers about 1 1/2 inches apart to keep slice intact. Trim ends of bamboo skewers. Brush both sides of onion slices with oil mixture. Place onions on grill and cook until beginning to char, turning and brushing often with oil mixture, about 11 minutes. Brush top side of onions with mustard mixture and cook until mixture begins to bubble, about 2 minutes. Turn onions; brush with mustard mixture and grill until beginning to caramelize, about 1 minute longer. Transfer onions to plate. Brush with mustard mixture.
BURGERS WITH HONEY DIJON SAUCE
Steps:
- Gather the ingredients.
- Combine the sauce ingredients in a small bowl.
- Cover and place in the refrigerator until ready to serve.
- Preheat the grill to medium-high heat or a cast iron pan or grill pan over medium-high heat. Form the ground beef into 4 or 5 equal-sized burger patties.
- Season each with salt and black pepper.
- Place the patties on the grill or pan and cook, flipping once, until they reach your desired doneness . For medium-rare, cook about 7 minutes total, for medium cook about 8 minutes total, and cook for 9 to 10 minutes for medium-well or well-done, or until internal temperature reaches 165 F.
- Place on the hamburger buns. Top with tomato and onion slices, and a generous helping of honey-Dijon sauce.

- Place chicken breast in a large Ziploc bag. Using a fork, pierce small holes in the chicken.
- In a small bowl, whisk together mustard, honey, olive oil, garlic powder, salt, and pepper.
- Pour 1/2 of honey mustard marinade into bag with chicken. Set aside remaining honey mustard sauce to use to baste on the chicken. Let marinate for at least 30 minutes in the refrigerator.

- Place the sliced onion in the bottom of a slow cooker set on LOW heat.
- Pat the pork butt dry with paper towels. Set aside while you make the rub.
- In a small bowl, combine onion powder, garlic powder, smoked paprika, dried thyme, salt, cumin, and black pepper to create the rub.
- Rub the spice mixture onto the surface of the pork then place the pork on top of the onions. Cover and cook on low for 8-10 hours or until meat is tender and shreds easily with a fork.
- While the pork is cooking, make the barbecue sauce. In a small sauce, combine the Dijon mustard, honey, vinegar, Worcestershire sauce, chili powder, and smoked paprika in a small saucepan over medium heat. Whisk and bring just to a boil, stirring occasionally. Reduce the heat and simmer, uncovered, for 10 minutes or until slightly thickened, stirring occasionally. Taste and season with salt and pepper. Remove from the heat and allow to cool to room temperature. (The sauce can be made up to 5 days in advance and stored in an airtight container in the refrigerator until ready to use.)
- When the pork is done, remove the meat and onions from the slow cooker into a bowl or platter, using a slotted spoon. Shred the meat with two forks. Taste and add some of the cooking liquid and/or salt and black pepper to taste. Serve with Honey-Mustard BBQ Sauce.
