1 large onion, chopped
4 garlic cloves, minced
1 tablespoon olive oil
1 beef sirloin tip roast (3 pounds)
4 cups water
2 cups ketchup
1 cup salsa
2 fresh jalapeno peppers, seeded and minced
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 to 2 tablespoons minced fresh rosemary or 1 to 2 teaspoons dried rosemary, crushed
1 teaspoon pepper
1/2 teaspoon salt
1/4 teaspoon liquid smoke, optional
12 to 14 hard rolls, split and toasted

Steps:

  • In a Dutch oven over medium heat, saute onion and garlic in oil until lightly browned. Add roast and brown on all sides. Add the next 10 ingredients; bring to a boil. Reduce heat; cover and simmer for 3-1/2 to 4 hours or until meat is tender. Remove meat; cool. Simmer sauce, uncovered, for 30 minutes. Shred meat; return to sauce and heat through. Serve about 1/2 cup on each roll.

1 (2 1/2 to 3-pound) beef chuck pot roast, or other cut suitable for roasting
1 tablespoon garlic powder
Salt
Freshly ground black pepper
1 tablespoon all-purpose flour
1 cup barbecue sauce, divided
2 tablespoons hot sauce, divided
12 Kaiser rolls or crusty Italian rolls, sliced

Steps:

  • To cook en papillote (on the grill, enclosed in foil), preheat grill to medium-high heat.
  • Rinse beef to remove any unwanted smells, pat dry with paper toweling and season with garlic powder and salt and pepper, and set aside briefly. Make an oven pouch out of a 3 foot length of heavy duty foil by bringing the 2 ends to the center, folding the sides to seal, and leaving an opening at the top center through which to place the sauce and beef. Shake flour in the pouch to coat the inside. Sear all sides of beef on the grill, then put beef in pouch and pour 1/2 cup of the barbecue sauce and 1 tablespoon of the hot sauce over the meat (reserving the rest of the barbeque sauce and hot sauce). Seal the foil pouch by folding shut. Grill bagged beef directly on grill for about 30 minutes per pound. Ideally this should be cooked until fork tender, so that you can pull it apart with a fork.
  • Let beef rest 10 minutes before carving into thin slices, or pulling it apart with a fork. Heat the reserved barbeque sauce and hot sauce in a small saucepan. Then chop or shred the sliced beef and serve on Kaiser rolls or crusty Italian rolls. Spoon a bit of the extra sauce over the meat.

12 submarine or French bread rolls, split

Steps:

  • Preheat grill for indirect heat by heating one side of the grill to medium heat and leaving the burners on the other side of grill turned off. Mix chili powder, 1 tsp. of the pepper and the garlic powder; rub evenly onto all sides of meat. Place on cool side of grill; cover with lid.
  • Grill meat, without turning, 1 hour. When internal temperature of meat reaches 140ºF, brush meat with 1/4 cup of the barbecue sauce. Continue grilling, covered, 10 min. or until internal temperature of meat reaches 150ºF. Transfer meat to carving board. Tent with foil. Let stand 10 min. or until internal temperature reaches 160ºF. Meanwhile, toss coleslaw blend with dressing and remaining 1/2 tsp. pepper.
  • Cut meat across the grain into thin slices. Add to remaining 1/2 cup barbecue sauce in large bowl; toss to coat. Spoon into rolls. Serve with the coleslaw.

1 onion, chopped
2 tablespoons butter
3 tablespoons distilled white vinegar
12 ounces chile sauce
2 tablespoons brown sugar
1 teaspoon mustard powder

1 teaspoon salt
⅛ teaspoon ground cayenne pepper

Steps:

  • Place roast in a large covered pan. Roast at 325 degrees F (165 degrees C) for 2 hours, or until the meat falls apart and shreds easily.

Usually I make these roast beef sliders without the flour to thicken the broth into a gravy, so you can absolutely do it without the flour and just strain the meat before putting on the sliders and then use the sauce like an au jus to dip in on the side, but I preferred these with the meaty gravy. Reminded me of a grown up Sloppy Joe. Yum!

½ pound thinly sliced deli roast beef
1 (10.5 ounce) can condensed beef consomme, undiluted
1 jalapeno pepper, diced, or more to taste
1 dash Worcestershire sauce
salt and ground black pepper to taste
¼ cup all-purpose flour, or as needed
12 Hawaiian bread rolls, split
6 slices provolone cheese
6 slices pepper Jack cheese
2 tablespoons spicy horseradish, or to taste

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • Roughly chop roast beef until crumbly.
  • Combine consomme, jalapeno, Worcestershire sauce, salt, and pepper in a saucepan over medium heat; bring to a simmer. Add roast beef, lower heat to medium-low, and simmer until heated through, 1 to 2 minutes. Add flour and stir constantly until thickened into a gravy, 3 to 5 minutes. Remove from the heat.
  • Slice rolls in half without separating rolls from each other. Put bottom halves on a baking sheet and layer with provolone cheese slices. Spoon meat mixture on the provolone and cover with Cheddar cheese slices. Add a thin smear of horseradish and place top rolls on top.

2 -3 lbs chuck roast or 2 -3 lbs pork roast
6 garlic cloves, halved
1 whole red onion, sliced up
4 beef bouillon cubes
1 tablespoon whole coriander seed
4 tablespoons cayenne pepper
3 tablespoons paprika
4 tablespoons ground black pepper
2 limes, juice of
3 cups barbecue sauce (I prefer Cattlemens)
10 -12 buns or 10 -12 rolls, for serving

Steps:

  • Take the thawed roast, and cut several slits into (2-3 inches long) into it with a knife.
  • Put the thawed roast in a large crockpot. Put the sliced onion, the coriander and the garlic cloves in the pot with the roast.
  • Fill the crockpot with water as close to the top of the roast as you can. Add the four bouillion cubes to the water.
  • Cook at low (10 hours).
  • After 10 hours, turn the crockpot to warm, and remove the roast. Strain out the onions, garlic, and coriander, and put them back in the crockpot. Discard the water/broth.
  • Shred (or cut up in small pieces)the roast and put it back in the crockpot.
  • Stir in the cayenne, paprika, and black pepper, along with the lime juice. Allow it to sit for ten minutes.
  • Put the barbecue sauce in with the roast, stirring to coat. Allow it to sit for at least 20 minutes (the longer it sits, the better it is) and then eat!
